Don't worry man, it's actually very easy and the solution might disappoint you. I simply used this app
and filmed it off the screen. Then edited some snippets on a mobile cutting app. Very easy and low effort :-)

Well for the sports, it's pretty easy, most apps are free but it will require a subscription like SN or Score. You would have to look into that since I don't use those apps.
For the camera, I would suggest a image editor, but most of them are free anyways but if you are looking for something unique. I like that VHS Camcorder app, it is a new way to take pictures if you like that style.

If you're asking yourself "Is there an app for that?", you're so stupid! Of course there is!
Or just a phone app for ease of use. It has a slider to increase how damaged the tape/tapehead is. iOS, Android
But I think that they at the very least fucked with in post. I have digitized some pretty damaged tape and it still looks pretty decent for the time period.
