I keep coming back to the Skymaster Pilot watch face.
I love the functionality of some of the other faces around, but I come back to Skymster because I like the way it looks.
If I'm not mistaken, that's the Skymaster watch face, also my go-to face, tried loads of others but keep coming back to it. Good taste, OP's band director (or Motorola!).
I don't have my next-gen watch yet, but far and away the best face I found for my first-gen Moto 360 was this one:
Simple, attractive and stylish, and very customizable. (But lets you disable customization through the watch face if you want.)
Skymaster. The only watchface that also looks good in ambient mode. I don't know why every other has to look so bad when off.
Many watch faces don't display the seconds hand when not active.
The one I use, Skymaster, displays when active.
Tried many watchfaces and Skymaster fits the bezels well.

Remove the battery dial, logo, and title and it will look just as simple as castle white. Hope this helps.

Mainly because it has settings to have a non-ugly watchface in dimmed mode (the same as in not dimmed, minus the second hand).
Skymaster pilot has been my go to since the Samsung Gear Live. It's an oldie but a goodie. I also like to use elements as well as the newly redesigned Gfit watch face.
You can try a face like skymaster that doesn't have much difference between it's active and ambient modes.
There's obviously a huge measure of personal taste here, but I didn't like a single one of the stock faces. There was at least one single Moto 360 face I liked. (Well, two, but I seldom used one of the two so I probably shouldn't count it.)
However, that's the advantage of Android Wear: I could choose my own watchface from a third party. I went with this one, which as far as I'm concerned is far and away the best watchface out there.

Overall this feels much more expensive a watch than it is now.
I've been using Skymaster for a while now, I absolutely love it. It has everything I need in a clean layout on the face: time, date, day of the week, a quick glance at the current weather/temp, and watch battery level. You can customize some other stuff too. Definitely worth the $0.99.

I have a couple from Zuhanden on Google Play, although not all are free. I really like Skymaster
I also love Krona Sunlight. Takes some getting used to but so useful to have a constant 24hr outlook on your wrist :)
I don't believe that there will be a steel band for this version of the watch. I ordered a second color band for mine and it was a huge pain to change because the rubber is molded very specifically in odd angles to match the edges of the watch. I don't think they could or would do this with steel.
Also the stock faces are some of the nicest faces you can get on Android wear and I kinda miss the look when I use my Huawei.
But if I want extra functionality I usually use the Skymaster.
Also Pujie Black is always good.
I don't have a pic, but can confirm that ambient mode is much better on the v2 with marshmallow. Night and day difference. No jagged edges. It pretty much looks exactly like the picture of ambient mode on the play store.
They're both fantastic watch faces - you're the one who pointed me to Skymaster. But,
Ranger suits my personality a bit better, plus it has a step counter complication and the battery indicator shows both watch and phone.
Been using this one for a while and enjoy it. Had it on my wrist with always on display since 6:30 (so 7 hours) and am still at 70%

My long time favorite for best looking face is Skymaster.
I previously used Skymaster which I found to be very beautiful, but quite battery intensive. I now use Radii which is more modern and minimalistic.
A/D looks really nice as well.
I am really enjoying mine too. It's freaking huge but I still love it. I need to get a new more flexible band for it though.
There are certain watch faces that let you choose brightness independent of interactive and ambient mode. One of the ones I noticed that setting was on this face:

Yep. I loved how customizable it was, unfortunately the 3rd party faces are all blocked when using with an iPhone.
Second watchmaker - there are some great faces for free out there.

I was going to get some of the thema watchfaces, but I'm a bit put off by needing Identity, Contacts, Storage etc (click Permission>view details at the bottom)

My two favorite watch faces, Skymaster Pilot and Krona Sunlight, both have decent Ambient Display modes, although most of the benefits of Krona Sunlight are lost in that mode.
Yes, screen always on using the Skymaster watch face and a brightness of 4. The Skymaster app has an ambient mode brightness setting and I have that set to 5 out of 6.
Also, that watch face has a standard and a simple ambient mode. I use the standard which is very detailed and has colors. Here is a picture of the ambient mode on my wrist: [link].
Skymaster has been my go to for a while. Simple and clean full screen analogue setup that also tells me the date/day of the week, weather, and most importantly battery level for watch and phone.

The face I use for my Moto 360 does it well, it has the temp in the center and a dial around it that points to Clouds, Mist, Clear, Storm, or Rain/Snow (changes from rain to snow when necessary). The face is called Skymaster.
I found that SkyMaster looks pretty nice on a square face, here it is on my LG G Watch [link].

I'm still loving Skymaster
My two favorite watch faces are Skymaster Pilot and Krona Sunlight. That covers both the "fancy analog" and "stylish digital" look, and both have extras: the Skymaster face lets me see my phone's battery too, along with current weather, while the Krona Sunlight face lets me see weather for the next 24 hours in a simple and elegant design.
Other faces I toyed with were Ranger Military, from the same dev as the Skymaster (actually, check out all the watch faces from that dev), and InstaWeather. In the end, I didn't like the huge 12 at the top of the Ranger face, and InstaWeather was a bit ugly for me (especially compared with Krona Sunlight, which gives similar info), but it's a matter of personal taste.

Review: Really enjoyed this band. This was the band that convinced me I prefered the leather over the steel link and had me returning it for the stock leather. Had I not returned it this was my main leather band. It was stiff at first but softened after use and became very comfortable.
Skymaster, Pure, Chronos Time Master are 3 I use with sweeping second hands.
Honestly? I find myself loving one of the default Urbane watch faces. I always seem to go back to it, despite sometimes plopping on Skymaster. I really, really want a default Huawei Watch face (the one on the left), but that seems unlikely. :(
