If you feel overwhelmed (and who could blame you?), my best advice is to start small and work your way up. Try changing "Endless Bandits" so that it's just 1 bandit alive at a time, see if it works like you expect, and then take a small step from there. With small steps, you know what to undo if one goes awry.

Your pc doesn’t need wifi, as long as you have Wi-Fi in the house. It just needs to be connected to the same network as the headset. But if you did want wifi on the PC and you have s free pci slot this adapter is pretty decent and gets me speeds just as fast as Ethernet does though you only get max speed if your Wi-Fi router supports Wi-Fi 6 (ax)

Buying a pre built pc is fine, the one thing I haven’t seen mentioned in the comments is that the monitor doesn’t have a Display port (DP) connection. DP is much better quality than HDMI. these will help protect the controller, probably won’t do much for your finger but these grips are the best. They have clear covers for the ring part of the controller and They’re exactly like the index controller knuckles because it extends the controller down a little to allow the tension string to pass through and function just like them
Not exactly a tip for technique, but these are the best grips you will find. I like them better than the index grips honestly, and when I got my index I swapped out the tension strings lol.
Aw, I hope you get the pairing issue sorted then! If you ever decide to get a cable, I wouldn't bother with the over-expensive $80 Oculus ones. You can get super cheap ones on Amazon that work exactly the same for like $10 - $15.
Just here to recommend using a dedicated wifi 6 router, as in an extra router that nothing but your headset connects to and your pc wires directly to, such as archer ax50

oh yeah. virtual desktop is only wireless. basically if possible to connect your pc to ethernet do that and use mobile hotspot on it and connect only the quest to that. You may have to tinker with the bitrate but i'd advise to turn off auto adjustment of it (in the pc client settings). It has an option called "sliced encoding" which reduces latency by "slicing" each frame into pieces, this way it can begin to decode before a full frame even finishes encoding. I dont think your internet has to be anything crazy but, if you dont have a closeby ethernet connection you can get a moca adapter and run a coax cable from the closest place you have it. it provides an ethernet port. your internet provider needs to support it (xfinity does) and run of coax to be able to. The important part of the connection is not speed, but traffic. You do need decent speed but the quest 2 tops out around 300 anyways. You want a router that you can setup where only the quest and pc connect to it, with the pc being ethernet. you can run this router off the moca adapter. i used this one, wifi 6 is ideal: TP-Link ArcherAX10 Wi-Fi 6 Router the archer 50 would be even better but this one works great for me

I used both of these any time I played wired and they always worked, vs the official cable that after a month refused to register as usb 3.0 and stopped at ~330mbps. The other two lasted me like 6 months and I still have both
get a usb 3 link cord, i got this one from KRX after my official cord broke and it worked exactly the same as the official one.
Virtual desktop is by far the best in my opinion and I've tried link cable, with and without tweaks from debug tool, I've tried airline, alvr, amd relive vr, and IVRY. Virtual desktop is worth $20, in my case but different hardware can act different. I use a dedicated wifi 6 router for the quest and pc only Archer 10 with a Moca box supplying the wifi moca device (xfinity internet)

Had to buy NordVPN ahaha, connected to US server bought the game and now it is showing in ‘not installed’ folder. I was able to install from there.
I couldn’t find similar threads or pages online that had the same issue. So I don’t know if it is just recent and an Australian thing or not but seems a VPN is a workaround atm
I have recently tried to download mods for NOMAD in my new Oculus Quest 2. I downloaded the mods I wanted from Nexusmods.com, extracted them, and then connected the USB cable that came with my Quest 2 in the box to my microsoft laptop. I pressed the Allow files button in my VR and I then created the mods folder under Android>Data>Com.warpfrop and put my exctracted mod folders into the mods file. After that I entered the game and none of my mods are there. I've tried to use mods that were updated and made today and mods that were made a month ago and everytime I go into the game they are not. I'm not sure what the problem is.
Oculus charges quite a bit for their official Link cable, but to be honest you can get the same outcome wit ha generic brand cable. For example I bought this one for $12 (currently out of stock) rather than Oculus $50 link cable, or whatever it is priced at nowadays.

I believe you need to have Android File Transfer installed as well on your mac. It worked on my 2016 Macbook Pro, I think the Quest 2 uses Android which is why you need this.

It's likely the CPU then. B&S is very CPU-heavy so any kind of CPU issues might get aggravated by playing it. You can use something like SpeedFan or CoreTemp to check CPU temperature, cooling fan speed as well as some other metrics. And if your PC is pre-built and is still under warranty, it might make sense to contact your vendor's tech support.
Interesting... So it seems that this is a GPU-related issue after all. GPU activity is spiking while CPU load stays relatively the same... I'll try to look for a possible cause but in the mean time, can you please check a couple more things?
Firstly, can you confirm that your GPU frequency? For an NVidia GPU, you are likely to be able to check that in the NVidia control panel.
Secondly, can you check the GPU temperature while in-game? You might have to install a 3rd party tool for that, like hwinfo or Speedfan.
There is a mod (the Mjolnir mod). This is a rather buggy mod and it can cause the game to stop from loading up alltogether. If you have this mod, you should download the following tool and remove the mod: http://www.purgeie.com/delinv/dldelinv.htm
The folder to remove is in the following filepath: \SteamLibrary\steamapps\common\Blade & Sorcery\BladeAndSorcery_Data\StreamingAssets
There should be a folder here (mjolnir 3.0 or something similar). Use the tool you just downloaded to select the entire folder of the mjolnir mod and then reinstall the game

Your troubleshooting sounds really good and thorough so I am not too sure where you could go next as it seems you have tried everything I could think of. But are you really sure it is not the Airlink? It is definitely the wild card in your setup, with many people including myself who report performance issues using it for VR (why, I don't really know, didn't look too much into it). But if you Link cable is worse, then there is not much options for you...
I just saw this yesterday where a guy had Link cable issues with the official cable but a cheapo one worked... If you wanna risk a few bucks and try it, maybe it could work? Worst case you simply send it back to Amazon for a refund. This was the one I got and worked fine. It's $20 right now from other vendors but I had gotten mine for $10 when Amazon themselves had them in stock, so if you poke around Amazon you might find another seller selling it cheaper and the specs the same.

If you can use a link cable, I bought this one on Amazon and it works perfect. I play on a laptop with this cheap knockoff cable and it works very great. It is disappointing that virtual desktop is struggling with the new update, but you don't have to buy a $90 oculus link cable to play.
