Some really old version of 3ds Max was used during the development. At least I think I've read that somewhere..
It's not really important though.. You can do models like those in pretty much any 3d modeling software out there today. Blender would work withouth any problems, you just need to work with a really low poly count.
For the textures just use any kind of image manipulation software.. The textures are obviously low resolution for the models since you can see most of the pixels very clear (Open the pak-files from Quake and get an image viewer that can open pcx image format to get a rough idea of resolution). What makes the textures very Quake 1 though is the color palette used.
If you want to get them working in the Quake engine with all the glorious drawbacks of that old model format you need to find an .mdl exporter. I have no updated info on that but there was one for Blender a few years back at least..
You've got two main choices:
Quake Champions is Quake, with characters that have abilities from each of the Quake games (Two characters have CPMA movement, two characters can slide like Quake 4, etc). It has the most (visible) players at any time.
Diabotical is basically a Q3A clone, where you play as adorable little egg dudes. It has minor variations from previous quakes but even their 'MacGuffin' mode is effectively Quake's Sacrifice. It's the newest, and is a Epic Games exclusive.

Id studio director Tim Willets - co-designer of the original game - said that the new “Quake Champions” iteration will be a high-speed multiplayer-focused game - with unlocked framerates - capitalizing on the already-extant Quake e-sports market.
Have a look at the KILLER.TXT file that comes with the mod; it has a section about Zeus bot stuff. For example the impulse to add an opponent bot is 220.
yes i have quake live and i think it's good, but the steam dependency makes me not play it. Well maybe because i don't really have internet these days that allows me to play online :) i much prefer QW/Warsow though... oh and i also really like the free http://sauerbraten.org because of the fluid engine. You can also check out http://reflexfps.net/ which is a spiritual sucessor of CPMA (which was q3 in hardcore) i don't have it (steam) but i hear it's really amazing!

Not really, because apparently for a whole year Quake basically had no identity or focused design. Some monsters were modelled/designed after Sandy Petersen's book https://www.amazon.com/Petersens-Field-Guide-Cthulhu-Monsters/dp/0933635486 (you can clearly seen a Spawn on its cover). There are some map layout sketches available around from John Romero, and there was a page with some item drawings like armor, rune, and a key.
For a big part of the 1995 Quake was supposed to be, or at least envisioned by Romero, as medieval first person melee combat RPG. Since the engine was changing constantly, there was no design document/direction except some vague talkings and theme. Meanwhile Romero wrote QuakeEd so level designers could start making levels and "cool shit".
This was also first time they used 3D models so it was a new thing for Kevin Cloud who did all the models, learning the new software as well to create the models.

Sometimes quake apps behave "emotionally" and stop working a few weeks, then work again on their own (?), is because are made a long time ago by somebody has a hobby, and use weird libraries that modern Windows barely support, so they behave as if they are made with duct tape, bananas and coconuts.
Anyway if is only the viewer, theres nothing to fear about the file.
If you ever get a quake skin with texture corruption and you lost the original, asensprite do a good work as a editor to fix the wrong pixels, has many functions that make that very easy, like search and replace, blend, filling.
Bruh, how has noone mentioned darkplaces? I'm on Ubuntu 16.10. Personally, I'm enjoying Quake Epsilon. I had an easy time finding the .pak files I need to play the full campaign and all the expansions by just googling for them. Its got scripts to run out of the box on any platform.

When editing the Target of the shortcut, leave the the quote marks where they are, and put your new arguments after the final quote mark.
So for example if Target is this:
"foo\bar\Quake\darkplaces.exe"
then you would want to change it to be like this:
"foo\bar\Quake\darkplaces.exe" -game Quake1.5

As long as you have a PC or laptop bought in the last ten-fifteen years, you're pretty much guaranteed to be able to play Quake II on that, with a mouse and keyboard as god intended. You can buy it on Steam or GOG.com, better yet grab an old CD copy from ebay if you still have a disc drive.
I haven't gotten qtracker to work in years, try gametracker or quakeservers.
Found some servers https://www.gametracker.com/search/etqw/. You just have to find a way to organize enough people, with the game, in the same region to be on at the same time to play. I assume these servers are for full retail, and not demo, but I'm not sure.
Odd, Windows 10 has some sort of temporary online account issue but as a Linux user I've never experienced such thing.

As others have said... Darkplaces is great. You can turn down any effects you don't want.
I suggest grabbing this... https://www.moddb.com/mods/quake-hd-pack-guide . It use Darkplaces plus comes packaged with other mods such as hi-res textures, NiN soundtrack, parallax, improved particles and better torches (plenty of screenshots there to check out).
Be sure to download both 1.44 and the small 1.45 patch, as well as following the very short instructions for install in the pdf. It's absolutely worth it imo. I just happened to reinstall it this past week and it looks fantastic.

If you use an nvidia card and experience flickering shadows, just rename the executable to "glquake.exe".

Maybe I'm a bit of a purist, but I wouldn't take anything the QC team said lore wise as fact, they were free to conjure up anything plausible to force the champions to fit the game's lore. They even changed the name of Shub-Niggurath to Shub-Ngurath to sound more politically correct.
You're just using Quakespasm, you don't need to use a virtual machine for that. Quakespasm is available for macOS and works fine.

There are around 16 online servers at the moment. EU and NA have one active vanilla server for each in the evenings. EU and NA divisions of TAW clan run servers with custom maps for Sunday and Tuesday events.
Im not exactly an expert on how connections work or anything but i have bad internet connection in my country so most games dont connect automaticly to the servers. Whenever i get a connection error in a game i usually use a vpn connection to connect to a different country and usually that solves the problem. Granted my ping becomes way higher than it normaly would be but at least it works. You could try ExpressVPN or NordVPN or something depending on your location (i use a local one thats available to me, dont know much about those tbh) and see if it makes a difference. Hope it fixes soon for you and you find a solution!

Best I've found on Android, developer updates often. Has support for quake 1, 2 , 3 and Hexen 2, has 7 different source ports with mod support. If you have Android Oreo or above there is keyboard and mouse support, if not, you can use a gamepad or some of the best touch controls out there. They also have the same for idtech1 games called Delta Touch, both are great. Check my post history, I talk about it a bunch.
If you really want to improve your Quake 64 game, I just found a replacement joystick for your N64 controller for $12. I'd give it a shot if I still had my N64... :/
