Here's what I do when I need to transpose music in garageband. First, put the track into garageband (if you don't know how to do that, basically grab the instrumental by copying the youtube url of the song you want...google "youtube to mp3", and paste the link into any of the sites that pop up. I like the first one. Then import that into itunes, drag the file onto your desktop, open garageband, make a new track for mic input/audio recording (NOT the piano one that's the default first track), and literally drag the icon of the song from your desktop to the new track you made. Now it's in garageband). To transpose, open up all the edit tools (view, show smart controls) at the bottom at click "output". Hover over one of the buttons on the left...hover on the right to get all of the options to come up. You're looking for "pitch". Open it. See where it has semitones? If that's at 0, it'll be normal pitch. Each semitone you go up or down, it'll shift it up or down respectively one key. If you go too much, though, it'll start to sound funny. (If you have an older version of garageband, the process is the same except there isn't a semitone clicker...you have to manually input +100 or -100 each semitone you want it to go up or down). Hope this helps...it sounds like the key you want might be a bit much for this process, but it's worth a try.
You can use the onscreen keyboard to type in notes, if you don't have an external MIDI keyboard.
But you can get MIDI USB keyboards for cheap. That'll make it so much easier to use GarageBand.

I’ve been recording since the 80s ( I’m an old fart) and I’m always surprised at how good the sound is from the iPhone earbud microphone. As someone else has mentioned, much of it is technique. If you watch most pro singers, they alter the distance between their mouth and the microphone when performing. This kind of technique will help. The mic on the earbuds moves around a lot. This will create issues for you. Tape it to something solid so that it doesn’t move around so much. With a traditional type mic you would use a pop shield go stop certain “plosive” sounds. Here’s a link to one you could possibly use if you taped your earbud mic to something solid.
You may also want a “ de-esser” app.

Simple. GarageBand is an audio editing software, and can only import certain audio files. It seems that you're trying to import a video file, which GarageBand can't do. You can easily convert the video (mp4) to audio (mp3) here: http://www.zamzar.com/ I tested Zamzar to make sure it wasn't a spam or virus download site, and it is clean (just don't click on any of the ads). You'd actually want Loopback (https://rogueamoeba.com/loopback/) to do this, rather than Audio Hijack. But as you noted, some inexpensive hardware may well be the best solution here.
It takes a little bit of setup, but you can use QuickTime (or Command + Shift + 5) in conjunction with Soundflower and a Multi-Output Device in Audio MIDI Setup to do screen recording with system audio.
According to the GarageBand web page (https://www.apple.com/mac/garageband/), the latest version requires MacOS Big Sur. Here is the MacOS Big Sur compatibility list: https://support.apple.com/en-us/HT211238
If you pick something from that list, it should work. But be careful picking the oldest machines there, as Apple may drop compatibility for them in the next version, which will make your investment obsolescent.

I have use musescore to convert midi arrangements to tabs. It might take a little work, its very basic and i have had to rearrange tabs to make the fingering feasible bit its definitely workable
Even Bluetooth 5.0 with the lowest latency codecs being used will have too much latency when doing anything other than listening to music or watching streaming TV. I have BT headphones with supposedly low latency and cannot use GarageBand with them if I'm recording. However, I find I can use them if I'm simply editing or adjusting eq/presets/plugins/etc.
Also, I'm assuming your IPhone/iPad doesn't have a headphone jack. There are tons of adapters you can get on Amazon that low you to charge and plug in a 3.5mm audio cable (headphone cable) into your device.

That should work but I personally do exactly what you’re looking to do with this cable and it works perfectly in GarageBand on my iPad. Rather than buying an extension and adapter cable you just need the one and it’s very clean and simple.
Edit: It’s lightening straight to MIDI.

The “front two interface channels” are two separate inputs for two separate instruments. You need to plug your keyboard into one of those using a 1/4” instrument cable, and then plug the scarlet into your phone using a USB A to B cable (aka a printer cable). Then you need a usb converter since you’re using an iPhone.

I bought a £2 from Tesco the other day just on the off chance that it would work for exactly this reason and it does. They were selling them off reduced to clear and I couldn’t find any online that stated anything about accepting an audio input on a 3.5mm jack.

Radiohead, Fiona Apple, the National, Aphex Twin etc. just tying go give it my best shot so it doesn’t sound super muffled and raw.
There’s a ton of mics on amazon for about $50 - ideally I would just like to buy one, put it on the piano and use line in or usb through my Mac or iPhone

Haven’t try anything myself so far, but looking into some Steinberg UR series or Behringer UM2 which is dirt cheap but with very good owner reviews.
I would go for minimum 500gb storage, 8gb ram, i5 or better processor. Unless you want to move into more professional recording dont listen to the garage band naysayers. If you are just jamming with mics hooked up and having fun, garage band is fine. I did some brief sleuthing and i found probably the mac mini i would get in your shoes, but obviously i dont know your budget.
