This is manufacturer specific, but Motorola's quick actions to turn on the flashlight (chopping motion twice) and camera (twist your wrist while holding phone normally twice) is so ingrained in my muscle memory after 4 years of use, it's hard to unlearn again. I've looked for ways to recreate them in my new phone and found some promising methods, so I'll be doing that later on.
FooView gives me a sort of S-Pen like extra functionality (except writing using a stylus of course) and then some more. I use the floating window browser to search for anything without going out of the app I'm currently on. Use the iOS like floating bubble thing to custom crop screenshot on the go, and it has the sorely missed Google Now On Tap function lost years ago. The OCR from that is relatively well performing that I'm okay with. There's also scrolling screenshot, as well as robust screen recording function that can save either in mp4 or gif. There are a lot of other features included I think it's better to just go to its store page.
Another app, and this one really helps with using big, tall aspect ratio phones, is Quick Cursor. Can't seem to copy the link on mobile, possibly related to its beta status. But anyway, you swipe from predefined or customized zones from the side of the screen and basically you control a mouse pointer to reach far off sections of your screen.
If you prefer something like iOS pull down top half of the screen instead, there's One Hand Reachability.
Not really a photo editing app, but FooView allows you to select what part of the screen to capture. It can be a little annoying at times, but I keep it installed for just that purpose.

Gestures, OCR, translation, browser, file manager, etc. There are so many other features that it's hard to describe them.
It sits there on the side and when I need it, I use it to take smaller screenshots, or translate text, or copy text in another app. You just drag the circle that stays on your screen over to the place you want to capture and highlight the part you want. It then gives you options to translate, copy, etc. the text. You can also save the section as a picture.
It also has other functions. You can use it to navigate (home, back, recent apps, etc.), trigger shortcuts with gestures, and much more.
Have you tried fooView? You can copy text by dragging the indicator and selecting the part you want to copy. It will translate it too. I've been using it for the past day and I like it so far. It does MUCH more than the above also.
I use an app called Fooview. It might not be ideal, but you can use it to select text, and it uses OCR to read it so you can copy or share it.

There is this app called fooview by a former ES file explorer dev that lets you do this and lots of other things like regional video recorder, crop a number to dial it, crop an address to get directions via Google Maps etc.
A stock option would always be better.
The guy who made the original es file explorer made fooview (which is an all in one app). Fooview's file explorer is available by itself and it's basically es file explorer 2.
While we on this kind of stuff, I recommend fooView instead. It has that feature, plus many many other things it's able to do. It can even do stealth screenshots (can also bypass protected apps for screenshots if you use root)
I agree with you, don't get me wrong.
All I'm saying is that we shouldn't rely on gadgets to use phones comfortably.
But I also want my phone to be comfy enough to put wherever I want whenever I need it to, and those things are bulky as hell sometimes. The thing is that, whether you like it or not, phones will be slim, because no one wants to carry a 1.5 inch thick brick anymore. And you could only carry those in your pants pockets, try putting that thing inside your jacket or tux, you'd be sore after an hour.
Anyways, onto what OP asked for.
I've read that Fooview is the go-to app for one-handed operations, but then again, that's for handling the phone itself, OP mentioned certain apps, and yes, those aren't meant to be used with one hand sadly.

Just drag the floating icon to the text you want to copy. If it's not text but photo, choose the area and it will use OCR to read the text.
If you don't enjoy having floating icon on the screen all the time, you can easily enable or disable it from quick tiles in notification area or choose in which apps it should be completely hidden.

fooView is pretty handy for that. Not only can it attempt to do a regular text select, it can OCR text from non-selectable text (images, screenshots etc), translate it, allow you to take screenshot snippets and reverse-image search them or share it directly to another app. Its an underrated utility that's got a ton of useful features.

First of all, you need a little bit of patience. It’s a very feature packed app, which offers tons of options and customizability. You can use other feature of the app too, but I mainly used it for „smart select“.
This apps „smart select“ is even faster and offer much more stuff. There will be a small floating ring/icon on your screen edge. You can adjust its position and also how it looks. Tap & hold the icon, move it over your screen and you’ll see a crosshairs. Once you stop somewhere the color of the crosshairs changes from red to yellow. Now you can adjust the area which will be selected. Now when you release your finger you’ll see a floating menu above the screen which shows you immediately the selected area as a screenshot, as selectable text and also often gets text which is not visible. Knida off-topic but related: if you have an Android device and want to do the same, check out FooView. You just have to drag the floating circle and point to an existing text field, or draw a rectangle on an area like in the demo and it will extract the text. You can also save the rectangle as a screenshot, share it, Google reverse-image search it, translate the text and more!
Anyone tried Fooview (free)?
Its got gestures, a clipboard manager, file browser, internet browser and too many other options. There are a lot of options on how to set it up, but once you have it as you like, it replaces many other apps.

You can also drag to select parts of your screen to share as a screenshot, or select text and perform translation or ocr.
It can even perform tasks like Tasker can, but just not as good as tasker does.
Fooview is more than screen translation but does that perfectly. It uses Google translate & requires internet connection. I've used it since its launch. The most useful feature is copy or share the un/translated words/sentences to other apps, in my opinion.

Hmm, I'm also not using universal copy cuz it misbehaves sometime in my phone;you can try fooview, it's hard to master but does the job of many apps in one.You have to do some customization at startup but after that it can do multiple tasks (including copy feature with menu)
I use fooView for this. Just point the floating circle at the popup and it extracts all text. You can then copy it to the clipboard, or share it, Google it etc. It's a super handy tool that I use all the time with multiple apps that have limitations like this.
Yes, there's a app which is extremely powerful and even free, which can copy any text from anywhere all the time. Even if it is not text which written and just a picture if text it can even get that. It's much faster than any other app too.

It has so many awesome features, I don't even know where to begin 😂️ just install and see yourself. I personally set it to be invisible and just on a specific area on the right edge of my screen. I can swipe across the area and get a red Cross which let's me select anything I want. You can even take a screenshot of a specific area too.

To answer your question: there is an app which is much faster and much more powerful than the S-Pen feature to copy any text. The app is fooView. It's a very unique app which offers tons of feature, I personally use the feature to select any text and make it selectable just like the S-Pen button pressed. But furthermore it can also ocr instantly and text and the same time. It even gives you tons of options what to do with the text or picture. You can even reverse picture search instantly.

Fooview. It takes some getting used to, but it is a Jack of most trades and master of many, if you will. The thing I use the most are:

Ah, not nav bar, a floating navigation dock: small thingy on the side/wherever that can be tapped, swiped, hold, double tapped, etc and bind actions/shortcuts to these. Like the fooview that I currently use. It is not as good as the EMUI one in the basic dock functions, but can be more customizable and has lot more features.
Navigation bar is just stupid, especially on a OLED display.

Fooview You must have never heard of this app. In the beginning, it maybe difficult to use but once you get used to it, it will be hard for you to uninstall. Love this app!
The pen doesn't work on non-Wacom screens

I agree here too, people can't really understand the S-Pen and what it offers. I think only die-hard note user know.
I really miss the Screen off memo and the precision of the S-Pen tip. Everything else can already be accomplished.

It's hard to understand with just text, here's a video recording of how it works. In the video you see how I invoke the red cursor by swiping the right edge (can be customized). If I hover over a picture or a text field then it shows a rectangle. As you see I first get the text, even if it's not selectable, just like the pressed S-Pen selection of text. Then I hover over the text which is even in a video. It can do the same with pictures. Once the rectangle is set you get lot of options, as you can see here. In this picture you see what the buttons do. Below you have the same options but not for the text, it's for the picture you just screenshoted.
I just highlight the screenshot and OCR stuff. The app offer gestures, file explorer, mini floating Browser and much more. Give it a try 😊

I just posted a comment about this app. It does many things but one of the most useful is the clipboard. And it is a small icon always on the screen, no need to long press paste. Just "show clipboard" select the little icon of what you copied (has a history and can also copy files/images). Then if is text, a little red box will appear in every text field on the screen and you choose which one you want to paste it in.
