Use this app
Also, I'm not using stock android 11, I'm using a custom rom called paranoid android ruby beta 2
double tap to wake can't be enabled, if could use apps like wave up which makes use of your proximity sensor and wakes up phone without you even touching it. You can change the number of waves before it wakes up.
I use this for videos Manual Camera DSLR Lite . You can change the shutter speed and ISO while shooting. Plus Videos come out pretty crisp too.
Sample Video that I recorded using it: YT Video link
I use Sony's Audio Recorder. It's great, it lets you change the quality and it has stereo and mono recording. The only thing missing is the transcript feature. I'll post the link, give it a try.

No, but a really good replacement is this app called… well… Screen Recorder. It's got a really good design following the Material Design 2.0. You should check it out.

It's actually a lottery whether a Mi phone gets the IMX586 sensor or a IMX582.
They're pretty much the same sensor, except that the IMX586 can do 4k60 vids that our Snapdragon 665 chipset doesn't seem able to even handle.
Mine seems to have an IMX582 (app), but, Google Camera installed, it performs the same as a couple of friends Mi 9 Lite and actual A3's IMX586, so, yeah, never felt like I'm missing anything, since they also can't do 4k60 and I go down to 720p240 when recording slowmo anyhow.
