OHH! I got you this time. Ok, there's an app called prey. It doesn't do everything you need, but it has some nice little options.

Install this. And when you go to work go to the app and report it as lost/stolen. When it is turned on, it will take a picture with both front and back cameras, along with time and location.
As for some type of keylogger/tracker, I'd head over to /r/hacking for advice.
***When using prey for free, you get 10 reports a (week I think). Which means it will only take pictures 10 times before it prompts you to pay. Also, it's been a while since i've used the app, my info may not be 100% correct
I use prey. I like it cause I can use it on OSX and IOS devices too.
...but what are people's thoughts on Prey? It's been a long while since shopping for this type of security software.
I've been using Prey Anti theft. I haven't actually had to use it but you have the choice of either sending a trigger text to your missing phone to lock/wipe/alarm or you can do it from their site. No root capabilities like Cerberus does, though.
Sorry to hear. On the Android front: you should try to remotely install apps in case it connects to a wifi network - Prey and Android Device Manager are the ones to go for. Click the Install button with the same Google account and it will download them as soon as it connects. Although with wifi-only and password locked you're either hoping for them to break the code or come back to a known wifi area. Prey is especially good as it can track GPS, take a photo and lock down the device. ADM can remote wipe it.
I use Prey Anti Theft I have been using it for years. They also have a program for your computer. It used to have problems with locating my phone when my GPS was turned off, but the recent few updates have seem to fix that. It works if you are connected to just data and wifi.
This is what encryption is for. Choose a strong passphrase and don't worry about it. It's likely the battery would die/ a thief would turn it off/enable airplane mode/put it in a faraday pouch rendering remote wiping ineffective.

Prey is free, and works (in my experience, at least - I mislaid my phone on my last day of a work trip to Vancouver earlier this year, and managed to locate it swiftly)
Cerberus, my "lifetime pass" expired and the app was taken off the app store - no way to redeem lifetime membership on non play store app (if it's not open source don't trust it) and have to pay again. Went to their website when I got the expiration notice and it was all in russian. Their excuse for taking it off the app store was barely valid because there were & are other apps that do the same thing e.g. Prey they have a dead link on their website to their tweet "explaining what happened" and it just leads to deleted tweet. I guess they weren't making enough money from the people who paid once and figured it would be a great idea to make them pay every month.
I've removed this post as it's just a rant. You can use an app like Prey or Smart Lockscreen protector to try to stop a thief from being able to power off your device without unlocking it (but they can likely still place it into Airplane Mode).
You can try Prey. It's free (for under 3 devices) , open source, cross platform, has the option to control your device from PC or via SMS and I personally recommend it for your needs. :)

I created my own tracker out of an old android phone and a cheap monthly sim card. It has motion detection which alerts you if the bike is moved and you can track it with a nice gui:
Personally I can highly recommend the system, as something similar professionally is about £200+ for the device and £100+ a year subscription. The cheapo trackers on ebay that you have to send a text to and they send you back long/latt co-ords do their job, but with this system it'll alert you the moment the phone detects any movement whatsoever. I had to turn the sensitivity down on mine as trucks driving past shaking the the bike were setting off the motion detector.
The way it works is that I use tasker to detect an 'activate motion sensor' message, which put the phone into an armed state. Any time motion is detected I get a text alert sent from the phone in the bike to my phone. To disarm the system, I just send it a text. If thieves were to somehow cotton onto the system and try disarm the motion detector they wouldn't be able to as it only recognises my mobile's number for the commands. This gives you a first line of defence so that if the bike is being messed with you know immediately.
If the bike IS stolen, maybe whilst you're away or can't get to the bike in time, you've got the prey app, which provides a nice locator.
Hid the phone under the seat, job done.

Nextcoud has remote wiping of its synced files, but that's it. You will have to look at another solution such as Cerberus or Prey.
However, as talked about in this thread, your best solution should be to encrypt your device.
