Since April RetroArch has a stable release available on the RG350M. You can download it for stock or OD Beta firmware here.
I'm not sure how the cores' performances compare to standalone emulators though. I use SimpleMenu and I've never spent real time with RA.

I played the entirety of the Mother series (Earthbound on pocketSNES, fan-translated Mother 3 and Mother 1 on reGBA) on the RG350M and it was a joy.
Ducktales on FCeux is worth it for the soundtrack alone (I prefer the GB version because nostalgia but the NES version is objectively better). Theme Hospital is my favourite management sim of all time and the PS1 port runs perfectly on Pcsx4all. I realise these are not exactly retro classics, they’re just my favourites!
Bonus round: download GB Studio and make your own Gambatte ROMs.

There are a TON of ways to do this, but here are a couple:
Do you have one or two SD cards in your device? If you have a mini-SD to USB converter, you should just be able to put ROMs on there.
If you don't have two SD cards, it's probably easiest to use an SFTP client (I like WinSCP):

Oooo I got you. I bought this bad boy for mine. The 4.7" model and it fits, literally, like a glove. It's neoprene so it's not going to protect it from EVERYTHING but it's perfect if you want to keep it slim. It slides in tight like it was made for it with no extra overhang.

I've done that and the left stick works for steering but the right stick for throttle and brakes still nothing. I can't even select the analog settings within the game.
The ROM I used (from here) was version 1.1 there was a 1.0 but I thought the newer version would be better. In case this matters. Also I have the RG350m if that makes a difference.

Are you on a Mac and/or using the OD Beta? I had no trouble with ftp/sftp connections using my Mac and the Open Dingux stable release but recently upgraded to the OD Beta and it no longer works well. No sftp connection and the Mass Storage option is very flaky with https://www.android.com/filetransfer/.

Suprisingly it fits around the RG351 perfectly and stays put better than the Switch one does.
The triggers on the bottom make for decent places to rest some of your fingers when you're not using them, as well.
The only issue it has is that it blocks the headphone jack, so if you use headphones instead of the built in speakers, it's no good.

You can give these a try. For the mobile Game controller you can remove the two touch pads on them and add a bit of double sided tape to keep the handheld attached to it.

I always use this memory card format program to bring back any dead or corrupted card before formatting to fat32.

Not sure if you've got this resolved, but if you haven't, try doing this. I experienced the EXACT same thing and this is what worked for me:
First, Format SD card using DiskGenius before loading files and ROMs:https://www.diskgenius.com/
Insert the MicroSD Card into your PC and load the Diskgenius program. Locate your MicroSD Card in the menu and choose Delete All Partitions.

Be 100% sure have chosen the right drive otherwise you may accidentally delete your PC hard drive for example. If you are 100% sure, click Yes.

The MicroSD Card area shown in Fig. 1 below will now show as Free with the available space below it. Right Click on this area and choose Create New Partition as shown in Fig. 2.

Confirm that the Partition Type is Primary Partition, File System type is FAT32 and that it is using the full capacity of storage. Once confirmed, click OK.

Choose the Save All option in the top left corner of the software.

You will receive a first confirmation, followed by a second confirmation. Please ensure you have selected the right MicroSD Card and click on Yes for both to begin.

The Micro SD Card will now be formatted, once ready the main software will show the device as FAT32 formatted and Active. You can now close the software, and remove and reinsert the MicroSD Card so Windows can recognize it after the changes you have just made.
Remember to unzip .rar files using 7zip after downloading ROMs and copying to SD card
After you've done all of this, try copying your ROMs again and give it a shot. Should work.
I believe balenaEtcher has a version for MacOS, I use that on my PC and it works great
The only work around I needed was, using Win32 Disk Imager to rip the image from my SD card, it wasn’t automatically in .img format, which you need to flash with balenaEtcher. Simply adding .img to the end of the file name fixed that for me. Idk how it will be MacOS and Apple Pi Baker, but hopefully this helps
Try reflashing the image to the firmware card from here and use something like balenaEtcher to do it, since it verifies the flash right after it finishes copying it. You'll need to use the 1.5.1 update to support the RG350M
So, welcome to the image to SD card tombola. I had the same thing, and it seems t9o be a crapshoot to get it to work.
However: Download the original or rogue edition firmware. Download the SD Formatter app, Format the card twice.
The best is to use the 16GB it came with, but don't use anything bigger than 32GB as this is the biggest FAT32 supports - and the card has to be FAT32 to be recognized.
after having formatted the SD card, twice, you use win32Diskimager to "burn" the image to the SD card.
You then eject the SD card using the "Eject" icon in the lower right corner, also known as "safe remove".
Put the card in, plug the power cord in, and start it up. It may take a while for it to get going, but not more than 5 minutes.
This is how I got it to work, god knows why, but I can only share what I know. It does work better using the 16GB SD as the image seems to be better accepted - for some reason./
You may also want to do the formatting and burning one time over... like i said, it just works sometimes
Definitely! If you pick up Pico8 here, once you open it you can navigate to the Favorites section and you’ll find hundreds of some of the best games developed for it. There are others too, and they can be found in the carts section of that website, and others on itch.io. I recommend checking out the video that u/onionsaregross posted about setting it up
What tool are you using to write the adam image to the SD card? What size is the SD card?
I would suggest using Balena Etcher if you are on windows, or rufus. Also, you should be using a SD card no smaller than 16GB. I am not sure if the type of SD card matters that much, but I have had great success with these PNY 16GB Elite Class 10 U1 micro SD cards. Doesn't look like they are available on Amazon anymore, but stick to a name-brand SD card (Sandisk, Samsung, PNY, etc...) and you should be good.

32gb will work if you have one, that would be room for gba roms sure. You get a card with roms and bios on it that you might want to copy to a new, reliable card.

Yeah the screen automatically turns off once it’s plugged in. I did have to adjust a scaler setting in the GBA emulator, but all the other emulators work great as is. I haven’t tested how long the battery lasts but I imagine the HDMI drains more battery.

I bought a plugable wifi adapter and a USB C to USB A adapter that works perfectly. You need one with the same chipsets for it to work, and the chipsets are explained on the Wagner's Tech Talk page linked by u/wagnerstechtalk. You might need the latest beta stock firmware to take full advantage.
I don't know if this will help you or if it's available where you are, but I ordered this off Amazon because I didn't want to wait for shipping from China. It works pretty well. There is a tiny amount of wiggle room on the top and bottom, with the 351p, but not so much that it is bothersome or that it wouldn't protect the device. ‘83 here and I just got my black 350M yesterday and I love it. Retro nostalgia like crazy.
I was a bit worried about this being some cheap Chinese crap, I couldn’t be more wrong. This thing is solid, gorgeous, and feels extremely good in the hand (other than long sessions where my hands tend to cramp just a bit due to having long fingers...)
You won’t be disappointed.
A few things I’ve learned/could help you save time.
Order Sandisk memory cards with it. Get a 16 for the OS and a 128 for the roms.
Go to the pinned post at the top of this sub and read through the guides. You’re going to need some software to properly set this thing up as well as make backups.
It has a LiPo battery. Don’t use a fast charger and don’t leave it charging unattended. If you have one of the small 5W Apple chargers use that.
Don’t power off the device with the power button. This thing is essentially a tiny Linux computer. Go to settings and shut it down from there. This is also where you go to reboot it. Try not to use the physical buttons for these things unless you absolutely have to.
Order a case for it.
A google search can find them for you, but the roms are legally sold online by the current copyright holder. If you want just the essential rom files cheaply and legally I recommend purchasing the Amiga Forever Essentials app for like $2. Gets you the 1.3 & 3.1 kickstart roms for the A500 and A1200.

Can confirm, I have the '17 Shield TV Gaming Edition, the thing's an Emu powerhouse. Retroarch, an external hard drive, 8bitbo classic pro controller(good for everything other than 2 player fighting games, or serious shmups - wired fightstick is godmode.), hooked up to a Trinitron flat-panel CRT. I would not have paid that price, damn I think I paid $129 for it, maybe a year after release.
You're going to have to find some way to check the SD card.
There is a file manager built into the RG350M that should allow you to browse the files on the card. If you can't make that work, you could pull out the card and check it manually using a PC with an sd card adapter, or a phone with a file manager app.

I'm running SiliconPower (U3) (Superior Pro, I think) cards in everything. (RG350, RG350M, RetroPie) They are pretty cheap and seem fast enough for emulation duty. When loading larger CD based games, I don't notice any excessive wait times, certainly not longer than it was on the real playstation. I think it's actually faster.
I have 32, 64, 128 and 256 gb cards. They read at around 85-90 mb/sec and write at 50-70 mb/sec (256gb a bit slower on writes). I have one in my phone too. They have been solid cards for value so I keep buying them.
