If you're really interested in the old messenger before stories or whatever it's called, go to apkmirror to download version 82 after that download this app. This app allows you to detach the app from the market so it doesn't update. In the Zipsinger app choose the FB messenger app you downloaded as the input and name the output to whatever you would like. Once the app is done being re-signed you can go to wherever the apk was saved (where the output location is) using a file explorer and install the newly created APK for a version of Facebook messenger that no longer has all the extra bloat.

Re-signing the APK for the app you don't want updated (using test keys, for example) breaks the ability for Google Play to update the app. So even if you accidentally end up with auto update enabled again, the attempt to update the resigned app will fail.
You can also resign the APK so the playstore doesn't recognize it for auto updates. I've had to do that for the GoPro app when they decided you needed a gopro account to use your camera.

The latest version from ES File Explorer is full of bloatware. The app has a wide variety of advertisements and "cleaners".
I am running version 4.0.2.3. No bloatware and it's the latest version released by ES Global without bloatware.
You can download 4.0.2.3 here, and then use zipsigner to prevent it from updating. Zipsigner does not require root en sign the APK with your own private key.
After you have installed it, it will ask if it's allowed to auto-update. Select no auto updating and your done :) This update has the latest material design.
There's an app called Zipsigner that lets you change APKs so they won't be seen by the play store.
I did it by following instructions from a /r/android thread from right around the time Quickpic announced they'd been bought by CM. Unfortunately, I can't find that thread right now and I don't remember exactly what I did well enough to tell you how, but it was very simple and I'm positive you can find instructions for doing it somewhere.
I'm pretty sure it's just a matter of re-signing the APK with a different [x] and then renaming it so you can see which one is the re-signed APK. The process copied the original for me, so afterwards I had both the original and the re-signed APKs. Just deleted the original and setup the "new" QP, including linking cloud accounts, and everything has worked perfectly since. Unfortunately, I just heard the old QP APK crashes on Nougat, so the free ride will end soon for me.

If you're lazy like me and have customized Apex tremendously and aren't yet available to transition to Nova, then you can just re-sign the apk and re-install the app to avoid future updates. I never auto-update, but it'd be tediously individually update each app. Instead, I bulk-update and de-select the apps I don't want updated (Youtube Vanced, Apex, etc). This will avoid that situation. It is also persistent, unlike TiBu which only detaches until reboot.
Download the relevant apk onto your phone.
Install Zipsigner.
Do the thing, use auto key
Use Titanium Backup or something or backup app data. Also use the in-app backup feature. Know that you'll lose your widgets and will have to recreate them.
Uninstall Apex and install the re-signed apk.

A couple of ways I've done it in the past.
From within play store and on the page for the app tap the menu (top right three dots) and untick auto update. This still will leave the app wanting to be updated manually though so another way is to use an app like zipsigner to copy the app APK and resign it. Once you install the new APK play store will stop recognising it as an app it can update.
If your modifications aren't invalid, and if you have a device that can run it, install ZipSigner. Once installed, use testkey to sign the apk if you do not already have a JKS. If you are using the original Undertale Wrapper, it does not have signature protection. As far as I know, there aren't other versions. I have made extensive modifications to it with no issues.
I'm using 91.0.0.16.70 from October. No stories, but it is probably not the last version BEFORE the stories crap.

Use a file manager to copy the apk you want to re-sign (I use Solid Explorer). Install Zip Signer from the Play Store. Open it and just click on "Choose In/Out" and select the apk. Then just install the signed version.
You can get ZipSigner here and once opened tap the Input button and navigate to the apk that's not installing. Then(optional) on the main screen tap the output button and navigate to the same apk and in the output field, type "-signed" right before the .apk extension and install the signed apk like any other.
If you can get the apk (perhaps from apkmirror), rename it from ".apk" to ".zip", re-sign it with zipsigner:

In the app list, click on the app you want to detach, then slide right for the special features menu, then select 'detach from market'. I found that it only worked temporarily though, I'd have to redo it every other day.
Instead I found an app called ZipSigner which signs the apk with a non Google key which worked for me.
Apparently that feature no longer works on Lollipop, you can use ZipSigner to resign the QuickPic apk so it can't be updated.

I have a Flex 2 and a Moto G5+.
I ended up downgrading to V2.56 of the fitbit app. This sync's OK with my phone. I have had very poor success with newer versions of the app.

I then resigned it with a test key using Zipsigner (https://play.google.com/store/apps/details?id=kellinwood.zipsigner2). Resigning it stops the Play Store trying to update it all the time which I found really annoying.
This solution won't be any good for the Versa or Ionic as they came out after 2.56. I love the look of the Versa but the lack of good app support with my phone is making me hold off.

I've never actually done it myself, but if you set up an Android build environment presumably the official way of doing so would be part of that. There's an app on the store called ZipSigner which looks like it should be a simple way to do it if it works/you trust them

ZipSigner can do it, no root required. Although it hasn't been updated since April 2013, there are fairly recent reviews still praising it.
Re-signing the apk with a test key is a better long term solution. Easy too, and no root required - though you will need to allow installing apps from unknown sources. I got the apk for the last pre-CM version, used ZipSigner to change the first digit of the version number in the apk name, gave it a test key, and installed it. Note: If you want to connect QP to Dropbox after doing this, you'll need to go to your Dropbox account settings and deauthorize QP, wait a bit for Dropbox to update your account, then use QP to reconnect with Dropbox.
If you want to keep using it regardless of Google's whims, use ZipSigner to sign the .apk so that it doesn't update.
A much easier way to re-sign the APK is with Zipsigner. Just sign Quickpic with testkeys and you're good to go.
I've never used Titanium Backup's "detach from market" function. Does anybody know if that would keep QP at its current version?
E: answering my own question - Yes. If you want to keep QP as it is right now and are rooted, and have TiBu pro, you can detach its link with the Play Store. The advantage over unchecking the auto update box is not having to worry about accidentally updating it or have it hanging out in your updates list. This is especially nice if, like me, you prefer to manually update after reading what the incoming updates will do.
E2: The method recommended below by /u/juilanoniem - re-signing the apk with a test key - is better. Easy too. I think it is impossible to say the exact last version before the "Stories" crap, because the rolling out timing depends on multiple variables for each user.
In any case, the "Stories" update officially launched on March 9, 2017 and it was being tested already in September 2016. This means that someone might get it and someone might not even if the version is the same.
On APKMirror the last version before March launch date is:

...if you still get it, find some version before ~September 2016 then to be sure. Someone here suggested:
