Tears not needed ... try vise grip (locking) pliers . You can get them at any home or hardware store.
Once gripped on the outside of the screw head you should have sufficient torque to unseat the most stubborn screw. You could also use the pliers to put the screw back in if need be, until you get a replacement.

Backend software development. I use vagrant to recreate my remote customer server environments. As an example, I have a customer that uses three boxes to deploy their web-app: an ubuntu box with nginx and separate boxes for their database and caching systems. I use Vagrant to recreate this setup on my Mac, so for just that one client I'll have 3 ubuntu server VM's live at once.
I also have services that I run for hobbies (price-checkers, a podcast feed duplicator, local git server). These services store their data on my NAS (mounted to the VM's through NFS). Eventually I'll push these to a dedicated box in my office. But for now they run as a lightly provisioned VM on my Mac.
The Mac Mini handles all this with aplomb. I have it hooked to a kill-a-watt right now and will post power-use statistics when I have enough data to be meaningful.

I use an Anker dock which has two HDMI ports. I run a dual monitor set up with a third portable monitor for shits and giggles… I’ll have to double check the specs but I think you should be able to pump out 4k on all but don’t quote me…

Otherwise, the recommendation for a DAC will work as well. I have had good experiences with a Schiit Modi 3, Topping D30, Grace SDAC, and Grace SDAC Balanced. All of them are right around the $100 mark (with the SDAC Balanced being the outlier), and all will follow the same connectivity pattern:

The GPU performance of the M1 isn't that great, so if you are running a lot of graphically demanding apps, then I'm not so sure it's the right fit.
As for window management.. I think that is just part of the learning curve of switching to macOS from Windows. Mac does some things better, but is missing quite a few things that people take for granted on Windows. There are some third-party apps you can use that might make it a bit easier. I personally use Rectangle which allows you to "snap" windows to the edges of the screen like you can in Windows 10. No clue why Apple doesn't have something like that by default..
I can give you the C code I had to modify if you want to install it. By default, Seafile cannot be compiled on OSX, but with minor changes, I was able to. The prerequisites can be installed with homebrew (https://brew.sh/). I hope you are good with the command line. Its not easy for the uninitiated.

I use AnyDesk, which is free for personal use, to remote into my Mac Pro server. It works well enough with the occasional bit of mouse lag depending on quality and network speed.
Like many have said, the only way to do dual monitors on the M1 mini is to do one monitor in the HDMI port and the second in the Thunderbolt 4 port. I've tried myself to do multiple ports on Thunderbolt port and all have failed (This includes a powered docking station that connects via USBC). If you are wanting to stay on display port for the monitors I highly recommend these cables:

So I have found a product that, at least for now, is working. Arrived today, paired it with the original DP cable from my monitor and it finally works. It takes like 10-15 secs for the monitor to show up after I press the power button of the Mac but it's fine. :)

I just found out that I was wrong. After reading some more, it seemed like my initial conclusion was incorrect. I rebooted my Mini and used my existing hub and it worked!

IFixit has their upgrade kit for $26, but I found this one on Amazon for $9 and it did the job.
Definitely go with the SSD *before* upgrading the RAM. The speed difference is night and day. I followed the step-by-step installation instructions on iFixit. It's not a difficult install, just be sure to read through all the instructions AND comments BEFORE opening the device, so you know where to use the most care. I bought this installation toolkit off Amazon – it's much cheaper than the $40 kits iFixit and OWC are selling.

I haven't heard the fans a single time so far. So far I'm really happy with the mini. I got myself 32GB of RAM for self installation but didn't get around to do it yet and still, the mini is a little powerful beast with it's 8GB of RAM. No loading times, no stutters or anything along those lines. It's a solid device and I'm really happy I got it. The only thing I will upgrade is a mac mini stand (preferable the one that sits right under it) for ports on the front.
Get i7, the storage can be solved later with NAS or external HDD SSD, the processor can not be solved the same way.

You can try using a dummy hdmi display device, they are basically dongles that plug into hdmi and tell your computer that they are a monitor with a specific resolution and frequency. I used one with my 2018 Mac mini to enable GPU acceleration for Apple Remote Desktop in a headless setup. I think this is the one I have.

I can't comment on video viewing on these monitors, it's all work for me. I have a LG OLED for watching content and it blows anything I have seen out of the water.
If I was buying monitors I would probably go for 4K 32-inch. There are some really cheap decent 4K monitors these days. this one is crazy cheap and decent, just the stand sucks.
Probably best to get monitors that support HiDPI if you have a M1 Mac Mini as some people with 1440p monitors have issues with font rendering. I have 2 x 27" 1440p monitors hooked up to my M1 mini and have zero issues, so it might just be some monitors I have no idea.

And finally Audio, I have tried many different speaker setups over the years and I won't use Bluetooth as the quality is way too low. I finally found my perfect setup recently being a Topping MX5 DAC/Amp and a pair of nice KEF Q300 unpowered speakers which I got second-hand.
Very nice. Another post is asking about such things too. This is what I used to cool my 2018 mini. Like you I found putting it on top of the mini works best. I also plug the usb plug into an external power supply. No reason to add heat inside the mini to power the fan. ;)
I bought this fan a while ago for my 2018 mini. I don't plug it into the mini for power though, I use an external USB power source. It reduces the temp a fair amount. From too hot to touch to reasonable. Sorry I don't have the degrees of difference, but it's quite a bit more than one or two.
I've tried setting it both on top, and under the mini. On top seems to work the best.
I found that I do have to clean it periodically.
I use the Sabrent 2-Port USB Type-C KVM Switch to switch between my work PC and my Mac Mini M1. One USB-C cable to each computer, and that's the only connection to them (well, power too).
Works great, but as I don't need the two Power Delivery outputs, they're kind of wasted (they don't work as inputs, although I use one of them to charge my wireless mouse), and this means I need a separate USB-hub to connect speakers, mic, webcam, etc. I do have the wireless Logi mouse and keyboard that others have mentioned in this thread, but as they are connected via one Unifying receiver connected to the KVM switch, I don't need to switch on the mouse and keyboard; they just follow along with the KVM master switch.

The only way to see the actual speed is to copy one single large file like a movie and check the speed. Copying a lot of smaller files will take longer and the speed will vary greatly.

Both are rock solid, never had any issues with disconnects.

I think the display smoothing helped with my similar issue but it isn't as crisp as this monitor was with the Win7 box the Mini replaced.
If you’re in Catalina, you need to go to the menu in disk utility I forget where, I think it’s view and show all devices. I think this is why. They changed it and it’s quite annoying.

That’s kind of what I was thinking, the iPad as the main device to carry around and use, then the Mac Mini for when extra power is needed for working on stuff. Would you say a standalone monitor is needed for the Mini or would the iPad serve as the primary display?

Mac Mini has the power adapter built in and accepts AC power. So I doubt it can be powered by a battery directly, without some kind of inverter/UPS setup.
Where are you planning to work where you have access to a monitor but not AC power? And wouldn't you need to power the monitor as well? In which case, a UPS sounds like what you need, but not something I'd recommend carrying with you.
If you do need it though, look for something like the following (not recommending this, I have no experience with such products, just an example):
I've got several of these KYY 4K displays that I use with my Macbook and Thinkpad on the road. Image quality and pixel density is decent. They really need a case though.
I use an Anker USB 3.0 Hub (7 ports plus 3 charging) for all of my nonsense. I plug that into the Mini itself though. Bam. PORTS. I use audio interfaces - headphone DAC, webcam, drives, etc. If you want that many ports - make sure you get something with power. I would just recommend investing in a proper Thunderbolt 3 dock in that case like the Caldigit TS3 + like I mentioned up above.
I picked up a used hub on ebay for $16 compared to the price at the link.

Put them in raid 1 and you’ve got plenty of redundancy, if not version protection
I picked up the Qwiizlab UH25 Max. It has an nvme slot and 2.5" sdd slot. I haven't messed with those yet - but what I do like is that it does an hdmi and displayport out - so you can easily have a second monitor.
You can do HDMI out of the Mini, dipslayport or HDMI from the dock for a separate distinct screen - or you can hook up all of them - but two will be mirrored.
I brought my caldigit TS3 plus to work. A fine Dock/Hub. This UH25 Max seems alright.
Cheapest solution would be to use something like Teamviewer to remote control the Mac... as long as it comes up with internet access you could just jump in and control it quickly for what you needed to do.
Failing that I've used an OTG adapter and a small capture device before with a capture app to just get a box up on the network so I can either SSH or Teamviewer into it. Latency isn't great but it does the job in a pinch.
