Use the app Shortcutter. It gives you a bunch of new Quick Settings toggles, one of them being mobile data. Just enable the toggle in the app, then edit your Quick Settings panel and drag-drop the new mobile data toggle. You can then use it to either complement or replace your existing mobile data toggle.
No special wisdom but here you go.
Get the Shortcutter app. The open it and follow the steps in these picsthese pics (should be in order)
When you go into edit your quick settings panels, scroll all the way to the bottom to the land of unused panels. Look for the one from Shortcutter (might say wifi or <untitled> (not sure what that's about, but it works), drag it to the top (or wherever you want it) and drag that Internet Panel down into oblivion.
Hope that's clear!
Good luck with. Please let me know if you hear any news with their new launcher when available.

LeeDrOid's Shortcutter gives you additional options for tiles and more, and he's on Reddit if you have questions. The free version is pretty robust, too.
Well I'd suggest an app called Shortcutter - Quick Settings this way if immersive mode is an issue in some apps you can easily switch it off vs doing command prompt every time you need it disabled. There's also another app called Granular Immersive Mode where you can configure immersive mode on an per app bases.
good luck installing drivers and ADB if you are ordinary user
there is much easier method, just install customized quick tiles, add head up tile, disable them and uninstall quick tile app, setting will stay preserved, that's what i did (too lazy to connect phone to computer and type commands)

And put a custom shortcut to Hotspot in the quick settings, it works fine on Sprints ED1500
Or my app, Shortcutter Quick Settings, i will soon be introducing a floating toolbox & widget options, the app currently utilises the Android TileServce API, injecting Quick Settings tiles into your status bar pulldown.

It's free, with an optional in app purchase.
I am also very open to feature requests.
since the wifi connection is so bad, why not keep it permanently off ?
this is the app

install, make a widget, select activity, in the search bar search for wifi calling
Click on the pencile icon and see if it is there. Also make sure it isn't on an other 'tab'. If you are sure it isn't there for some reason there are apps out there that let you create custom quick tiles like: shortcutter
Most of the quick settings apps have an internet toggle option like shortcutter https://play.google.com/store/apps/details?id=com.leedroid.shortcutter custom quick settings https://play.google.com/store/apps/details?id=com.quinny898.app.customquicksettings etc so could you replace the default one with this?
that app doesn't work (for me either). you have two options, add a shortcut with the all called "Shortcutter" or install LawnchairLawnchair Launcher (free launcher that's just a fork of the pixel launcher with a few features).
I'm using shortcutter for immersive mode. In DeX mode I made shortcut for quick navbar hiding/showing.

1) don't think there's any way around signing in - it's the process, and just the way things are.

Probably install something like this, which may have indicators. Use it to create a widget with WiFi and Data buttons, Data Usage button also. Have a play with the app. If useful or you want more features, it may be worth a purchase.

Assuming Android, use Tiles apps to add extra icons from the top swipe down menu. Realise the above app can do this also.

Launchers. App icons themselves have indicators. Can some of these be set up for them? You can drag contacts to the home screens also... Can be added as widgets.

WiFi vs cellular data. I would say to teach him how to switch off his data (from the swipe down or widget). This way, you can be certain whether you're connected to some WiFi or cellular data, and turn of mobile data, connect to WiFi only (check if online (IG, Facebook, website etc).
Maybe change font sizes? Makes things a little easier? Or some kind of contrast app, overlay or something.
Hope there's something in there that helps...
There's an app that can revert to the similar one in pie and is customizable to your liking. Here it is in action: https://youtu.be/MLDP4INWUqs And here's the link. https://play.google.com/store/apps/details?id=com.leedroid.shortcutter
Shortcutter is the app...

within it, you can set a custom tile on your quick settings and choose what you want the tile to control. But within the settings choices there are soooo many. I can't work out which one, if any, are the download booster
I have been using Shortcutter since my HTC 10 days which features a screen recorder with audio plus quick toggles for recording and screenshots. It's not just a screen recorder app, so you might not want/need all the extra features it comes with, but if you don't find any dedicated app, give it a try.
Edit: typo
Earpiece is quite old, buggy and inconvenient IMO. Better use Shortcutter or Quick Settings, both of which provide a quick settings tile and actual volume control for the earpiece.
I use Shortcutter for this. Highly recommended, a bunch of other useful quick toggles too, just make sure to disable battery optimization for the app or it will not work properly.
It’s set on the first quick toggle on my 6T to turn off “heads up” notifications. If I’m showing someone a photo or video on my phone, I quickly toggle heads up off so any notifications that come in are not obtrusively blocking the content.
Granular Immersive app & Shortcutter Quick Settings are 2 apps that have this feature. There's a few more but I can't think of them https://play.google.com/store/apps/details?id=com.leedroid.shortcutter
https://play.google.com/store/apps/details?id=com.rascarlo.granular.immersive.mode
There's a free version of Shortcutter that might give you more functionality if you want to test it. Not sure about scheduling, but it will make accessing features more straightforward once they've been set up in tiles or a floating sidebar.

Use this to activate expanded desktop. You need to run a command through adb first to give it permissions though. After that it'll give you a quick setting for toggling expanded desktop.
Create quick settings tiles (and much more) on unrooted phone
I use Shortcutter to add a split screen quick tile
You can do it globally with a Shortcutter tile, or Tasker (haven't tried it yet).
What I did was specifically different types of immersive mode (status hidden, nav hidden, both, none) for certain apps using adb commands. You can mix and match and get a little crazy.
Check it out here: https://forum.xda-developers.com/nexus-6p/general/guide-hide-navigation-bar-status-bar-app-t3509747
I initially tried 500 but some stuff seemed out of whack. Can't complain at all about 480.
Completely understand that. Shortcutter does it also. Either notification log or notification history both work.
i do that with Shortcutter quick settings
Both the button and notification can be brought back with Shortcutter!
And the whole pull-down menu can be made to look much better with AOSPMods Magisk module.
Shortcutter app does this plus a ton more direct toggle options. https://play.google.com/store/apps/details?id=com.leedroid.shortcutter
You can add it using the Shortcutter app.

With this you can enable wifi/ NFC and many more toggles (even such that google never enabled) https://play.google.com/store/apps/details?id=com.leedroid.shortcutter&hl=bg&gl=US
https://play.google.com/store/apps/details?id=com.leedroid.shortcutter . Have you tried this app? It let me add a nfc toggle to pull down menu on 1mk1. Might help solving the issue on your mk2.
I'm using shortcutter for immersive mode and the keyboard is running fine. In DeX mode I made shortcut for quick navbar hiding/showing.
Not a launcher as such, but how about:
