All apps work if you use this app: https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix
I made it myself. It works perfectly and makes literally any app work with the DAC. Loving this phone!
It depends on which media decoder the app uses. Amazon Prime music works with it and there is an app that forced all apps to go through the DAC: https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix&hl=en
Allows it to work with all audio through headphones.
Treat your headphone jack gently. I just had to return my first V10 because simply touching the plug end of the headphone cable would pause music and disable the hifi DAC. Others have had the same issue.
Oh, and install this.
The Stock settings for the DAC are limited.
Download this: https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix
You can enable and disable it. It'll allow it to work on ALL apps, not just the stock music player and a few other random apps. Anyway, even with Spotify (extreme quality) you can get some great sound out of this phone.
It's the same for every version. Unless you install this app and enable the service, the DAC only works with LG's music player.
Download this
I can verify that it works. I'm on T-Mobile. When you toggle the DAC option, there'll be a distinct moment when you can hear it fade in and out. It's almost like a popping noise.
Tidal 2.37 still has not fixed the issue on v40 but this app has: https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix
Yes the v10 apparently is restricted to the native music app for the HiFi DAC, but there's an app work-around for it that enables it for a lot of apps. Not sure about Spotify though. I may have read a forum post on XDA that it does work for the downloaded music.

G5, too early to know for sure.
Cool man, hope you like it I love mine. Make sure to download this app to use the special DAC stuff in every app https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix I've heard it works over on the /r/Lgv10 subreddit come check it out sometimes its a great source for information solely on our phone.
There's an app to enable hifi for all apps on the v10, because only certain music services do it automatically.
I don't think there's much of a difference on the international version besides the apps it has. It may have some minor hardware differences, but i'm not sure.
Mine is the international version (H960A, to be specific) and it hasn't bloatware. It comes with some apps that you can uninstall like LG apps (LG smartworld, LG backup, LG health), Evernote, QuickMemo+, RemoteCall Service, Weather app and... I don't remember more. But it's basic like those ones, if you don't pretend to use them, you just need to uninstall them and that's it. In case you regret, you can install them again from a menu in the V10.
Other than that, the phone is clean and i'm really happy it.
Suggestions for apps i would say DAC fix since you say you're an audiophile, but i didn't install that app because it would use the DAC every single time and therefore wasting more battery. I like the DAC but i want to use it only with music, so, i chose a music player that plays with DAC (many don't) and here's a list with a few.
Besides DAC, i'd say Key Plus since it allows you to change one of your volume shortcuts. When the screen is off, if you press volume down twice, it will open the camera (can't be changed); if you press volume up twice, it will open QuickMemo+ (you can change it with this app, i made it lantern). Other than this, i don't see any more specific app to use, it's a matter of choice.
About Nova Launcher, my setup is quite basic, i need to make it better, but i'm not feeling inspired yet. Anyway, here it is:
Page 1; Page 2; Page 3 is blank for now, i pretend to add more with useful stuff.
Are you using the app to enable the hi-fi DAC everywhere?
Did you try the fix that enables the DAC for all apps?
https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix
You should check out this app which enables the HiFi DAC on all apps.
Not sure if it'll work for the G7 but I heard this app ( https://play.google.com/store/apps/details?id=com.phascinate.lgv10.dacfix ) enabled the HiFi DAC on the V10 and V20 when on a custom rom.
