I'm incredibly biased but I have to say you should hit the the 17th if you want a calm place that isn't too touristy and in which you'll feel like a real Parisian for the time you'll be staying. This will explain it better than I can, and the only downside I can see (that isn't mentioned in the link) is that to move around in the transit, you'll probably have to take Line 13, which, like its number suggests, is the line of the devil: in times of rush hour and sometimes even throughout the whole day it can be very crowded, not ideal if you're carrying bags or luggage.
Well, if you want to see clubbing and high end spot, you can go on Les Champs Élysés at night.
If you just want to look at the night life, La Butte Aux Cailles is pretty nice, and also La Rue Mouffetard, from Place Monge to Les Gobelins.

Meh, I'd avoid the RER if it's your first time alone in Paris and you're not super comfortable with the language. I'd either get a Uber or a prepaid share cab ride, like WeCab. You'll pay about 30 to 35€ for the ride, that's just a 15€ extra from a train ride for you and your friend, and you'll have a way more relaxing experience.
Similarly, for transportation and directions I like to use CityMapper they have the most detailed trip information I've seen anywhere. They also have an awesome mobile app.

GREAT food...nice parisian unpretentious atmosphere. Really the focus is on the food and a calm/warm atmosphere. I think it's owned by a husband/wife who are attentive and kind. I live in Brooklyn and wish I could transport Le Petit Pontoise here.
I'd reach out to au port salut. We had our wedding dinner there and it was great, they had a guitar player that came out occassionally but they made sure he was there for the wedding party. It's not super wild or anything, but was laid back, food was INCREDIBLE and the staff was super friendly, they would probably work with you on whatever you want within reason.
As tourist, I wold prefer to stay as close as possible to the city center. Stay at Montmartre would be a good idea, it's more touristy area with great nightlife experiences. I stayed at 2 bedrooms short term apartment in the Montmartre area, and rent it through these site

Be aware about tourist traps and pickpockets.
Instead of staying in a hotel, you rent out people's apartments while they are away. You email them through the website, pay the money, arrange a time and place to pick up the keys and then live in their flat for however long you agreed. It's so much better than a hotel and cheaper - the charge is for the room not per person, so you can split the cost between you.

Place du Tertre near Sacré Coeur has some artists set up in the square that do some neat stuff. It's mostly centered around paris landmarks, but it's much more original than the stuff you find in the stalls on the left bank. If my memory serves me, there was a guy there that hat sets of postage stam sized watercolors already matted for around 30 Euros that I almost bought.

Velib are okish. Not enough gears for long distance but ok for small one in Paris. You can take a card for the day and then change bike between the different places. You can use this app to find a bike or to know where to drop the one you are using, it's crashing less than the official one...

I often go to the "Daily Monop'" that is now here on the rue des Archives (Google Street View photo is old, taken just before they opened), because I like the neighborhood. It's a sort of hybrid café/supermarket, I generally have lunch there but it also works for a midday snack or just a drink. The flat tables are quite convenient to work, and it's not too busy on weekdays. They don't have Wifi (I tether on my cell phone), but there are plenty of open Wifis around. Lack of available power sockets may be an issue, though.
The "Pomme de Pain" chain is also generally a good place to go, for lunch or for a snack.
I went to this shop a number of times, and they have an amazing number of different kinds of bowls, plates, glasses, cutlery and that sort of things. Generally inexpensive, but not bad quality either.

I ended up opting for the hotel we stayed at last time. We loved the location and the hotel was small but really nice/modern.
For our dates Oct 3-8th we got 116 EUR per night. Ive noticed the hotel rates continue to fluctuate and once they got this low, I bit. Currently, for the same dates the rates are $275ish per night if you book through the booking companies, but if you go directly to the hotel, the classic room is still the same rate we got - 116 EUR per night.
I second the crepes sentiment but my favorite after trying 5 on that street (I'm some what of a crepe junkie) is " Le Petit Morbihan . It's towards the end of rue d'odessa if you're walking away from Gaumont.
The 'menu' is €15 euros which includes: dinner and dessert crepes, a small pitcher of cider, and an espresso. The espresso is not the greatest but the rest is phenomenal - especially for the price!
Parisian here. Well 300€ is a small budget but try with Airbnb, there is a chance you find something. For safety: I would say that Paris is quite a safe city, as long as you don't provoke people in the street. But yeah, just be careful in the crowded zones such as the Eiffel Tower and Trocadero or even the Champs Elysées when romanian people (pregnant women or kids) come to you and tell you to give them money or try to touch you in any way. For hotel 300€ is probably (most certainly) not enough, it will be a crap hotel and yeah, hotels can be as crap as you can imagine.

Try N26 for an everyday bank. However It uses a DE IBAN so some people will refuse to transfer on it, but it is fast to open and use.
Since it uses IBAN you can just transfer from your other account.
I am from the UK, yes. My card was protected by a PIN, so they couldn't do too much damage. However, it was also a contactless card, so upto €20 they just had to tap the card against a reader in the shop. This was what they tried to do, and it was (thankfully) declined. Even if it had gone through though, €20 is the limit on that and I would then have got the notification and instantly cancelled it.

Un contrat d'appart ça se signe très vite, j'ai visité un appart avec des proprios pas de Paris, ils ont prévu 30 visites dans la journée, prennent la décision le soir même et signent avec l'heureux élu le lendemain.
Mais ptêt avec juste un stage tu vas vite déchanter, ils ont pas envie de louer pour 3-6 mois à quelqu'un qui gagne le tiers du smic (?), regarde du côté des sous-locations. Même une sous-location de 2 semaines / 1 mois ça peut aider, être sur place pour trouver autre chose.

Le Bistro Lorette - my all time favorite restaurant in Paris (lived here for 2 years) and it's well rated on Yelp Paris. It's run by two brothers (one is the chef and the other is the waiter) so the place is small which creates an intimate atmosphere. The food is very reasonably priced for such high quality - 3 courses with wine was around $50. The interior is really like a bistro, with red tones and soothing music. For a fantastic view: Les Ombres - Les Ombres translates to "The Shadows" and you will be, quite literally, in the shadows of the Eiffel Tower. It's located above the Museum Quai Branly and it offers a fantastic view of Paris by night. The food and service is great but really on par with any expensive-tourist like restaurant. For fancy: Le Violon d'Ingres This restaurant is actually part of a set of very famous restaurants by Maison Constant with this one being the most upscale. (The other two are on the same street ironically). The other one "Les Cocottes" was well received by food critic Anthony Bourdain, and this one is just the icing on the cake. I recommend Le Violon because it's more suiting for a special birthday dinner. It's also a stone's throw from the Eiffel Tower which would be nice for a post dinner walk around! Especially to people living in Paris who have to eat that greasy kidney bean & ground beef dogfood served up as Tex-Mex in most of Europe.
That being said, I encourage you to check out the writings of Gustavo Arellano, who is the foremost English-language food writer specializing in the ethnographic history of Mexican food in America. Specifically this book.
It might help to know what level you are currently! That said, I used this book in uni and really liked it. Imagine it’s pretty good for self study too, because it’s got exercises with answers in the back. Explanations + instructions are in English.

Are you already using the FODMAP app from Monash University? It is absolutely worth the $7. This app and the equivalent pdf were big helps when this diet was being used in my household. All of the foods came from regular stores, with a quick consult of the list for anything that was not already a household staple.
I had no idea that even in the US there were dedicated shops and products. Do they sell really processed foods that replicate regular recipes with low FODMAP ingredients, or just stick to stocking low FODMAP basics? Interesting.
Hoping reintroduction will go well. Sticking to a very compliant diet was a real pain in the ass.

- it depends what you mean. I'd say tourist don't tend to visit the northeastern part of the city since it has less monuments, museums and touristic attractions except the Père Lachaise, but it can be very nice too, althought during winter it's a bit deader. The Ourcq Canal between Jaures and La Vilette Park is worth a stroll. The Buttes Chaumont Park is gorgeous. Menilmontant/Belleville Area has a lot of bars and restaurants on the cheaper side and the vibe is less stuck up, it's a mix of arty/trendy and working class.
En général on met deux antivols sur un vélo ce qui permet aussi d'attacher une roue. J'ai un ami qui utilise deux U par exemple, mais d'autres vont coupler un U avec un cable flexible (voir aussi ce U qui intègre les deux).

If you miss it enough to pay-- get a VPN service that will allow you to route through the US. I use Hotspot Shield for this reason--a few bucks a month and I can stream Netflix and Hulu, and I also have an extra layer of protection when browsing on open wifi networks.
