To show him some of the customization, I'd recommend downloading Nova launcher (or another launcher if you'd like) and installing a different icon pack. I think polycon is a good choice with material design influences to replace Touchwiz's icons (aka what most people think Android phones look like.) You don't even have to make it look all nice and professional. You can maybe even get a themed icon pack based on some series or video game he likes, for example. Make his phone look like it's from Evangelion, or something

Good guess, it reminds me of that style a lot too! It's actually from the icon pack I'm using: Polycon. There's a few others in there of the same style. I had no idea about them when I downloaded the icons, now it's easily my favourite wallpaper!

I have a Nexus 5x, which was appealing to me because it comes with "stock android" - meaning no bloat apps.
I keep my installed apps to a minimum.
I use Nova Launcher, which is great for hiding stuff you don't need and arranging things in a simple, functional and aesthetically pleasing way. Like the other commenter, I really like having just a few apps on my home screen, and then having one screen of apps in the drawer.
I also use the Polycon icon pack.
To top it all off, I usually keep my phone on airplane mode and use it as little as possible. I often call and text on my computer via hangouts.google.com and project fi.
I quite like having 5 columns on the desktop and dock, with the app drawer icon in the middle.
Edit: The icons and wallpaper are from Polycon - Icon Pack (Beta). It's a beautiful and free pack, and the wallpapers are a real bonus! Only problem is there's quite a limited number of icons, so I use LollyDrop and Candy Material for the missing apps (both also free).
Edit 2: /u/___maybe___ also found the wallpaper on DeviantArt here so I'm not entirely sure who to credit. There's a couple more in the same style in Polycon, and two more different ones on that DeviantArt.
Edit 3: I contacted the DeviantArt author who confirmed it's their work. Looks the Polycon developer didn't ask permission to include it.

Polycon beta - IMO, the best free icon packs with material design. There's still many icons missing, but the design is great.
Phix - one of the most complete free icon themes.
Moonshine - this one seems to be quite popular here. I use Phix and Moonshine as additional sets for icons missing in Polycon.
Switch UI - material icons with unified shapes. Made by one of the best icon designers. Worth the money.

I wound up grabbing an icon pack that's basically the stock icons (Polycon) and had to set icons back to what they already were to get rid of the white. This is fine (though annoying), but it doesn't change the icons when used elsewhere like the Share options. I can adjust a bit in Nova settings, but the best option is a square that's a bit smaller than normal, so my icons are now inconsistent sizes. All I want is to show icons like icons.

I use a combination of Polycon and CandyCons. I find the themes of the two are pretty interchangeable, so if I don't like the icon of one of the packs, I can switch it to the alternative found in the other pack. I also use KLWP for an animated background, which I think looks pretty neat. I actually found the base theme on Reddit and modified it to my liking. Thanks random Redditor, wherever you are!
