From what I understand Google worked out deals with carriers to have Duo data prioritized similar to how VoLTE is prioritized for phone calls, ViLTE (Video over LTE) is also prioritzed.

I have the Pixel but I don't really use video calling too much. I prefer using Hangouts if I have to video call because I prefer using it from my Laptop. But I've used Duo and can safely say the video quality on Duo is much better than that on Hangouts it seems to be optimized to work even on a network that isn't high speed. However Duo can only be used on your phone and needs a phone number. If that sounds ok, then you can check it out for Android and iOS.
Duo is pre-installed on the Pixel as it seems to be their app for consumers as they're going to market Hangouts as an app for business.
My Logitech C920 works with Google Duo, but at a low resolution and with no way to adjust the camera settings. It's functional but far from ideal.

Is there not a SKIP button, when prompted to link a mobile number? Also, make sure in call settings for the app that you have selected "Prefer Wi-Fi & mobile data" (not Carrier) for calls.
If the above doesn't work, install Google Duo - the "Facetime" app on all new Android devices for voice & video calls. It's available in your app store and also available in the Google Play Store for older Android devices that didn't come with it pre-installed.

We've been using Google 'Duo'. It works well on calls between Android & Iphones. Also worked well for calling our relatives in Germany.

Not new or hidden but I'm going to be bold for once and assume most people who will be reading this aren't using it at the moment: Google Duo.
Now that the outside is on hiatus, I've been video calling more of my friends/family and rediscovered it. While other services offer mostly the same thing, I find that the quality of Google Duo is much better: in most situations the video doesn't have any (visible) compression artefacts, if the network has some issues keeping up, the video gets turned off automatically to make sure that voice stays available (without echo or stutter).
And best thing is that the setup/use is simple enough for my parents to install it and make calls themselves without needing any explanation.

I don't use Facebook messenger. If you're OK with alternative, Google Duo is an excellent app for video calling.
There's also Allo, which is google's cross-platform answer to iMessage.
I don't really use snapchat, but I know android has it; I don't know how it compares against the iOS version though.
Doesn't jailbreaking allow for customization? And yeah, the water resistance is nice; my main gripe is the bottom cover for the USB port; I hate that. Mine broke off, so I still kinda have to take care when my phone gets wet. The IR blaster is great; I use it as a remote shutter button when I go on photography outings.

Hangouts has been pivoted to business use because Google had the analytics to show more people used it at work than for personal messaging. You can throw stones from outside with a lack of context all you want but it wasn't a good business decision to ignore what audience ended up adopting it.
Just because you don't know anyone who uses it doesn't mean that shit hasn't stuck. On the Play Store it has greater than 1 billion downloads and is sitting at 4.6 stars from nearly 4 million reviews. They have continued to improve it and add features so it's pretty clear they're not canning it anytime soon.

Duo j'y crois pas trop (les appels vidéos ont jamais décollé, France Télécom vendait des visiophone à une époque et SFR a longtemps fait une pub télé sur les appels vidéos). Mais comme le dit Pierre Lecourt sur Minimachines.net, Google simplifie à mort la procédure donc ça peut décoller cette fois et la fonction knock knock est pas mal (et les pervers pourront montrer leur b!te en avance à des gens comme tout le monde le fait remarquer sur /r/android...).

Mais pour jouer de la musique Spotify sur l'enceinte de l'Amazon Echo ou contrôler ses ampoules Philips Hue ça peut être pas mal. Ou demander le matin à Amazon Echo de nous donner un bulletin d'informations (bon une radio/un radio réveil fait pareil...).

Pretty much any flagship device is going to offer you a great camera experience. This includes the Samsung Galaxy S8/S8+, LG G6, OnePlus 3T, and the Google Pixel (and maybe the HTC U11 but that just was unveiled and isn't fully tested). Find yourself a blind camera test and tally which photos you like best. For me its the Pixel which came out end of last year. The S8, G6, and U11 all have expandable storage so you could buy a 256GB microSD card. Battery life is a tricky to determine but usally flagship phones will get you through a 3-5 hours of screen on time depending on what you're doing with it.
For me personally I prefer a more stock android experience so I choose Nexus (now Pixel) phones due to being clean software with quick updates. That's not to say the other skins are bad but it is a preference.
I'm currently using what would be equal to an iPhone 6+ and intend on getting the Pixel 2 XL when it comes out later this year. And I usually recommend getting a phone that is unlocked so you can use it at any carrier that it has the correct radio bands for.
Some tips for Android in general are Google Duo is a cross platform facetime. Google Opinion Rewards gives you quick 30 second surveys that give you Google Play Credits to spend on apps or in app purchases (which i think includes Netflix). I've made around $50 over the last year. You can replace you're homescreen app and I recomend using either Nova Launcher or Google Now Launcher. I personally prefer Gboard keyboard. There are a ton of great Reddit apps I use Relay for Reddit but other popular one is Sync for reddit.

Apple isn't willing to open FaceTime to their competitors, so unfortunately you'll have to get your contacts to switch to another platform as well. Once done, it will be easier for them to also switch if they desire to leave the Apple ecosystem.
