It sounds like what you like about the game is the way that you unlock new knowledge. I think this type of design slowly becoming it's own genre, a sort of Metroidvania where you don't get new tools or information, just a deeper understanding of the world of the game and the rules of the universe.
If your looking for a game with a similar structure based on discovery, you may want to check out Toki Tori 2. Don't let the cute graphics throw you off, this is a hardcore puzzle game that does not hold your hand. It is a 2d puzzle platformer but, like Outer Wilds, there are no new abilities or equipment to find, the only thing that advances you is your knowledge of how the world works. The only downside is that it does not have much in the way of plot.
Also, Antichamber. Again, not much in the way of hand-holding or world-building. Just a huge, non-euclidean maze for you to find your way around. This game does actually have a few tools for you to pick up, but figuring out exactly what each one does is half the fun.
I think I bought the pack here, it was a lot cheaper to buy this than print them individually. There are probably others floating around out there but this is where I found mine
this is it on google play. But if you're on IOS just type CapCut into the appstore. That's how I got it. Wouldn't recommend using it for stuff other than the one zoom effect
Weird, controller problems with Epic aren't uncommon but I've bever heard of mouse problems. If you have a different mouse around to try that's worth a shot. I did find something that might work as a workaround though. You can download autohotkey and make a script that inverts your x and y coordinates on your mouse and just activate the hotkey when you launch the game. I found a forum post with someone who wanted to invert their mouse coordinates. If you're willing to do some work for it the game has really good payoff, it's amazing. Hopefully your issues get fixed or you can at least play with a controller.
I've been able to use DS4Windows with Outer Wilds as follow:

I would try installing HWMonitor, and keeping an eye on temperatures. Also try some of the developer's suggestions in that support thread, like running in borderless window mode, and reducing any overclocks applied.
Also, after recovering from a crash, check Event Viewer to see if there might be something else contributing to the issue.
What it took for me was downloading DS4Windows v2.1.18 and having it read as an Xbox controller. It appears in game as an XBox One pad, and you can change the buttons to read as PS4 symbols.
I ran the game on a GTX 670 so you're more than fine. Having a laptop you could be running into issues with thermal throttling. How hot are your CPU and GPU getting while playing? (Software like HWMonitor can tell you)
