Project: Redfield is a survival, miltiplayer, sandbox, fps that aims to be very realistic and unforgiving. It's set on a fictitious island outside of China's southern coast. The island is filled with vast jungles, huge mountains and detailed cities. The map is huge and completely open for players to discover every part however they want. Every house will be completely enter able, featuring full interiors.
Gameplay is focused on survival and many different aspects of it is being worked on and planned. It's going to be completely open and up to each player to decide how to survive and play the game, we won't have any rules that prevents you from doing what ever you feel like. We want our players to shape the game and not restrict it to just our tiny development team.Right now we can't reveal some of the keywords describing the game as we simply feel like these needs to be kept private for a while longer due to competition.
More information can be found on our newly launched website www.projectredfield.com or http://www.indiedb.com/games/project-redfield
Graphics are a bit dated, but Wurm Unlimited is an absolute blast with a few friends. Start from nothing, with no skills, and work the world slowly into a small town in the wilderness. Has one of the best sense of progression, albeit a bit slow sometimes
Project Zomboid - matches your description almost perfectly, it's in a post apocalyptic where you start sometime after the whole world has become zombies. It is a hard game, so if you want to play a demo before you buy they have a free download on their website - http://projectzomboid.com/blog/buy-download/ Hope this is what you were looking for.
When you say etc. are you factoring in games like Rust, ARK, or 7 days to die? Seems like you're looking for a game with a solid single player too, so I'll ignore the usual multiplayer steam hits.
I feel it's a contest between The Forest and Subnautica.
Personally, I'm a HUGE Subnautica fan.
They have a Developer Trello which is updated in real time as they work on stuff.
It's also very polished, and extremely immersive.
They have storyline enhancing webpages for every update.
I could go on and on about their dev team, but the game is solid and unique.
The Forest has such an amazing atmosphere, and is really a beautiful experience for a couple of hours.
Horrible AI and weird FOV make it hard for me to really enjoy, but your first "playthrough" is exciting as hell.
Consider 7 days to die as well. Very good game.
This may be what you're looking for. https://www.greenmangaming.com/games/the-black-death-overlord-overlord-2-bundle-pc/
I haven't played The Black Death since very very early on and only checked in once or twice since release. It was super early then but the new screenshots seem to be leaps and bounds from what it use to be. *Edit - For $3 its probably worth it.
http://www.salemthegame.com/how to get the game itself and create an account, http://forum.salemthegame.com/viewtopic.php?f=11&t=7681&sid=0d376ff40dd68703ddb3f1aa9fd53938 for a custom launcher should you choose to do so. :) It is a pretty fun game. And yes, I've had characters die and still play.
Here's a listing for it on Amazon, though the game itself predates Amazon and has been long out of print. Avalon Hill was sold to WotC and plundered. I suspect eBay or various old wargame sites will have copies.
As board games go, we're not talking grand strategy or elaborate planning. The rules are simple and play pretty quickly. I suggest compensating with more beer.

:) Much information can be found on indieDB ( http://www.indiedb.com/games/novus-inceptio/news ). It is currently not possible public test - everything is prepared in the fall 2015, when it will be launched on Steam Early Access.
Rebuild 3: https://play.google.com/store/apps/details?id=air.com.sarahnorthway.rebuild3&hl=de
Sort of a mix between a survival & a 4X management game. It's not as casual as it looks. Pretty decent, but not one of my favourites.
Kenshi! http://www.indiedb.com/games/kenshi
I think that the description fits with yours: "A free-roaming squad based RPG. Focusing on open-ended gameplay features rather than a linear story. Be a trader, a thief, a rebel, a mercenary, a business owner, a doctor, a bandit... the list goes on."
If you need any other reason to check out 7 days to die, watch the most recent alpha trailer: http://7daystodie.com/new-alpha-12-preview-video/
Minibikes? Blocks go flying in explosions? Beautiful snow? Apparently rain physics, where rain will make a pool of water inside the holes of a cinder block? And chopping down a tree, tree falls on zombie, zombie is smashed and dies? GOTY.
I think this is probably a bit of a longshot but its worth mentioning https://www.play.eco/
The idea behind the game definitely seems to be about creating a living ecosystem, but I havent played it to know whether there are intelligent animals or not :)
We have a discussion of the game Survive - Wilderness Survival in the latest episode of our podcast. Survival gaming is not our usual genre, but I can only find that this particular game has been mentioned here once, so I thought it would be worth sharing.
I checked it out, and it's very detailed! Unfortunately the UI and translation could really use more work.
But! I found another game in the similar tab.
Buried Town
It's pretty damn good! Kinda like roguelike this-war-of-mine-lite with zombies as the plague.
Give it a shot!
