Pretty much just whatever is on the Epic store games list. They don't have an enormous catalog like Steam does. Click on "Show more" and it'll give you the whole list, several hundred at most. If there are games on Epic that you would like to play I'd recommend either waiting till they are available on some other platform (every single Epic exclusive has been timed) or buy it on another platform of your choice if/when its available. That's all I've been doing since their store launched, and many others have too.

Do you have good internet? If so, seriously consider Stadia in your position...
- you don't have any attachment to Sony / Xbox ecosystems at this time.
- stadia is a free console. you don't pay anything down for hardware, and you don't need to subscribe for a service. multiplayer is free which you pay for on other platforms. you just buy a game and play it.
- if you have any game controllers lying around at all, pair it with a phone or laptop and either download the Stadia App or go to stadia.com in a chrome browser and try it. You can start the free 1 month of Pro and play about 18 games or something. But you can let that cancel and just play the games you want to buy if you like.
- It should have most of the big AAA 3rd party games coming, such as Cyberpunk (no Call of Duty though... hopefully next year)
SERIOUSLY... Stadia is designed exactly for people like YOU. It will cost you nothing to try it out right now, then you can decide.
If you do decide to go with it, you can then go fancy (if you like, not needed) and get the Stadia kit which comes with a Controller. The new Google "Sabrina" dongle should be out within weeks so I'd wait for that device which would be even better than the ChromeCast Ultra that you get with the kit now.
Right now Stadia is graphically comparable to a PS4Pro or XBox One X. Through osmosis it will quietly upgrade over time and should keep fairly in sync with PS5 XBSX moving forward. And you won't need to pay anything to take advantage of that. Games will just start looking better.
You can try IGDB. They have a comprehensive games list way back.
They also provide API, if you want to programmatically pull game details including games in game images.

I used ePSXe to play PS1 games on the computer for ages. You may have to tinker around a bit with the video, sound, and CD settings, but once you find something that works, well, it just works. You will have to find a BIOS file elsewhere, though. It's a PS1 emulator that's been around for a very long time.
Little tip for anyone wanting it coming back, if you have a PC there's a fan made game that's free called "clone hero", it's got fanmade songs and song ripped steight from all the guitar hero games.
You can use any of the guitars/drums etc, the wireless ones just need a wireless xbox controller adapter. If you don't have them you can even use a keyboard to simulate it, it's amazing and feels just like the old games

Personally I use Corsair's Void Elite headset. I think they're very comfortable and I only paid $60 for them, which is what Amazon's listing them at right now. If you want a wireless you can upgrade to the Pro version at $100.
The ones I am using now are my second pair, but the first pair I had for a bit over a year before I began having issues with them not fitting snug anymore. I sold them for like $25 to subsidize some of the cost of the new headphones. Aside from the first pair wearing out in just a year I feel like they have been well worth it. They probably aren't super high quality in sound, but I don't really need that, and they've been good enough for me. The surround sound on them is pretty good though which can be helpful for fps and other kinds of games.

I know this sounds like an infomercial but I suffer from the same thing so stay with me. There are motion sickness glasses you can get that are filled with colored liquid that mimic the horizon. It stays in your perofial vision so it's always there as a kind of anchor. It says to put them on for 15 minutes once you feel sick but I just wear them the whole time I am gaming.

I got these ones that are all in one instead of the lame magnetic ones from China. The build quality isn't top notch but it's been working well for me. Plus they look really dumb so you all can make fun of him too.
Other things are, a bright room to reduce the contrast, ginger pills or supplements, and a fan blowing on your face. Some people can play in small spurts and build up a tolerance, but that didn't work for me.

This is exactly what you are looking for, I use mine to connect my PS3, Switch, SNES mini, Wii U and cable box to one of the HDMI inputs of my 4K TV (I use the other two for my PS4 and Xbox One to prevent latency, in case you're wondering). It's currently unavailable but I think there's a newer model available from the same brand. I highly recommend it, I have no issues at all with it, there are cheaper options but they are not as good specially if you are planning to send 4K signals through the switcher.
I'd say if you already have a switch and are enjoying it, then maybe a large purchase isn't necessary. However, if you already plan on buying a laptop to do work on, why not get a laptop with a decent graphics card in it? I bought the older version of this laptop (amazon link) on a cyber monday deal for like US$850-900ish. With the 1660ti that is in the newer model, all those games you mentioned will run on max settings no problem and should last you a good while.

I have this wheel. I have no regrets getting it. Works great on PC and Xbox. There's an H-pattern shifter for it you can buy separately.
Actually this subreddit is more console focused than pc gaming. Having said that, I received from my son a Hyperkin Duke controller that recreates the classic (original/huge) xbox controller, but wired and works great with my pc. Even has the original xbox start up animation when you connect it!
