Pretty much everything that's not part of the six movies + TV series is officially not canon unless it was to be added later. For instance, Mandalore, as it is depicted in the TV show, is canon, while Mandalore, as it is depicted in the RC books, is not canon and would fall under the legends title.

Yeah A Tale from the Dark Side was originally untitled and part of Tales from the Jedi Companion. It has several other narrative-style prose pieces scattered throughout, definitely worth looking into if you haven't read them.
Also, they may not fit your criteria, but since you have Lana Beniko's Journal and the Shuuru Datalog and they aren't usually counted among the SWTOR short stories for stylistic reasons or whatever, you might also want to include The Search for Oricon and Rishi: Places of Interest, as despite their formatting they're also written more as narratives than emails or blog entries, in my opinion.

There are some things I like from Canon: I enjoyed the Vader Marvel comics and The Mandalorian show. I always have a conversation with my nieces and nephew about the show since they're really into it. It's nice to see that Boba survived in Canon and Temura returning to play him. I really like the theme song for that show.
With Legends: I'm thinking about playing the original Dark Forces, I got it from GOG.com, I know it will be a challenge trying to play a DOS shooter on a modern system especially with Keyboard controls. I think some people managed to make it work.

Volume 2 contains everything that OP’s Omnibus has, and the future Volume 3 will have everything from the second Omnibus.
(For anyone curious, vol 1 of the Tales of the Jedi Epic Collection contains the two Dawn of the Jedi series).

You can get the rest in hardcover (I did this a couple years ago as NJO is my favorite book series, tied with LotR), you have to look for science fiction book club editions. SFBC for short. An example, the Dark tide duology in one book.
From what I've heard Zahn's EU Thrawn trilogy is really good and it's a far better sequel to "Return of the Jedi" than the Disney sequel (most people don't like the latter and with good reasons). It's on my reading list and I'm looking forward to reading it, but there are four other EU books that I want to read first because unlike the books on my personal bookshelf the books I borrowed from the public library have a time limit and a return date (the three other EU books I want to read first are; "Cloak of deception", "Rogue planet", "The Approaching storm", and "Labyrinth of evil") and I also have to read the original trilogy right before Zahn's EU Thrawn trilogy because that's the right chronology.
Speaking of "Cloak of deception", can someone tell me something. I checked out the EU timeline at the end of the complete prequel trilogy book*, but "Cloak of deception" is missing from the timeline at the end of the complete prequel trilogy book as if "Cloak of deception" had been released after that timeline seen at the end of the complete prequel trilogy book was made as if it wasn't the complete timeline. Is it because it was released later and the timeline was not complete at the time?

But from what I've gathered, "Cloak of deception" takes place before "The Phantom Menace" (because it's a prologue to "The Phantom Menace", just like "The Approaching Storm" is a prologue to "Attack of the clones", and just like "Labyrinth of evil" is a prologue to "Revenge of the Sith"), which means before "Rogue planet" and "Outbound flight" (in "Rogue planet", Anakin is 12 and Obi-Wan is 28, and in "Outbound flight", Anakin is 14 and Obi-Wan is 30).
They did publish dark force rising and the last command in german as a 20th anniversary edition. Time to learn a new language ^^ I love how they look
I guess to be fair to Heald, audiobooks weren't quite as big a deal back then as they are now. The production wasn't as polished and reader expectations weren't as high. So it may not be fair to compare him to our modern day audiobook environment.
Then you have the fact that abridged versions were the norm because back in the 1990s and early 2000s (listen up, children) people actually used physical cassettes and CDs, limiting how much they could fit onto those media. I think ROTS was the first unabridged one, in 2003? That's when, in my own mind at least, the modern Star Wars audiobook age truly begins.

In this reference book (holy fuck 2016 was actually 5 years ago..) there's a page about Yoda's hut in Dagobah. Obviously we all see him losing his saber in ROTS, so it confirms that he at least made another one after his defeat against Palpatine.

In this same vein, I picked up From a Certain Point of View when it was part of an Audible sale last summer. It is a collection of 40 short stories, each focused on some minor character from A New Hope. A couple were pretty off-the-wall, but most were well done and enjoyable. More than anything however, I have noticed that having listened to these stories, I am now seeing a lot more depth in the original film, because I now have a bit of back-story for some many of the minor characters. I definately recommend it for those interested in short stories and fan fiction.

It's much easier than you'd think - and IMHO the biggest block to "doing CAD" is thinking that it's hard or this mountain of learning. It's honestly not! I actually just bought this book today: Star Wars: The Rise of the Empire. It has Tarkin, another novel called A New Dawn, and three short stories connecting them.
When it comes to stepping into the EU for the first time, you should generally read the Thrawn Trilogy, X-Wing up to starfighters of Adumar/courtship of princesses/I, Jedi, and the Jedi Academy Trilogy first, as those are the earliest works that are integral to the EU (at least the post-endor EU). But really, you should read Zahns books in the order they were released. And yes, Mara Jade: by the Emperors hand is worth reading. It's well written, and revolves heavily around Mara as an Imperial Agent. It is more difficult to get a hold of now though, because of the Disney buy out. It's probably cheaper to get it in an omnibus with other stories. I got it with the Shadows of the Empire omnibus back when Dark Horse published them, but now they're probably in the legends epic collection published by Marvel. It's probably in the first volume of the New Republic collections.

Ah, of course! My bad, as I said I'm a little bit dopey, so I miss-read what you said. Alright, that sounds good. Honestly, I'll probably skip Dawn of the Jedi as I get the jist of things for the Jedi, and as of late have been really interested in the Sith origins. So I'll start with those sith ones you had mentioned.
I think that's just about all I have for questions at the moment. Just thinking about it actually, I might go for one of the 'Tales from' book to start of with actually, even though that's not in the correct order. It's just mini stories anyway, and I heard that they're pretty easy and fast reads, so it won't do too much harm. All they do is explain wee back stories for characters you see in the cantina or jabbas pallace. Oh, and then after that I might even just skip to Death troopers since it is yet again another side story. Then once I'm done, I'll start in the correct order in terms of books. I guess I can start anywhere really for the comics.
