Unless you have a phone with built-in ethernet, you are stuck with WiFi streaming.
There's a very similar app for Android called Remotr which has been out for a few years and is less in beta. I haven't had a chance to try it much lately but in the past it's worked wonders.
Maybe try Remotr? It will work with an AMD card. The two most prominent streaming apps for the tablet (Moonlight and Gamestream) won't work without a Nvidia GPU.
Honestly, I would rather see a similar concept to the NUC, with a low power Raven Ridge. You could then partition the memory and then install Android TV. You could also install SteamOS (or even Windows for that matter) or you could make two partitions, one with Android TV and one with SteamOS/Windows/Ubuntu and then use one of those cool boot OS pickers to pick either (was it called rEFInd?).
Otherwise, just get a Xiaomi MiBox TV, install Remotr and be done with it.

First things :

This is assuming you have modded Minecraft set up in the first place.
Chrome Remote Desktop, is another handy app, I'm reluctant to say necessary.
So first go to this link and download the app

Once installed, create and account and log in

And scroll down until you see how to, where you'll see the first step is installing the streaming client on your computer.

Once you have that installed, you'll login with the same details as on your phone.
If you are on your same network, this should be it

If you'd like to play while not on your network, you'll need to set up port forwarding on your router.
this is their description of how to accomplish that.
Unfortunately every network and router setup is different so I can't tell you how to do that part.
This part is tangential, and has no advise on your setup, feel free to skip (For example I have Google WiFi so I just go into the app and choose my PC, then add a port forwarding rule. But since my Google WiFi is connected to another router I have to set up a port forwarding rule on there to!)
Besides that there isn't to much to do. When you connect with your phone to your computer, it asks which games you wanna use, I scroll to the side in my app where it's says "Apps". Under that menu there's a "Desktop" button which is what I use.
I keep Minecraft running on my computer so I can simply connect and start playing.
There are setting in the app to add on screen buttons, and you can hook up a controller and use that as well!

Gamestream isn't going to work for you, but you might try Remotr.
