Get the app rocker locker, it locks the default volume to the media volume. I personally have my ringer on or off and almost never mess with its volume.
Try this app instead. It only does one thing (lock the volume buttons to media volume), but it works for me, and should do so on all Android devices.

Here are some apps with neat functionality that I really recommend to make the move away from Samsung and all their quality-of-life improvements a bit easier:
Start changing the volume when video starts. That way it changes the media volume.
When you hit the volume button in the alarm/clock app it changes volume of alarm. Regular screens it changes ringer volume.

I'm using an app called "Rocker Locker" on my Priv to do that.
It's crazy that this is a feature built into BB10, and it's impossible to do in Android without running a separate app full-time to catch the button presses.

Have no experience with number one, but I can answer some questions about the rest.
Note that all of these apply only to the ZE552KL "vanilla" model of the Zenfone 3 - that's the one with the glass back and the 5.5" screen. Other Zenfone 3 models (including the Laser, Max, Ultra, Deluxe and Zoom) may be different.
There is also the app Rocker Locker, which should work on any device, although it might drain your battery, as it seems like it's playing an inaudible sound all the time.

I found the solution, there is this app called Rocker Locker which disables the volume buttons changing the notification volume and now it only changes the media volume, I have a 2013 Nexus 7 and it worked for me.

The why don't you just download something like the rocker locker app? Maybe I don't experience the problem you have because I have always used this app since switching to android- S7 - S8 - Oneplus 5T and now P20 Pro.
Like you have to make a manual step one way or another right - switch profile, turning on silent mode, or whatever. Just get rocker locker and it will turn down media whenever you turn down ringer. It's been an android staple for ages - surprising you haven't come across it.

I used this app that makes the button always change the media volume and it works fine, other apps like volume lock can lock the slide so it doesn't change but I've never tried them
I use this because it just defaults my volume rocker to media all the time. I keep my phone on vibrate 100% of the time, so this thing was a game changer for me for sure.
I use an "app" called Rocker Locker that makes my physical volume buttons always control media volume, never ringer volume. In the rare event that I need to change ringer volume, I use the drop-down arrow to switch from media volume to other volumes.

Possibly your volume down button getting pressed in your pocket until it goes into vibrate? If that's the case, you can use an app like Rocker Locker to force the volume buttons to always adjust media volume instead of your ringer.
You can also enable the System UI Tuner by long pressing the settings "gear" icon in the notification shade, then go to Settings>System>SystemUI and remove the Do Not Disturb volume shortcuts so you don't accidentally activate it.
It isn't perfect but you might like Rocker Locker. I ended up uninstalling it because it's slightly finicky but it mostly does the job.

Haven't tried it, but Rocker Locker seems to do exactly what you're looking for, and it seems like it doesn't affect battery life at all.
This also annoys the shit out of me in conjunction with music being muted when Do Not Disturb is enabled. Why can't it apply to notifications and not music?

OP, going the non-root and non-tasker route there are apps such as Rocker Locker which can be set to return your volume to a set level after a certain amount of time has passed or other criteria.

Rocker locker is a good app to control media volume directly. On any phones.
Samsung has a sound Assistant on the s8 that allows this to happen.
Other Samsung users can download sound Assistant and use it on their phones. This way you can also set your volume scenarios and even set individual volumes for individual apps.
So to answer, it's not the behavior anymore, it's just that some have not implemented the option for the system to realize in which app you are now.

I can't describe how unlocking your phone is different, and I can't say which one is better, but it's a change that you'll (have to) get used to.

If you do a lot of group texting between iPhones, you're might miss that on Android. Luckily most people I group message were cool with installing Google Hangouts. Basically just give your life over to Google. It'll be ok. They'll take care of you now.
If you used to facetime, that's gone now. I use skype.
That's all I can think of right now. You'll probably download a million things thinking you need them and then just delete them later when you get used to it, but it's worth it. The things it can do are amazing.
One thing that always gets me is the sharing. Hit the share button and it gives you so many options; things you didn't even think were possible.
And again, the ability to do whatever you can think up is boggling. Just this weekend I thought "I wonder if I could play something through every phone that's attached to my wifi, and that's totally a thing that can happen
