Oh! They're Moleskin Cahier Journals. I usually get a pack of three and try to mix up the colors every now and then. When I had the navy blue ones a lot of people used to ask why I had my passport with me so I shifted towards other colors. I really like Red and Sand.
Plus a few Rite in the Rain waterproof notebooks underneath the White Mountains passport.
My absolute favorite is Mnemosyne 194. I'm lucky enough to have access to a local in-store supply, but you can find these on both Amazon and the Goulet website in a bunch of different sizes.
The paper is buttery smooth with hardly any ghosting, even with (drier) FP. Pentel Brush, EnerGel, Bic ballpoint, and Ticonderoga pencils are 100% ghost free in my experience. There are 30 lines with bolder lines every 10 lines so you can split the page into ideas/days/sections if you want. Each book has 80 pages, but you can write a lot on just one page. 7mm rule. My favorite size is the one I listed here, the 6x9, but they literally have like, at least 10 different sizes and 2 different paper styles (lined and graph).
I will admit that they are way more expensive than say, your regular Mead. But they're on par on quality and price with Rhodia and Clairfontaine.
Sorry, I just really love these notebooks and they have yet to fail me, even being shoved in my backpack as EDC planners for months. The cover isn't actually "hardbound" it's a plasticy kind of goodness that's super durable but still flexible if you're holding the book on your lap and need it to flex.

There's a system that actually uses index cards as your planner, if you want to take a look at it as an option.
It looks like the one I'd seen pie badly was called the Hipster PDA, and there's more online if you Google index card planner. 43 folders looks like the original site for it.

Coast Guard? You might like ours - our paper is water-resistant! If you write a bunch, we have a 4x6 that you can still pocket but gives you a hair more room. FN books have 48 pages; our 146 has 100. $13 on Amazon for a 3-pack.
As /u/ArchGoodwin said, Leuchtturn has a pocket hardcover and I think Rhodia has one, too. I also note that Baron Fig has a new size for their Confidant.
I've been looking for a B5 dot grid journal for a long time, and they are hard to find. The market is really saturated by A5 journals, annoyingly.
Check out Minimalism Art on Amazon. They have a B5 dot grid with a softcover, but no pocket in the back. You can, however, add a pocket really easily with some heavy paper and some rubber cement or other glue of your choice. All the colors are in stock right now, so if you're interested in that one, buy it fast.
Another choice on Amazon might be Siwengde, but I'm having trouble finding a B5 that's all dot grid. There is one that alternates dot grid with ruled pages.

Lastly, there's a notebook brand called Exceed at Walmart who makes an A5 and B5 journal, but you'll have to see what your local store carries. What they stock varies. The paper is supposed to be similar to the notebook you have now.
ETA: You might also look at lab notebooks, but I can't remember if there are any that are B5, instead of larger.

If you don't need the grid, TOPS makes a line called FocusNotes with the three sections similar to what is shown in the above item (borrowing layout from the Cornell Notes system).
I think you are better of with reading the GTD ("Getting Things Done" David Allen), 7habits ("7 Habits Of Highly Effective People" Stephen R. Covey) and 4hours ("The 4-Hour Workweek" + "The 4-Hour Body" & "The 4-Hour Chef" Tim Ferriss) books. Perhaps even "Fluent Forever" from Gabriel Wyner.
Together with bullet journaling, which I guess you already know, you should achieve what you wish to do with FJ. But without the depency on someones template.
Also there are some subreddits to focus on the most common things people want to achieve and also have their own information to provide, which shall be more useful to you than only some generic workflow.

I just can't help but think the first time I drop it on the ground it'll going to pick up a bit a bit of metal dust/particulate/debris and get difficult to clean.

I'm in the US, so can't help much, but have you thought about getting the paper punches that are (were?) sold? Then you could use any paper.

Hey! I'm a fountain pen user and have used a ton of Midori MD notebooks.
The paper is cream colored, thicker than Tomoe River, and takes fountain pens very nicely. No bleedthrough, no show-through, no feathering. It's very high-quality paper. Thicker paper, so fewer pages per notebook. Less ink sheen, but faster drying times. I think it's a great choice.

I pretty much exclusively use Midori MD and Nanami notebooks.
The Baron Fig Confidant comes in a B5 plus size (at 7x10 inches) with a hardcover, dot grid layout, and at $22. (Plus $2.95 for shipping if your order doesn't meet their minimum free shipping requirement, though there's opportunity for a coupon code if it's your first order with them.) I'm a huge fan of their notebooks, and though it's not much cheaper than $25, it might be an option for you. In case you're interested.
Otherwise I did a quick search on Amazon for B5 hardcovers, and a brand called Miliko has dot grid, spiral bound hardcovers that are 2 for $14.99, so more bang for your buck and the reviews look promising.
If it helps clarify things, the Amazon page for the Miquelrius specifies it's 300 sheets, 600 pages. :)
They're not the cheapest, but Mead Cambridge notebooks are incredibly pleasant to write in. I've been using them for 15 years. They're spiral bound, college ruled, with 100 nice heavyweight pages in your choice of ivory or white. The back cover is pretty sturdy too so I've never had a problem writing without a desk. They can get a little bit pricey depending on the seller, but I highly suggest them.
I buy them in packs of 5 from Sam's Club, usually around $10-$12. They're also on Amazon for more, and you can check out some more reviews.

Virtually everyone on Amazon seems to really like it as well. The paper has a nice weight to it and seems to be rather sturdy. It is a little bigger than the edc range, being 5"x8". Despite this, I plan on carrying it around pretty often. Recently I have got into woodworking and wanted paper to have the quad effect so I could more easily create angles, lines, and boxes. The dots make it easier to see a solid line going straight across than normal quad paper does and I enjoy that aspect of it.
The spine of the book while strong, doesn't make the paper have creases, even on the first couple pages. Hopefully this is a sign of good quality.

I have one of the 150 pages Adams Record Ledger notebooks, and happened to remember saving a link in Amazon (Adams Record Ledger (ARB810R15)), and that has the official description, but u/grabyourmotherskeys did a great job.
Adams and Boorum & Pease were the big two brands for Account Books and Record Ledgers. I like the Adams books more personally, due to the finer ruling, but I think the Boorum & Pease ones look nicer.
If you're okay with standard paper quality, look for multipacks of similar sized notebooks on Amazon. For instance, these are 5 books of 72 pages for $6. If you dig around, there's lots of variety in binding styles and cost. With Field Notes you're paying a lot for the brand, so don't limit yourself to name-brand options if that's not the important thing.

I have a few sticky notes like this that I use already. They're even more flexible than this and are undated, I can use two for one week, and cost like...$1. I got one in a $3 grab bag of post its.
I don't recognize it unfortunately. I will say that my dad does stuff like this (promo and advertising materials) and there are a lot of companies out there who just do this kind of stuff without much of a public face.
Your best bet would probably be to try to get in touch with someone from their marketing department, as they're the ones who usually handle this sort of stuff.

I think your hybrid system may be what I need to work towards.
As you said having to do five steps to open a page is annoying. Which is why I end up taking a bunch of notes on one page, but they may cover a bunch of different projects. I never did have a system for reorganizing those in OneNote.
Recently I've been using todo.txt to keep my todo list and it's been working really well, when I remember to put things in. However since I always have a terminal screen open I am very good at getting the tasks completed, if they are entered.
I'm going to try a new approach, and please let me know if you have any advice or opinions on it.
Use bullet journals to take notes. Have a large physical notebook for meetings, and a small one for my pocket.
Set a time, say 4:00 every afternoon, shortly before I go home to go through my handwritten notes for the day. Move all todo's to todo.txt, and all notes to OneNote.
Setup OneNote as you described above. Just one journal with infinitely long pages. If things need to be broken out for some reason, then use the subpage feature.
I think in the above scenario I will have the best of all worlds. Physical note entry with pen and paper. A basic but functional todo list. Not to mention all my notes organized by project so in a meeting or while working on a task I can easily track down thoughts, requirements, documentation, or anything else.
I realize this isn't a simple one-size-fits-all scenario, but I do see it as fitting my lifestyle. Of course though there is one point of failure in that if I don't transfer the notes from paper to todo.txt/OneNote then it all falls apart. It does have the advantage being a bullet journal to help get me back on track though. If it's not moved forward, then it's not checked off.

Decomposition books (amazon link) are made of 100% recycled paper and soy ink. I have not used these, but I've seen them online and in book stores, so it should be easy to get your hands on one.
Baron Fig has a system in place so every Confidant notebook that gets sold results in a donation being made to plant a tree. Plus, they are a small business that started with a Kickstarter a few years ago. I use one of these notebooks. Great quality for pretty much every pen I use (mostly fountain pens).
I bought this one on amazon. It's the right size and came with a lot of extras. I have plastic insert that is 1/2 zipper pocket and the other half business cards and then one large pocket that goes around my 3 notebooks.
1. for ranting/writing/scribbles/drawing/ or work notes
2. Important info that I don't want to keep copying between notebooks.
3. The actual bullet journal: Monthly, dailies, etc. I like to keep this one really specific so I can find info asap.
At home I keep a 35 year journal, based off this idea. I used an Arc notebook from staples so I could customize how many pages. This is my second year using it and it's already pretty cool. I just write one line about my day. The pages have 35 lines - thus the 35 year journal.
I have similar one made by Rhodia. Can be used with notepad and notebook. Let me see if I can find it on the internet.

Martha Stewart has some good looking labels that come in several colors. I literally bought them for the purpose of labeling my bullet journals. They have red, gray and black ones that look very nice on just about any book. Last I saw them was at staples, but they changed her line recently so I’m not sure what is available. Amazon and eBay have a lot of stuff from her old line

You might like the Grids and Guides Notebook. I haven't used it but seen it in person and it seems very fun. I'm NOT a "visual thinker" so like blank pages, and this wouldn't work for me! I might try it someday as a challenge.
Ana-tomy.co lets you customize the insert pages of your notebook, so you can have some blank, some lined, some grid, etc., as well as customize your cover, elastic, and pen loop. I have one of these and really enjoyed it! It's beautiful in person and shipped very fast to the US (not in a pandemic though).

I would head over to Laugavager in Reykjavík. There are a ton of book shops and shops for everything on that street. I'd recommend that you walk the length of it and see many of the major shops in the city.
I mostly use my journal for writing about feelings and experiences but I wanted to change it up next year so I'm also doing 52 weeks of lists! There are a ton of prompts online for them. I also do a monthly review and a daily mood log. Everything you put down on paper is important because it's important to you when you write it!

TBH, I don't have an issue with Moleskine paper, either in the regular journals or the art journals, but I don't use fountain pens, I use Pigma Microns.
Barnes and Noble has the Moleskine large black sketchbooks for $19.99, if you or anyone you know is a B&N member you get 10% off. (Amazon has a red version for ~$17 and prime shipping.) Honestly, I'd go for it. It's a good starting art journal, and it will let you get an idea of what you do and don't like as far as paper.

I'm a fan of Umbra's floating shelves. You do need a hardback for your bottom book. They're small and can fit into odd spaces.
I really like Miquel Rius notebooks, which are at Barnes and Noble. I have not used a fountain pen with them yet, but I hear they hold up decent. They have an awesome layout that I love! And the price is pretty hard to beat... You can also tear out the pages, since you prefer loose leaf.
Do you already have a notebook that you would like to get embossed? I do a lot of custom laser engraving (store here) and could probably do it for you for ~$30. I can do real leather (but NOT pvc/pleather). Msg me if you want to chat about it.

I think the only good one is the Passion Planner, and that's only because it provides premade content that people won't have to make themselves. It looks great for anyone who wants a more productive outlook on their life. It reminds me of one of those high-school planners and I found those pretty useful.
PenPad is a notebook with a hole in it. lol
7accords is similar to the Passion Journal in that there's premade content in its pages, but geared towards self-introspection versus productivity. It could be useful for people who want to start a diary, but don't feel like committing more than a few minutes a day writing about stuff.
I'm really surprised Enigmaze will be funded, considering that it's essentially an analog version of any digital password manager like LastPass, which have password generators of similar strength. I suppose this could have potential if users have lots of logins that exist outside of the Internet, but I feel like that wouldn't apply to many people.
there's also listography on wich you can keep lists of any and all sorts. However it doesn't have as wide a userbase like tumblr or pinterest. Quite nice if you're an avid maker of lists though. I also have a pinterest account, mostly for recipes and sewing, knitting and crochet patterns and tutorials.
A friend of mine recently showed me, and allowed me to write in, his notebook by YeeATZ. I was pretty well impressed by how it handled FPs. He uses a lot of FPs and it seems to work well with all of them.

Ooh!!! Life Noble is everything you want! I love these notebooks. They also come in the B5 size (linked), which is a nice middling size between A5 and A4. Nice thick pages with no ghosting or showthrough.
That said, I’m also a big Midori MD fan, you can’t go wrong with that paper. Alas, no B5 though.
Because you’re a fellow Baron Fig fan, and that paper is pretty toothy / gives some feedback, I won’t recommend Apica CD — the paper is like glass and sometimes it annoys me how glossy and smooth it is. It feels very luxe though, and sometimes I do love it because I just want to feel my pen gliiiiide across the page like it’s on ice.
Do you want it to be the same size and appearance as the traveler's company cover, or are you interested in something larger or smaller? There are some knock-offs on amazon like this one that are quite a bit cheaper, but you'll find most of the cheaper options are not made from leather.

The 5" x 8.2" Markings by C.R. Gibson journal fits in my purse and goes with me everywhere. Feels like a high end journal for a fairly inexpensive price, and Walgreens usually has them in stock in their office supplies aisle, so it's easy to grab one or two while I'm out to have on hand when I fill up the current one. Highly recommend for a basic, any-purpose journal.

Yes, I actually have a little file cabinet made specifically for 3x5 index cards that I use to archive my notes. This is it.
These are the ones I have. I have 3 sets (so 9 total columns) and I love them! The bottom shelf is too shallow for pens, though, so I store little things like tape and pencil sharpeners in them.
Lemome brand has a grid a5 journal that has rather thick paper. I've used fountain pens on it and no bleed through!

And to answer your broader question, i usually buy online. Just because it's easier to get exactly what I want, or to find the best price if it's something I' trying for the first time. I only really buy in store if it's something I also ready know i like (that is, for convenience purposes).
My Nanami Standard notebook was getting beat up after a couple weeks of use and I didn't want to spend a fortune on the covers sold in the shop specifically for these notebooks. They're beautiful covers, don't get me wrong but I want to spend my money elsewhere like fountain pens or more notebooks.
I found this on Amazon and it's great. It comes in a few different colors and a small notebook is included. I'm pretty pleased with the fit and on first inspection, it seems like a durable product.
Thought I'd share an alternative to the expensive covers.

An Amazon search for 10" portfolio turns up a ton of options. ( I picked 10 as a starting point, just guessing)There were a couple of business case portfolios that looked like they might do the job.

You could just buy your favorite one without perforations and buy something like this: amazon "wheel cutter perforation" and perhaps a metal ruler. With them you can make your own perforated pages.

Yes, I agree that it would really be best if they let you print from whatever platform you use. I guess the companies that make them (HP, LG, Polaroid, etc) don't want to spend the extra money on additional software development.
I wonder if the Canon Selphy (Amazon) would work better for you.
Surprisingly, it's actually cheaper than the Polaroid Zip right now, but allows for a wider range of print sizes and reportedly has better quality prints. It seems like it can print (wirelessly) from your laptop, and as a backup it seems you can plug your camera's memory card directly into the printer itself. And it does look like they have a couple different sticky paper options.

Hey this is a wonderful idea! I'm doing a similar thing for my friend. I bought these for my project (not quite these exact ones, I chose spiralbound ones by the same brand). They also have them lined instead of dotted. They're a pretty cute size. A5 is my favourite for note taking in class, as the desks tend to be small. Anyway, definitely check out what amazon has in terms of notebooks. I think the keyword you're looking for is 'kraft paper' covers.

Sorry for the low quality of the pictures. Some more info: this is the listing from which I ordered it, and from which I also bought my first notebook one year ago. The first one was completely normal. Now, regardless of these details, it is still usable, the pages feel good and I actually like this index more than the classical one, but the lack of margins is quite annoying! Luckily Amazon refunded me the money and I still get to keep this notebook, so I'll be trying to buy another one soon (this time the anthracite colour), but I will be disappointed if it comes out the same as this one.

I use an A5 sized fauxdori for $24 on Amazon. I'm thinking about getting a passport-sized version to use as a wallet with one Field Note-sized notebook. The same seller has a 3-pack of A5 dot-grid notebooks for $10 that works well with my fountain pens.

Black and red used to do a very nice a5 notebook that fits your description. I think it's Oxford that do the black and red notebooks. I'm not sure how easy they will be to acquire outside of the UK.
Edit: that is a very pricey one, I got mine for around £10, maybe less.

I have this one (although I bought it on Amazon, not Jetpens), and I really like it! I keep pens and a small ruler in the outside pockets, and the inside is perfect for my A5 Leuchtturm. I like that I can leave it in my bag and just slide the notebook in and out throughout the day to keep it a bit more protected than if I just threw it into my bag alone. I don’t really use the flap pockets, but they seem like they’d come in handy for some things. And I love the color— they say it’s black, but IMO it’s more of a charcoal grey.
