A little pricey but it's wonderful, will scrub info and images for all your games and it even supports native Android games right in the front end. Greatness.

Its a dedicated Android launcher. You can even press the Xbox guide button and it'll bring you back to your game library.
I've found ARC Browser (https://play.google.com/store/apps/details?id=net.floatingpoint.android.arcturus) to be a fantastic app for displaying and launching your emulator games. The price is steep compared to most Android apps, but it does its job extremely well. You can launch ROMs using either Retroarch or standalone emulators.
If you find a few systems you/they like, check out Arc Browser. It puts all your emulators and games in one easy to navigate app with a Netflix like layout.

yes. you're good all the way up to dreamcast with the shield. gamecube runs pretty okay. beyond that you can always emulate on a pc and gamestream to the shield.
this is a great way to access and organize the emulaters you do run natively.
I haven’t played retro games on my shield since I switched to a PC Batocera build, but I always liked the Arc Browser frontend. It’s a decent frontend that still gets occasional updates and has nice little features like video previews and such. I’m not sure how well it handles large libraries but I’ve always like smaller curated collections anyway.

Yop it is the ARC Browser. But it's not only an App to start, it's a whole Launcher, like Nova Launcher andcdo on. This is a bit sub optimal 😐

ARC Browser lets you set this up using any emulator. After setting ARC Browser up, go to Settings -> System -> (system name) -> turn on "Enable as home launcher channel"
Glad you got the Gamecube stuff working! I think the problem you are experiencing with the other games is that the command I provided only works for Dolphin - for other emulators, you'd have to find out if they support command line execution, and if they do, what command you have to use to launch. Some emulators might not support this mechanism - you generally just have to google around to see if they do.
For example, I was able to get Snes9x to work with this format:
START "" "C:\Path\To\snes9x-x64.exe" -fullscreen "C:\Path\To\Game.sfc"
That being said, on my Shield, I only use GameStream to run Gamecube/Wii (Dolphin), PS2 (PCSX2), and 3DS (Citra); these emulators are more demanding from a hardware perspective and/or don't have good Android alternatives. For everything else, I use native Android apps on the Shield itself - either using standalone emulators or through RetroArch. I then use Arc Browser as my interface for all of the non-GameStream apps.

You really need a front end app beyond just retroarch. I use Arc Browser, but there's also Dig and I'm sure others. I use retroarch for some systems, but Arc Browser lets you mix and match what emulator you want to run for each system.
I use the nvidia game controller and remap buttons the way I want for various systems. I've heard good things about the 8BitDo controllers, if you want something closer to SNES.
I believe the one in the video is ARC Browser, a really cool launcher that automatically scans for roms and put it in categories with descriptions and cover art and is compatible with almost any emulator in Android. However if you want something similar for free there is HALauncher, highly customizable and joypad friendly but a little bit more tedious to set it up. Personally I use it both, ARC for games and HALauncher for everything else

I'll share details of my retro gaming / emulation setup, as I think it's pretty much exactly what you're looking for:

I use the Nvidia Shield - it's an Android TV device with enough power to run everything up to and including Dreamcast, plus many GameCube and Wii games, at full speed.
Get either the 2019 Pro model, or the 2017 model if you can still find it as the specs are the same as far as gaming is concerned.
I also highly recommend the ARC Browser frontend, to give you that nice Plex-style feel for browsing ROMs. Paired with RetroArch, it's a killer combination for running your games.

The Retrode 2 is what you'll want here. It makes ROM dumping as easy as plugging the cartridge into the Retrode, plugging the Retrode into your PC (or even your Shield!), then copying a file over.
The base version supports dumping Genesis and SNES cartridges. You'll need to get the additional plugins if you want to dump N64 or Game Boy / GBC / GBA.

Assuming you have an Android phone, [MetaCtrl]'s apps work seamlessly for this purpose. With the app installed on both your phone and the Shield, you can do a two-way sync of your RetroArch folder that will auto-upload any new changes that are made to the cloud, and also auto-sync the cloud folder to your other device(s) at specified intervals.
The one caveat is that the apps don't natively support Android TV, so you'll need to sideload the app onto the Shield yourself. I personally use Aurora Store to keep my sideloaded apps up-to-date.

You can install non-TV apps to the Shield TV from play.google.com on your PC. But, Sixaxis Controller is "not compatible" with the Shield TV. Market Helper fixes that by temporarily fooling the Play Store into thinking it's a Nexus 7: http://codekiem.com/2013/02/13/market-helper/

I know this may not be true to some people, but I don’t think MAME is the best frontend / emulator at all.
I would suggest ARC Browser. It’s $8.99, but you can find the APK online (I bought it, and think you should too).
For the emulator portion, a really good suggestion I used is here (First comment there) that really helped, and I think will help you too. Some of the emulators cost money, but again, you can find the apks online.
