You need some kind of receiver to see the iPad on your computer, even via OBS; iPads do not output a video signal just by plugging them in. I use a program called Reflector that acts like an airplay receiver on your computer, then you can add that as an input to obs.
For a silly alternative: keep the mac mini connected to the display, and use something like Luna Display to stream to your mini from the Windows machine. I noticed luna display isn't out yet for Windows-as-source though... maybe Reflector could work?
Even f(l)unkier: get a HMDI -> USB adapter and use that to feed HMDI out from your Windows machine into the Mini. Fullscreen with VLC or OBS and you've got something. I'm not sure how well those adapters match the display resolution though.

Fun aside, that looks great but I read that there's no way to interact with the phone, just get the notifications, is that correct? I am aware that this is not trivial, but your functionality paired with something like Reflector would be not only knorke but awesome. You could use the fingers/pointer to use the phone and use a pop-up keyboard (like in WMR) for text entry because fuck trying to hit those tiny phone keyboard keys in VR.

Found it! Disclaimer, I have not used this program but I saved the link because it looked useful. You can choose from several different phones as your 'frame'. It's not free either, but I've heard good things about this app from video professionals.
I use the product below to airplay to my PC and it works perfectly. They have a product for some smart TVs and fire devices if it’s available on your tv you can try it. There is a 7 day trial or look into getting an AppleTV 3 you can find them pretty cheap and is probably your best option.

Why would you manipulate raster graphics in a vector editing tool? Also why even bother with a graphics tool when you can just place, resize, and reposition the whole thing in Premiere?
Easiest way is to either use something like Reflector to record the phone's screen and sync 'em up in Premiere, or use a screen recording tool and then copy the recording across.

Both use AirPlay; I’m unaware of a way to use the wired connection for screen mirroring on Windows.

There are some Windows based Airplay clients which let you mirror an iPhone to the computer. I think the only one that has built-in recording is Reflector 4.
However since it's Airplay, it won't be as good quality as recording directly on the phone.

Hey! All that i used to do this was 1- portrait Monitor. 2- Connect the monitor to a Mac (or PC). 3- buy a software called Reflector 4 which sets the mac (or PC)as an AirPlay for the iPhone. 4- mirror the iPhone using the software (on the Same Wifi network, a 5GHz network in my case) .
You can also tryout the free trial for Reflector 4 before proceeding and buying the software.

It’s decent. You should be able to stream 1080p videos without a problem. Just be careful with the limits of your mobile data plan. Even “unlimited” plans will limit tethering sometimes. Like, I have 30 GB per month on “AT&T Unlimited Elite,” which is neither unlimited nor elite. Shrug.
If I were you, I’d try to do all the streaming on the phone itself and use tethering for non-video stuff like browsing Reddit. It might be annoying to watch stuff on the small screen, but the alternative is to set up some sort of convoluted Airplay mess with AirServer or Reflector on some private network. I honestly don’t know it would work, but I’m sure it’s possible.
I do art streams and use my iPad for notes when I do puzzle games on twitch. I've found this app (Reflector) to be super helpful. It basically turns your computer into an air play receiver, so you can see the iPad screen on your monitors. Then you can add that as a source in OBS.

you can try the software reflector its what i use to share my phone screen to my computer, it works pretty well, my girlfriend uses it to screen share her ipad while drawing on discord, so it works pretty great
If you don't think game audio is a necessity for the game you're playing, and you don't want to spend money trying this out; you could use Quicktime to mirror your iPhone to your iMac via a lightning cable with the instructions here.
If you need game audio and are okay with spending $18, you could try out something like Reflector 3, which basically turns your iMac or even Windows PC into an Airplay compatible device.
The best way, but also most expensive way of doing this (About $140-180), is to use a game capture card along with Apple's Lightning to A/V Digital Adapter. With this method, quality should be the best possible along with having no issues with video or audio latency.
For streaming to Twitch, most people use OBS.
If I need it in a pinch, I will download a free trial Reflector. It allows you to stream a phone screen to the clients computer. From there, as long as you have remote access to their computer you can see their screen.
You’ll have to walk the client through a few things, but this won’t require you to invest in any new software like Splashtop.
Honestly, don’t be so tough on yourself. It’s been a difficult transition for everyone. Thank you for seeking out ways to make it a bit easier on your students though!
Depending on what you have for your main computer and the model of your iPad, there are a couple of different options. If your iPad is one of the latest models and you have a MacBook, sidecar is an option. That would essentially turn you iPad into a second display. At the point, you would just have to record that display during your lecture.
If you’re on a PC, I would look into using one of the many screen mirroring programs out there. You’d essentially want your iPad display to appear on your PC screen. It sounds more complicated than it actually is. Reflector 3seems to be widely used, but I don’t have much experience with it. Luckily, there’s a plethora of YouTube videos available to guide you.

You can, there are programs that allow you to project your iPad screen such as this one. I don't have any personal experience with it but they have a 7 day free trial you can give a go.

Does one of the monitor have more then one input say vga DVI or HDMI so you could use one of the empty ones and run a cable to your laptop. you may need a adapter to the laptop. Then just change the input on the monitor for when you are working.
Or do you have a chromecast you could plug in to the monitor.

Displays do not really have a portrait mode, it's the playback device that outputs in portrait mode when the display is mounted rotated in portrait.
I use all kinds of consumer and pro displays for tradeshows in portrait mode without any issues, as long as the source computer/device can rotate the output.
You can't do this with Apple TV (at least in the past you could not do this, unless something has changed).
You need a regular PC or Mac computer/laptop that can rotate the output for any display, and then use something like Reflector 3 ($15) to output the iPad to the rotated display.
You connect the laptop to the display, and change the display settings on the laptop to "Portrait" or "Portrait (Flipped)" depending on which way you hung the display, so the OS is rotated to view as normal on the portrait display.
Then run Reflector 3 on the laptop, and then cast from the iPad to the Laptop using AirPlay. Both the Laptop and the iPad need to be connected to the same wireless network (your booths own wireless router, do not try to do this using facilities WiFi).
I use Reflector. It’s $15 with a free trial and you can find it for free if you look. There are free and paid alternatives to Reflector some do a lot more but I just needed it for audio so it works good for me.
My gaming headset is wireless and the receiver has a 3.5 mm in jack that I can use a standard audio cable to run from a device to my headset but it’s a bit staticy so I chose not to do that, yours might have something similar.

I'd recommend giving the trial a go before buying - I'm not sure if content protection will stop you watching the app over AirPlay.
If you're streaming just the screen from your iOS device and have a Mac, you can attach the device to the Mac via USB, open Quicktime, and have Quicktime capture the device's screen by doing File > New Movie Recording > then in the playback toolbar thing, change input to the device window.
If you don't have a Mac, or want to capture the game's audio too, Airserver or Reflector is probably the best way to go, short of using a capture card. I personally use Airserver for streaming FFRK and it works fine.
I use Reflector 3 on our conf room TV to support all devices. Allows you to cast to the display from android, iOS, OSX and win10. Can even do multiple simulcasts, recording etc.
Used to use appletv so people could cast their phones/tablets during meetings but Reflector ended up being the better product.
