I understand your skepticism and I felt that way too. One of my friends on Steam played it constantly and was always bugging me to at least try the demo. I thought yeah, right, these simulator games are ridiculous and I'm not a car guy, much less a truck guy. At some point, I caved and had a few hours to kill, so why not?
After my first few successful deliveries, I began to see the appeal. I completely understand that it sounds like a joke at best and work at worst, but trust me on this, there are several layers that IMO make ETS2 very special.
There's something curiously relaxing about just cruising the highways, driving the speed limit and not driving like a maniac, like in GTA for instance. Not to mention cruising around in itself is very rewarding because you're discovering new locations, new businesses to acquire contracts and new truck dealerships. If you're the kind of player who enjoys management kind of sims, or simply starting small and working your way up to something bigger, levelling up skills, making more money, ETS2 will definitely scratch that itch. I started taking freelance jobs where I go around driving company trucks until I could afford my own truck. That truck has since been paid off and now I have my own garage and two employees generating a constant revenue stream.
If you find yourself with some free time, check out the demo. You could be pleasantly surprised.

To implement async timewarp 100% never-miss-a-frame perfectly will require GPU vendor support, some support from Oculus, etc. That's why several people here are stating "none".
Truth is, you can implement "good" rather than "perfect" asynchronous time-warp using what we have today, and the above titles do. It usually results in a perfectly smooth experience even at lower FPS and can be amazingly fluid. It absolutely makes FlyInside what it is. On the other hand, the lack of vendor support means that it can be a finicky at times. You might get a perfect asynchronous 75 on one computer, but need to tweak settings a little on another. I've seen some users who would get perfect async timewarp if their in-game frame-rate was at 45fps or at 60fps, but if it was around 50fps async timewarp would stutter.

Euro Truck Simulator 2 just added some amazing updates to their multi-monitor support in a recent update. Including 4 screens wide, or even 3 wide on top and 1 below middle to see the wheel/dash.
Also seen in the picture at the bottom right is the new telemetry display/server (web based app) that's running on my Macbook Pro.
Not the person you asked, but I have ~200 hours in ETS2 so I figured I could answer. It may seem silly at first, after all a lot of people play games to escape reality and experience fantastical situations. In contrast playing a truck simulator would seem to be boring or tedious. However I'd implore you to actually try the game if you have the chance, as it's probably much better than you think.
Most of these simulator type games have been pretty poorly made in the past, with terrible menus, awful graphics and ridiculous physics. ETS2 is different though; The menus work well, the graphics are pretty good (even beautiful at times), the physics are good, the core game mechanics actually make sense, and are easy to use.
But that isn't the best part of ETS2. No, the best part is how relaxing it is. After a hard day at work/class playing this game for an hour or so (which is enough to do a "job" in the game) really chills me out and puts me in a good mood for the rest of the evening, even if I had a really crap day at work. You just hitch up, turn on internet radio/spotify, pull out onto the highway and hit the cruise control and then just cruise through some pretty beautiful landscapes. Unless you are going super fast there is really no stress involved which is probably the best thing about the game for me. Also there's the business element of the game where you earn money to build a company and upgrade your truck, which can be fun.
Now of course, this type of game isn't everyones cup of tea so you might not like it, however you never know until you try.
It's a pretty solid game and I've enjoyed the several hours I've put into it thus far. To convince myself whether it was really worth it or not before I bought it, I downloaded the demo from the dev's site and gave it a go. I was hooked after delivering 2 or 3 loads of cargo :p

Mods are compatible regardless of your steam or store-bought version. Installation should be the same; drag the mod file into the mod folder, activate it, and you're done.

On a real truck, I think there's a thumb switch on the shifter that alternates between low and high sets of gears.
I use the splitter transmission, which alternates between odd and even. It reduces the need to hit the toggle button as much, since going up or down 2 gears at a time is usually good enough.
By default, the predefined profiles expect a triple monitor setup, per this help page on the official ETS2 website:

It's probably possible for you to setup a dual monitor arrangement, but it would require fiddling with the various configs mentioned on that webpage so that your primary monitor faces straight forward, and your second monitor faces either left or right at an angle, depending on whether you drive on the left or right side (assuming you want your secondary monitor to look out across the cab to the opposite window so you can see the side mirror and so forth).
So, your choice: find some time and room to setup that third monitor for a more plug-and-play experience, or fiddle with config files and so forth.

There is a better (technical) solution to your problem than splitting your time (and thereby halving your in-game progress) between two game profiles (sorry /u/38673041). Here it is: your control configs are stored in a file called controls.sii. It's located here:
My Documents\Euro Truck Simulator 2\profile\PROFILE_ID\controls.sii
You can maintain multiple copies of this file, each configured for as many controllers as you like, and just copy them into place depending on which controller you want to use.
Example:
Make sub-folders under your PROFILE_ID folder and call one "Wheel" and the other "Gamepad." Next, start ETS2 and adjust your settings for the wheel, save/exit the game and then copy the controls.sii file into the Wheel sub-folder. Repeat the process for the gamepad, and copy the newly modified controls.sii file into the Gamepad folder. Then, depending on which controller you want to use, go into either of the sub-folders and just copy the one you want into place under the main PROFILE_ID directory. Make sense?

1.4.2 came out in like 2013. I assume you have a retail version of the game? If so you can update it on the official website. Or use your activation key on Steam to get updates automatically.

Euro Truck Sim 2 doesn't even need mods now... proper FOV and triple screen support is now built in as of the latest build. Here's the article :D
Honestly beyond that I only know of iRacing and Assetto Corsa that does 100% proper for triple screens. the gMotor based games (rFactor, Reiza games, etc) somewhat do it... but they assume/force the side screens to render at 45 degree angles (no ability to change that).
If you're not completely sold on ETS2, you can try out a timed demo from their website. I did that and then bought on steam, and it unlocked and I was able to continue with the progress carried over.
also if you have a decent enough computer you can download a demo for this trucking simulator, "euro truck simulator 2" its cabovers but it pretty good for understanding how the trailer turns with the tractor.
There are two ways to get demo, first from makers of game. and second from Steam, you have to make account but its really fast download. (demo download through steam is on right side of page)
If you just want to try the game, you could download the demo from the official site. Send me a PM if you like it and plan on playing it for a bit longer. I still have an unused key from the latest Humble Bundle that I could give you.
Sadly this simulator features only Scania trucks.

Lots of details here, though they are for ETS2, they still apply (for the most part) for ATS.
For ETS2 I've created a custom layout for my TH8A where I can use all 7 forward gears, plus reverse. I have gears 1 / 3 / 5 / 7 / 8 / 9 / 10 / R mapped... as I find I never need 11 or 12 to cruise at full highway speeds.
For ATS because the larger (16 position gear box) I need to make another custom layout... ~~I'm currently thinking that will be 2 / 5 / 8 / 11 / 13 / 15 / 16 / R.~~ (EDIT) I've settled on 1 / 4 / 7 / 10 / 12 / 14 / 15 / R. I found there can be lots of hill starts on freeway exits, and gear 16 wasn't as important for cruising at 55 MPH in either truck.
It takes a little while to understand this configuration... but I find it more convenient than using the range selector or splitter modes.
See here for explanation with diagrams. You don't have to get into all the advanced technical stuff further down the page. When you get your G27, just run the in-game setup wizard and choose according to your preferences.
Have you run through the in-game controller setup wizard? It will help setup transmission mode, shifter layout, and other button bindings.
Last I checked, the G29 does not include a shifter in the standard package. It's an extra add-on purchased separately. Without one, you will have to either use automatic transmission or bind a simple 2-button combo of shift-up and shift-down to the shifter paddles or other buttons on your wheel.

SCS did show off a 4 monitor setup where 2 monitors were the windscreen, and the outside two screens were the side windows. In their latest multi-monitor configuration guide, have the custom mode section which mentions "bigger flexibility over the setup for 1-4 monitors". Found this thread on ets2mp forums regarding using a 2 monitor configuration.

Here you can read all about it But basically how i like to use it: you can switch between the 1-6 and the 7-12 interval, so if you push the key you chose your 1st gear becomes the 7th, the 2nd the 8th and so on. It's not that big of an inconvenience, since basically you won't really use the 1-6 range except in the city, and only if you have a loaded truck.
See http://www.eurotrucksimulator2.com/multimon_config.php for how to configure multiple monitors. For triples, you probably want mode 2.
edit: I'm not sure what you mean by angle vs rotation in this regard, though. If you have a central landscape and side portrait, or similar, then you can use mode 4 to do some creative things - as long as they're one large virtual desktop.
Have you changed the multiple monitor mode in the config file?
I have the same setup as you and really like multiple monitor profile 2. It puts me right at the front of the cab though so I changed the seat position in game. If you're still not happy you can play around with the FOV settings, although I haven't done this.

You could use the Multi Monitor Config, http://www.eurotrucksimulator2.com/multimon_config.php I use it for one single display eyefinity, and have set fov ths way also. You can use uset r_multimon_mode "4" and adjust ingame via console command.
Set in config.cfg file uset r_multimon_mode "4" launch game, open console.

multimon set (insert displayname here) horizontal_fov_override 100
multimon save
I don't know if it works in MP, but since its a default function, it should be so.
There's a tool SCS has made for this, you can find it on the ETS2 website (http://www.eurotrucksimulator2.com/mod_tools.php) and is called the SCS extractor. Just place it in your root folder (not trough your docs, but via steam) open it and don't touch it till out finishes on its own.

The company that made Scania is SCS, and Scania is their 2nd newest game. Their newest is Euro Truck Simulator 2, and it's now their flagship product. So, if you're going to be checking on PC simulators, that's a good one to check out.

It's not bad if you like simulation games. Although, driving around to your various fields/tractor dealerships/markets on a slow tractor or front-loader or combine gets a little boring at times. It's half farming simulator, half "drive slow farm equipment to the other side of the map" simulator. A relaxing game, a la Euro Truck Simulator 2... which is also a great game.
