If you really want Assistant there are two options:
~~Magisk module If you are rooted with Magisk, open the menu in the manager app and press Downloads. Use the search function in the top right to download and install Google Assistant Enabler and press reboot in the bottom right when it's done.~~ edit2: No magisk discussion (rule 4) - the method below doesn't require magisk and works with LOS root
GetAssistant Download this app and use it to enable Assistant, also requires root.
Required for both methods: Settings >> Apps >> Settings cog top right >> Assist & voice input >> Assist app >> Select Google >> Enable 'Use text from screen' and 'Use screenshot' >> Make sure permissions are granted to the Google app >> Change Assistant options in Google app settings if you'd like.
No root? I don't think there's a method for anyone without root besides setting several language options to US English (which I didn't want to do).
Edit: Assistant is not installed by default because not everyone wants it - just like how root is not included in Lineage anymore, it's optional. Some people want to use Lineage to de-Google their device, this is also why LOS doesn't require GApps.

Google Assistant is designed to only work on the Google Pixel however there are ways to make it work:

You'll need a kernel with dm-verity disabled or root for it to stick after boot. :)
Now this is another reason to root.
Took a gamble and used this app to change my build.prob since I had a tarp backup. It says to only use with a nexus device but I used it on my T-mobile LG V20 without any issues. Easy way to get Google Assistant on your phone without changing the build.prob manually. It didn't work at first but after I cleared the cache in my google app (as the app tells you to do) it started working. Keep in mind that if you use Google now you will lose all of your settings but worth it with Google Assistant.

Just use a root file manager or a build.prop editor app. If you don't have root, use TWRP to copy the build.prop to your SD card in it's file manager, edit it on your PC, then transfer it back. Backup the old build.prop and replace it with the new one :)

I've got Assistant on my (rooted) 6p by using this program. To be honest, it's okay but nothing to get excited about. I do understand people being upset that Google is basically orphaning the 6p, however.
It was delayed, likely due to the fact that N6 has a 32 bit processor as opposed to the other Google phones having 64 bits. There was an article a couple weeks ago saying that they are aiming for a mid-January release.

Don't really know. I didn't use Pixelize, because there was another program named Get Assistant on the play store. Pixelize does everything, GA just gets the Google Assistant. Get Assistant
First, try restoring your old build.prop settings, reboot etc. to see if that fixes it. Then you'll know whether or not it's related.
I used the same mod to get Google Assistant, but I used an app to get it — no problems here.
If everything fails, you could always try the Camera NX mod (not tried this myself).
Edit: I see the app I used maintains the make as Huawei, and just changes the model to Pixel/Pixel XL (judging from camera EXIF). Maybe try that?
