Mate that's just the phone companion app. Again, you need to license the watch software from Google, and there's no precedent for them giving it to anyone but major manufacturers.
I don't mean to discourage you from trying this if you've got the money and time to burn, but this would be a hell of a lot harder than you're imagining.
There is no legit documentation that shows that OEMs have such granular control. I cannot prove something that doesn't exist.
The reason you're arguing along this line is because:
I've looked for evidence to back your claim. Doesn't exist. Because there's no evidence to show that OEMs can block specific app updates, there won't be a link talking about how they can't.
But there's one way to prove me wrong. An easy one. Go to the Play Store on a web browser. Go to the WearOS app link. In fact, here it is - https://play.google.com/store/apps/details?id=com.google.android.wearable.app
From there, click Install/Installed. If the OEM could block the app update, your watch would show as greyed out with the message - "This item is not compatible with your device." And even then, that's more likely on the app developer than the OEM.
I get that message with my Nexus Player and Shield ATV (as the app isn't flagged as Android TV compatible). It's greyed out and shows "Your device already has this item installed" for my Pixel 2 and EA Connected. And then I have one other phone where it's eligible to be installed.
There's the proof. Don't like it? Prove me wrong.
Have you tried the basics like performing a factory reset or reinstalling your watch's firmware? Usually the microphone will listen for your words, and once you stop talking send off whatever you have said to be converted into text. However if you are in a noisy environment when using the microphone it sometimes can't distinguish between your voice and the background noise so it will continue to listen. If your watch continues to listen long after you have finished talking and you are not in a noisy environment that seems like a good indication that your mic isn't working properly.
Also, just fyi whenever you post a new thread there is a "formatting help" link below the text box that shows you how to format text including how to make lists. In order for your list to be formatted as a list, there needs to be two carriage returns after the preceding line of text.

Though we can try to make an open source alternative by sniffing the Bluetooth traffic and reversing the app (but I am not very good at that, I can do the Java bits though). SW1/2 were not Android Wear. The companion apps were purpose built for those models.
All Android Wear watches need the Standard from Google Android Wear companion app. use that.

I have a Pixel. My camera works fine. I searched the subs and found that you need to install the Wear OS app on your phone. Fixed my issue just fine.

Just have it installed, even though you cant add your watch to it. Just keep it installed on your phone.
Wait, this person solved it! I installed the Wear OS app by Google and now it's working perfectly fine. Didn't even set anything up in the app, just installed it and opened it, but didn't go through the setup process.

No. This has been the terrible name of the play listing for probably 2 years now. There's even archives of the page.
The Play Store listing has been called "Wear OS by Google Smartwatch" for a very long time, pretty sure it's been this way since the Wear OS rebranding itself.

WearOS will work as well on Samsung as it would on any other Android phone since Samsung phones run Android (save for the few Z-series phones, which seem to have been discontinued). You just install the Wear OS app and pair the watch with the phone.
I don't see any reason why an S3/Galaxy Watch wouldn't work with Android since you just install the Galaxy Wearable app which manages the device, and the phone just communicates with the device via bluetooth.

Look how old those complaints are. Now consider how Android Wear 2.0 came out with almost no significant changes, while their manufacturers abandon the system or replace it with their own system that works better.

I guess it works with android because they have large companies screaming at them, or something. Lowly customers? Can't even get an answer on a support forum :/

I think i may be better off asking on the strava subreddit, i just thought that maybe i miss something basicly, like geo restrictions or other stuff. It seems this may be more concerning the special case of strava, opposed to generic Wear OS behaviour.

EDIT: Additional confirmation: In the phone app when connecting a Wear OS Watch, it clearly says i need to download it seperately on the watch and set it up there.
Now why in hell is the strava app not in the play store on my Wear OS? Has anyone else here the same problem (with this or other apps)? What can be the problem? Geo-Restriction?
Anyway, i will ask on the Strava sub and update this here when i find some clues or get the solution.

Looks to me like it's FREE to download Wear OS. I think once a design is implemented you can print out the IC board for like 5 bucks for ten, then it's just a matter of sourcing the components, which I'm sure China would gladly supply., Heck, why not even do a tear down and see what's really in the guts?
The point is that if we as a group can figure this out, then we can open source everything and give DIY'ers something useful to make. I'm not saying we should sell the output - just give it away!
