I would highly recommend that you download v1.6 from Jabo's homepage, as well as patch v1.6.1 which, in his words, "includes the majority of the plugin fixes from Project64 1.7 beta". No crapware with either installer, and for most purposes this will work better than either stock 1.6 or 2.1.
Jabo's final release of Project64 (aka 1.6.1) has proven to be more reliable than 1.6 and 1.7 for me. 2.0 and 2.1 run too fast for me for some reason, so I tried 1.6.1. Still not perfect emulation, obviously, but runs the games I use quite well.
It also doesn't have the annoying adware that comes with 1.6 from the project64 website.
Contrary to what the others are saying, N64 emulation is not a simple matter.
Use Project 64. 1.6.1 preferably. mupen64plus is a great emulator but using it requires a fair bit of savvy. This means getting PJ64 1.6 from the PJ64 website and adding the 1.6.1 plugins from here- http://www.jabosoft.com/articles/114
Jabo's 1.6.1 video plugin has a widescreen hack that works very well with Ocarina of Time\OoT, allowing for fullscreen on a 16:9 monitor without stretching.
Project 64 2.x has broken timings. Very broken timings. The emulator is under development again, but it is currently filled with a lot of WIP stuff.
A controller is highly recommended since MM and OoT feel rather twitchy and janky without analogue movement. An Xbox 360 controller will work well in most cases.
High resolution texture packs are not ideal currently. The upcoming GLideN64 video plugin will support a better method for handling texture packs and it should also make existing video plugins redundant. So if you want to play with texture packs, I recommend waiting. Regardless, they tend to be so-so and have terribly clashing art styles.

It looks like the original Super Smash Bros is on the virtual console, which is pretty neat, I didn't know that. Smash 64 doesn't have all the newer games do, but it's still worth playing, if anything for the novelty of it. To my knowledge they don't have any GameCube games on the Virtual Console but it would be pretty awesome if they did.
It's also easier to emulate on the PC as far as specs go, and it would give you something to do while you're waiting. You can go get Project64 here and the ROM from various ROM sites (I'm not sure if linking to ROMs is allowed here), the biggest problem is finding a control scheme that works for you because the N64 controller had a slew of buttons and whatnot.

It also can't hurt to get Jabo's (one of the former Project 64 dev's) Project 64 1.6.1 patch here. I've heard that this version of Project 64 is better in a lot of ways than the most recent 2.x releases. Haven't really tested it myself for greater compatibility/fewer graphical issues/crashes and whatnot, but it's worth mentioning.

On SSF2 I learned you shouldn't move in the waiting room w/sandbag or desyncs can happen. Also not too sure on latency... that seems to be having problems
I ran into this issue as well. I got the sounds and everything to work properly by applying the Project 64 1.6.1 patch.
You need PJ64 to be installed via installer, otherwise the patch won't know where to install to.
MAME is an arcade machine emulator, not an NES emulator.....
You need an NES emulator for emulating NES emulator for NES ROMs. MAME is an arcade cabinet emulator.

Yes I actually just set mine up yesterday. Download project 64 vers 1.6 it's the best emulator and has xboxone controller plugin configuration. I'll find the link without malware.

It's as good as it gets on Linux at least. Last time I tried it (which was about 2-3 years ago) on Windows I would still say that Project64 1.6 with the various plugins, latest NRage input plugin and updated RDB files were way superior when it came to the emulation. The biggest problem with mupen64plus was the video plugin that had problems with pretty much every game I threw at it. The input plugin was better then what you got in Project64 though just because you can set a deadzone for every button; a (at least more) real Z trigger on the Xbox 360 controller!
2.1 crashed all the time though.
It looks they've really picked up development on both mupen and PJ64 the last months though and we got video plugins in development like GlideN64 that looks really really promising. The future looks bright for N64 emulation.
If you want a trip down nostolgia lane, get an n64 emulator (such as http://www.jabosoft.com/articles/114 ) and download your old games from a place like emuparadise.me. Shouldn't have any issues running them, even at a higher resolution.
You -can- attempt a gamecube/wii emulator (dolphin-emulator.org) but it might be a bit performance heavy for you. Worth a try though, nothing to lose.
Project64 1.6 for N64. This version has proven to be the most reliable for me. You can use the plugins update from that page also, or do some research and choose your own plugins from other sources.
And Retroarch is an excellent UI for many emulators/cores (e.g. nes, snes, genesis, ds, gba, arcade, psx). I would highly recommend starting with Retroarch.
Glad I could help. I hated how hard it was to find any informative posts on what was going on, so I decided to make that post. I edited the OP with this, but here is the version I recommend. One of the devs that left made a patched version of 1.6 that should run better than 2.x anyway.

1.7 was/is pretty much in an indefinite beta state, the (some?) of the developers got a bit greedy, in order to get 1.7 you had to make a "Donation", I forget how much money it was, but it was still fairly ridiculous for a "free" emulator and lasted for years. (I think they stopped doing this when they released pj64 2.0)
