1 Tbs butter
2 Tbs peanut/cashew/almond butter
1 egg
1 Tbs almond milk (or substitute)
2 Tbs almond flour
1/2 tsp baking powder
Melt butter and peanut butter for 30 sec. Separately, mix beaten egg and milk (you might be able to use water here). Separately, mix almond flour and baking powder (and maybe salt).
Mix the dry ingredients with the egg mixture, then the new mixture with the butter mixture. Pour into microwaveable ramakin or silicone mold (or bowl maybe?) so that you have two. Microwave for 2 min or until there's no liquid left.

Let sit for a minute or so, then cut in half, toast (only till it JUST gets toasted or else it'll taste dry), and enjoy!

1 can full-fat coconut milk (400 ml)
2 tablespoons + 1 teaspoon instant espresso powder (7 grams) (Medaglia D’Oro is a common brand found in grocery stores.)
2 scoops (or more) Primal Kitchen Collagen Peptides (12 grams)
10 drops liquid stevia (Use less or more to taste.)
In a measuring pitcher with a spout for easy pouring, whisk the instant espresso powder into the coconut milk until it dissolves.
Slowly sprinkle Primal Kitchen Collagen Peptides into the coconut milk, whisking until completely smooth. Add the stevia, then whisk again to combine.
Pour the espresso coconut milk into popsicle molds. Freeze at least 3 hours, or until completely frozen.
Macros (for full recipe of 8-10 popsicles):
Fat: 55 grams Protein: 25 grams Carbs: 24 grams
I decided to make it ice cream instead of popsicles, and put it in my ice cream maker. The collagen gives it a texture similar to fudge popsicles I used to have growing up :). The coffee flavor is really strong (I used this brand) so next time I think I might do less espresso powder and then be able to do less sweetener.

Pro tip - If you up the Parmesan and use a bit less cauliflower, you shouldn't have to microwave anything to get moisture out. The heat from the waffle iron usually does a pretty good job of steaming excess water off and the cheese holds things together pretty well.

There's an edamame based pasta that has a better texture IMO than shirataki noodles. More carbs unofrtunately - 6 grams net per serving. Having gone a long time without pasta, though, I think their serving sizes are enormous and never eat a whole one.

Ingredients
4oz (115g) Cream Cheese
4 Large Eggs
2 drops concentrated sucralose solution.
1 Tsp Vanilla Extract
4 Tbsp Coconut Flour
2 tsp Baking Powder
Bring the Cream cheese and eggs to room temperature. Sift the coconut flour and baking powder together. Whisk everything together. Larger eggs should provide good consistency, add 2-3 teaspoons water if too thick otherwise. Bring griddle surface temp up to about 375 degrees. Quickly wipe the surface of the pan with the end of a stick of butter. Use a paper towel to wipe off any excess. A well seasoned cast iron pan just needs a bit of fat to fill in the surface pores of the iron. Use a 1/4 cup ladle to portion out each pancake.
The original recipe called for a tablespoon of vanilla extract and then an additional 1/2 teaspoon of maple extract. Just way to much extract in my opinion so I pared it back to just a teaspoon of vanilla extract. And I didn't have any cinnamon so I just omitted. Since I've found out about concentrated liquid sucralose I've been using that as my go to sweetner. It tastes just like sugar and one drop equals one teaspoon of equivalent sugar. All in all was excellent. That enormous stack of pancakes lasted not even 5 minutes after I put the camera down.
Ingredients:
Two Thai tea bags (this is my favorite)
2-3 tbls Sugar free vanilla syrup (I use Torani)
2 tbls Heavy whipping cream
Instructions:
Steep the tea bags in 1 1/4 cup (10 oz) boiling water for 10 minutes
Remove tea bags and let cool
Add syrup and heavy whipping cream to desired sweetness and stir
Pour over ice
Enjoy!
I found with those measurements above, it tastes just like what you get in restaurants.

I can help! Sushi places mix Kewpie mayo with Sriracha to make their spicy mayo. Kewpie is distinct from American/Western mayo in that it uses only egg yolks rather than whole eggs, as well as using rice or apple cider vinegar, rather than distilled.

As I have been curious for quite a while (not a native speaker) why i keep reading about "tin foil" when i have only ever seen aluminium foil in my life, i conducted a little research. Turns out, actual tin foil did in fact exist until the early 20th century before it was superseded by the cheaper and more durable aluminium. The english language just didn't adopt to this so people in those culture groups kept the old term. Real "tin" foil used to give foods wrapped in it a metallic taste, so we can be quite lucky it's not used anymore.
These are not bad. The noodle texture is much more noodle like than shirataki, almost like an egg noodle. There is a bit of carbs in them, but definitely manageable. You should still be able to hit your macros.
I posted this a few days ago, but posting again because I love it. This is my version of Keto & Co's plain hot breakfast.
My current breakfast obsession is:
Stir the dry ingredients together, then add water and mix well. Nuke for 1.5 min. Comes out very similar to malto meal or cream of wheat. I add 2 Tbsp butter and a ton of cinnamon, tiny splash of vanilla and 15 drops of ez-sweetz (sucralose) cause I like it sweet. SO freaking good and hot and cinnamon-y.
Macros for the whole thing, prepared as above: 303 cal, 4 net carbs, 3 protein, 27 fat.

I’m sure you’ve heard of the Mediterranean Diet (MD), but have you heard of the Mediterranean Keto Diet? The approach is a well formulated MD but with monounsaturated fats being the primary fat source (saturated fat is limited but not as strictly as the MD is on saturated fats), removing the grains and starchy veggies and adding back in eggs and cheese and such. Veggies - Dice up the Carrots and Green onions
Instructions
1) Pan on Medium/Medium-Hi heat 2) Add 2-3 tbps oil and then throw in 3 eggs. Add Salt/Pepper(as needed) and scramble eggs until eggs (don't cook it too much) 3) Add 2 tbps butter and add the diced carrots. Cook until the carrots get a little soft 4) Add in the Konjac rice and mix it up 5) Add Sesame Oil and Soy Sauce (optional) 6) Add in Green Onions and cook for another minute or two to your liking

Mix all ingredients together and separate into 2 or 4 parts depending on how big and thick you want them (this is two parts--makes big thick buns). Press into a muffin top pan (I used this one) or form into buns and bake on a parchment covered cookie sheet at 350° for 15-25 mins (exact time is dependent on bun size...these big ones took 25).
Burgers are my favorite food. So glad to have an easy bun recipe!
I use the ones by FitPacker. They're a little more expensive than other options but so far mine have held up nicely, even after running them through the dishwasher many times. I also prefer the single compartment for more flexibility. There are quite a few options on Amazon and honestly I just went with the first brand that didn't look like cheap trash.
I also wanted one I could fit a fork/knife/spoon inside so when I eat at work I can put the dirty utensils inside easier. But again, this could be accomplished by many different offerings on Amazon depending on your budget.

"Heavy whipping" can describe any cream from 25-40% fat. Most people on keto use 35% or higher, which has 3g net carbs per 4oz, which is more than enough to cover the cheese cake in a thick layer. So, 1/16th of 3, is what, 0.15? I'd file it under "negligible" in terms of serving size, especially considering it's entirely optional.

Flaxseed meal is .17g net carbs per tablespoon. So barely more than 1 gram of carbohydrates for two of these pies, which is 32 servings.
No, that's not my brand of sweetener. The kind I use has no dextrose.
You're right on the coconut flour, my math was off. It's 9g per pie then, bringing the total net carb count up to a little under 40, rather than a little under 30 -- 4.2g for a large serving instead of 3.5g. Important to be accurate, but that's not going to prove catastrophic distinction to anyone's diet. A single, accidental sprinkling of garlic powder on your steak will make the same difference.
I've followed keto for 18 months, lost 70lbs of fat, increased my deadlift by 150 lbs, and started keto as a physically active health nut. But thanks for your kind advice.

Sugar-free Brach's cinnamon candies. They pack enough of a punch that one or two are enough (svg size is 3). I don't taste the artificial sweetener like I can with other sugar-free candies. Even my skeptical hates-artificial-sweeteners-husband likes them. They DO contain maltitol and sucralose though, which knock some people out of keto. (I can handle them fine.)
Reese's Sugar Free Miniature Peanut Butter Cups. High in calories, and you have to watch out for the sugar alcohols in these too, but good for an occasional treat.

Divide between muffin molds and top each with tomato halves facing inside up Place silicone molds on a sheet pan (or even double pan so bottom doesn’t brown) and bake for 25-30min. Whites will look opaque and won’t be runny.

Both frequently have added sugar, actually. Many artificial vanillas have corn syrup, but even some premium pure vanilla extract brands like Nielsen-Massey have added sugar in their standard offerings.
It’s easy to find ones that don’t, though. Here’s what I use for artificial: McCormick Culinary Clear Imitation Vanilla Extract (this $8 quart will go a long way!).

I don't mean to be a kill-joy, but I'm skeptical of their nutrition label (from Amazon).
It shows 6g fat, 11g protein, and 1g net carb (8g total - 7g fiber).
Problem is the calorie math for that doesn't add up. They show 120 calories, but from the macros I only get 102 (6x9+11x4+1x4 = 102). So that leaves a missing 18 calories or potentially 4.5g of carbs.
Something smells fishy.

Shoutout to Jen Fisch, author of The Easy 5-Ingredient Ketogenic Diet Cookbook (Amazon link). This is a modified version of her cream cheese muffin recipe. I would definitely classify these as a fat bomb, breakfast, or dessert!
Ingredients:
Preheat oven to 400 degrees. Prepare 6 regular sized muffin cups by greasing bottom and sides with 1 Tbsp of melted butter.
In small bowl, cream together cream cheese and heavy cream until well combined. Add eggs and remaining 4 Tbsp of melted butter. Mix well and set aside.
In medium bowl, mix together almond flour and baking powder. Add cream/butter mixture to flour and blend with a hand mixer until batter is smooth.
Add peanut butter, cocoa powder, and stevia to muffin batter and continue to blend with hand mixer. Batter should be thick, dark, and smooth.
Divide batter evenly into 6 prepared muffin cups, using a rubber scraper to get all the batter into the tin.
Bake for 13 minutes, or until a toothpick comes out clean. Transfer to a wire wrack to cool. Serves 6 (in case that wasn’t obvious, haha).

I made the shortbread using this recipe - http://www.yummly.com/recipe/external/Flourless-and-low-sugar-_or-sugar-free_-chocolate-shortbread-cookies-309496 But, I added a generous spoonful of peanut butter to the mix.
The filling - microwave a packet of sugar free jelly/jello (I used mango passionfruit flavour) with about 1/4 cup of cold water until fully disolved, in a bowl add the hot jelly to a packet of softened cream cheese, about 1/4 of a can of coconut cream, just scooping the rich creamy part off the top and some vanilla extract. Beat it together really well and then put in the freezer, stirring regularly. Once it is thick, but still easily spreadable, make sammiches with the shortbread.
The shortbread tastes kind of ordinary alone, but with a filling it is awesome.
Tuna, hard-boiled eggs, and chicken are my go-to protein sources if I am low on my macros.
Alternatively, if you wait for a sale, you can get protein powder for $4-6 per pound. I set a deal alert for "protein" on slickdeals.net.
[Tip: don't bother with raw egg whites or raw eggs for protein, you only digest around 50% of the total protein content.]
I happened upon Raw Rev Glo bars from an Amazon sample box. The peanut butter flavor only has 3 net carbs, with 15 grams of protein. Sugar is pretty low too. I eat them before my elliptical workouts.

Yup. Cocoa powder has 1 net gram of carbs per serving and Peppermint extract has a negligible carb amount per serving. Trader Joe's Peppermint Cocoa has about 6 carbs per tablespoon, so it'd be a good way to make these bars even lower carb (sucralose extract and Erythritol could add in the missing sweetness).

It's a kind of shirataki noodle. I believe it's made from an asian plant that is a water-soluble fiber. Pretty much zero calories and carbs, tasteless, and has no nutrition- but fills you up.
It comes in spaghetti, fettuccine, and some other "shapes". If you've ever had pad thai, the texture resembles those rice noodles rather than an italian pasta. The reason the handle is off in the oven is because it's not oven proof and can melt.

The answer is no. I've bought this in the past until I learned that at least 1/3 of it is C12 (Lauric Acid) which is more of an LCT and not an MCT. It's cheaper to produce though so it acts like a filler. You want to look for another brand that is primarily C8 (Caprylic Acid) and C10 (Capric Acid) which are true MCTs.
Personally I use the brand NOW, which only contains C8 and C10, but there are other brands as well. This just seems to be the cheapest option off Amazon.

I personally do not have the time nor the patience to blanch my own almonds. It requires that you take the skin off of each individual almond... that, I think, is insanity.
However, if you buy blanched almond slivers, and have the right kind of food processor or blender, you literally just dump and grind until you get enough flour.
So really it's just up to you and how much work you want to do.
I order mine on Amazon and I get Anthony's blanched almond flour.
I can justify the cost because I usually just use 3 tbsp at a time for "bread", or the occasional pizza which is only 85 grams. So a 2 lbs bag lasts a couple months.

I suggest using room temp pecans so the other ingredients cling to them. Just mix a scoop of the mix and some pats of cinnamon, then throw it into the fridge. The colder the better I say. Once you pull it out and try it, it'll be reminiscent of cereal (to me, at least).
I strongly suggest buying pecans from Costco if you can since they are cheap there.

Just made this tonight, adapted from Bobby Flay's recipe. Smelled, looked, and tasted amazing, so I had to share!
Serves: 2
Preheat skillet with olive oil, preheat oven to 400 degrees F.
Remove bone and excess skin from chicken thighs, if applicable. Season with salt and pepper, and lightly coat in almond flour. Dip in egg, and dredge in crushed pork rinds. Fry in skillet until golden brown (2-3 mins per side).
Transfer to baking pan/sheet, and pour 1/4 cup marinara over each thigh. Top with mozzarella, and sprinkle with parmesan. Bake until chicken is cooked through (5-10 mins).
Serve with a nice red (Mezzacorona 2012 Pinot Noir in my case).

Well for me a pound of ground beef is damn near a half portion, so 12g carbs for one meal, and add in onions and tomatoes and I'm getting closer to 15g for one meal.
All I meant was be careful of taco seasoning, some are deceivingly high.
I recommend using the SlickDeals app and setting up a deal alert for Instant Pot. I already have one, but I keep the alert active because I like to see how low the deals are. Anyway, I probably get alerts once or twice a week.

Set your oven to 375 and cook for 11-15 minutes (mine go for 13 minutes to be perfectly browned on the bottom).
A double batch makes 30 little pancakes and I usually have 2-3 for breakfast. They freeze beautifully. They also make yummy sandwich bread.
Now I just need a similar pan but with 6 inch diameters so I can make tortillas in the oven.

It add a whole new dynamic to one's flavor palate. I use it to take the "green" taste out of vegetables I don't care for much like green beans. It's also vegetarian-friendly. I find it amazing addition to chicken. cream, and tomato-based dishes. I started off using it sparingly due to the strong taste but love the flavor. It's a little higher in salt, but balancing out one's potassium shouldn't be an issue.
As a Wisconsinite, beer cheese soup is a must around here and this helps mimic the flavor due to having some yeast extract. I usually slip in some Hacker-Pschorr Oktoberfest Märzen, New Glarus Spotted Cow, or a Guinness if my macros are low for the day. :D

They're dried, so i just threw them in the crock pot and let them cook with everything else all day. However, they did end up being a little crunchy in the end. I would definitely recommend cooking them before adding to the chili.
They're on Amazon but a word to the wise, as I also use them, they aren't the highest quality. I've used mine since December and I'm down to 5 that are usable and even those have broken bits and some minor cracks. That's with heavy use (I meal prep all of my lunches every week in them). I would recommend them because they're relatively inexpensive and very useful but just be warned they can be kind of brittle.
I got mine on amazon here for $12.95 and I use it every day for my BP coffee. Even if the coconut oil is chunky it still mixes it perfectly. No oil slick (or chunk) here!

I'm not sure how well it compares as I haven't used swerve before. I usually pay ~$25 for 5 Lbs of Erythritol via Amazon.
When I need it powdered, I grind it up in a processor/blender/mortar and pestle as needed.

I eat a variation of this- UNFILTERED v olive oil, capers, fresh lemon juice. I also can't recommend this variety of tuna enough. Amazon Prime is the cheapest way to go, tastes amazing & far less "fishy" (& I love fish,) and this smaller tuna species accumulates less heavy metals than other, larger species.
I like Dale's Seasoning. Amazon link. It's got some corn syrup and sugar in it, but not too much. Soy sauce is the predominant flavor. You could probably make your own by adding garlic powder & onion powder to regular soy sauce.
