You might have said something that sounds like "ay Google" and then something like "talk to mr dice" to trigger it. I recommend turning on the accessible beep to know when your devices have false triggered. Everything after the beep goes to Google so it can be helpful if you want to manage that a little closer.
Those are called "Actions on Google". They are like assistant apps developed by other people. You can talk to them by saying something like, "ok Google, talk to Starbucks". Yeah this sucks. Years ago when I used iphones they already had this nailed. Google need to recognize this is a feature not just accessibility. Until they sort it out I recommend article reader. The only way to get google assistant to add a reminder to iOS reminders is via IFTTT, and you have to change your phrasing.
Just adding a word of caution for a +3 year old unresolved issue.
Do be careful with IFTT. Prior to Google announcing routines, I attempted to use IFTT to cast music to my Home Mini at alarm time when I gave the "Set an alarm" command. The recpie never worked and to this day, I cannot use that command without receiving an error. Even after deleting the recipe l, disassociating the account and ultimately deleting the IFTT account. This only happens on one account, none of my other google accounts.
It is possible you can break notifications on either end.

To get it to work, I modified it so when I say "Add (xx) to grocery list", it executes the action to add it to Wunderlist.
You need to install the Google app and then uninstall Google Go. If you cannot uninstall Google Go, then you must be using a lower-end device from a not-usual Google country.

Have you checked your version of Assistant compared to your friends version? Samsung is certainly not the leader in keeping their products up to date with the latest software.

That's very interesting what you say about returning users - it seems like your device or GA account has problems (or disables) local storage... I'll look into that as the game has the logic for returning users (and suggests skipping the instructions).

I haven't used Mycroft yet either lol, which is why I was interested to hear your opinion if you wrote the article. But to my knowledge the most popular device he's currently available for is Android. You can use him on Windows and Mac using a vm but meh, most people won't need a virtual assistant on their desktop. However, they are said to be releasing him for Windows and Mac Soon^t^m
There are also dedicated devices for him, like Alexa and Cortana, called the Mycroft Mark I and Mycroft Mark II. His original intended use was for Raspberry Pi.

Bad news I'm afraid. I just remembered that Android won't allow you to install an older version over a newer one; I've always had to uninstall the newer version first before installing an older one.
Unfortunately one can't uninstall the Google app, just disable it.[only perhaps with root]
I just double checked by rolling mine back to factory settings and then installing at random the older 6.8.23.21 version ... but just got back "App not installed"
So I'm afraid this won't work unless one had a quite old phone with a Google Now factory version.
So apart from buying a really old Android phone :) ... the only other possibility is to investigate ...

Turn Off Microphone Access for the Google App
Open Settings on your phone and select Apps & notifications.
Tap See all X apps to get a full list.
Scroll down to Google and select it.
Tap Permissions and select the Microphone option.

This did disable the microphone for the Google Assistant on my moto x4.
I unfortunately don't have an "always listening" earpiece to monitor me saying "hey google".
Thus with my mpow flame nothing happened when I said "hey google" and with my Anker SoundBuds Curve I still have to hold a button for 1 second.
But with your Focuspower earbud this might work. I'd be interested to find out - let me know if it does.
PS: Don't forget to re-enable the microphone when not using your Focuspower earbud.

Use Android Auto for Phone Screens. Does everything you're asking for. Standard part of Android Auto since the beginning. Doesn't rely on a special head unit.
I find Volume Control for Assistant to be helpful here, despite not being able to change the volume of just the Google App like you could on a desktop. It hasn't been updated in a long time, but is still working for me on Pie. The 'beta' added options to disable with headphones and/or music.
You can't do it with the power button, at least not without being rooted as far as I know. However, this app will let you remap other buttons. I just tested it on my Pixel and was able to call up Assistant with a quick double tap of the volume down button. I know, not what you're looking for, but it might be as close as you can get.
