Can't really help you with deciding on a good dictionary. But if you found one you like but the hand writing recognition sucks, you should try to input with google input method
it's even hard to deliberately mess up enough to not get what you wanted

I'm the exact opposite. On Google 5.x and I still wish I could make it shorter. I hate when a keyboard takes up most of the screen when typing. I like to see when typing (I have rather large thumbs as well). I found this:Google Handwriting Input. If you wanted to give it a try. The other one I found which is good for landscape typing (Thumb Keyboard is $2.50 so I don't think it's worth it.

What I do learn kanji is look up any words that I want to write on Jisho.org and view the stroke order diagrams of the kanji, then write them using Google Handwriting Keyboard. Learning the stroke order actually helps me remember the kanji better, because you have to think about where each part goes, if you get what I mean. The keyboard is for Android phones only, but you might also be able to get handwriting input on your computer or iPhones if you have a look around.
If you want to keep a spreadsheet then just do this manually; you should be able to tell when you've learnt something when you can handwrite it and pronounce it correctly without looking it up.

I just got mine last week, love discovering new ways of using it. Im using it as a secondary device to my phone, not sure I would be as happy with it as my primary.

i love it and use it for my japanese studies. best investment in terms of apps i have made. it supports lots of languages to recognize your writing.

I actually found that google has an and writing input method... It does not feel terribly natural at first at least, But what is pretty cool about it is I can then change the input method back to Grammarly keyboard and get a grammar check... seems to work pretty well though. You can try Google's Handwriting Input keyboard. Although I think Samsung's is slightly superior in terms of the appearance and accuracy of recognition. Google seems a bit faster but less accurate. Try out for yourself.
If you prefer to write notes in the app itself (without going through the keyboard), then MyScript Nebo app can't be beat. However, it's not cheap.
I'm trying out a project that changes your input keyboard depending on whether an S Pen is in use. I enjoy using the Google Handwriting Input keyboard while the pen is out and the SwiftKey keyboard when the pen is inserted back into the phone.
If you're on android, I recommend Google's handwriting input. Whenever you need to write kanji but don't know its readings, just switch your keyboard to that. There's also no time limit.

I guess it's easier to use Handwriting than finding an app which accepts handwriting input.
You can use Tasker to change to the Handwriting keyboard when you detach your S-Pen and switch back to any other keyboard when you insert it.
I think the best calendar app is Business Calendar. You can enable a permanent small notification which you can use to quickly add a new calendar entry.
