Google Cloud Platform is a development tool and hosting platform for software developers. The documentation and tutorials explain how to use GCP, but they assume that you already have experience as a developer and generally know what you're looking to build.
If you've gone through dozens of hours of tutorials, but you're getting frustrated because you're not any closer to achieving your objective, that's a sign that you're not the intended audience for GCP and that you should fundamentally rethink your approach.

Google's no-code solution is called AppSheet. While I have very limited experience in this space, my colleagues who have used these types of tools have also spoken highly of Retool, although feedback that I've heard from them and others is that it can be quite expensive. Reddit also has an /r/nocode sub that you might find helpful.
In any case, based on your post and what you're looking to accomplish, I don't think working further with lower-level GCP components is going to be productive.
Hey, have you give no-code app a try? Appsheet is a great example of this. Basically, your numbers and stuff are set up and running on an excel spreadsheet hosted in a Cloud server (Dropbox, Google Drive...). Then what Appsheet does is that it takes the numbers and executes them beautifully on an app. You'll only need to define your UX on the app.
For example, I have created an auditing inspection app using Appsheet. This involves the capturing of images, status, client's information and address. And then doing an automated report through Appsheet.
No out front cost is needed. No programming language is needed. (Albeit, there are some technicality and nuance to be understand in the app)

Appsheet is basically the no-code platforms offered by Google Workspace (Gmail business solution). All the data will be stored on Google Spreadsheets and this application can be customized as you want. The free option has some limitations such as number of apps and the data source limits (you can't connect to a DB). But for most of the small scale businesses can survive with the free offering

Is it surprising that developers (who presumably can code) aren't that hot on embracing stuff like this?

I did something similar recently but with a tiny twist which I think makes it easier.
I linked Google Sheets with AppSheet to make a very basic app (it's all fairly intuitive, no coding or anything). The spreadsheet has four columns: tasks, frequency (how often I want to do it, in days), date last done, next date due (calculated on the previous two columns).
The app on my phone has a simple list that just shows me the tasks, with the next one due at the top. When I do something, I tap it and refresh, which updates the 'date last done' column of the spreadsheet, works out when that's next due and then re-orders the list on my phone.
I find it handy because it means I (generally) stay ahead of tasks rather than forgetting about something until it's visibly dirty. I can see now that I am behind on a few tasks, but not as badly as I have been previously.

I want to reiterate what u/ParkingOven007 is saying, an actual custom-built application tailored to your business requires a big commitment. But it can pay off big time depending on your use case.
Apps aren't just for the customers as I think a lot of folks here considering but also for the employees, operations folks, etc. The value of it varies wildly.
I'm assuming you've thought of all of this and do think that a mobile application will be great for your business.
You've got two real choices available to you:
If your budget is relatively low, I'd recommend going with the latter solution. And I would highly advise against using an "app template". That's not to say reusing code is bad, but any solution saying they'll save you a ton of time/money because of a "template" is either lying or delusional.
If you're budget-limited I would rather recommend using a low-code solution. Personally, I'd recommend Appsheet. A client of ours wanted to build an application to help with on-the-ground operations but wanted to do a test run before committing a larger budget.
We were able to use Appsheet to create fairly complex workflows and the ongoing costs aren't too bad. While obviously, the experiences you can create with low/no-code tools aren't going to be the same as with custom-tailored solutions, they can still be really transformative and useful for businesses.

If you can scan the id based on barcode or qr then maybe Appsheet (connects to google sheet) is something to work with. App on the phone / tablet to scan the id (and maybe the equipment as well)

AppSheet can definitely do this. Otherwise you should just use a service that's designed to gather survey responses, like SurveyMonkey or Google Forms.

For a while, I used AppSheet to create my own rolling to-do list app based on a Google Sheet document. That's a bit involved, though.
I recently realized that I could implement rolling/repeating to-do lists in OmniFocus, which is my primary personal organization app. Goodbye AppSheet. I've been quite happy with that---but OmniFocus is macOS and iOS-only, so not for everyone.

If you were willing to go with a multi-vendor cloud then Oracle offer APEX which is perfect for things like this. If it's just a single small database it would probably for within their free tier as well.

It sounds like the most efficient solution would be to have a hand-held, wireless barcode scanner to scan/lookup a record then quickly enter an inventory quantity and be ready to scan the next item.

Well, there is a better way with newer versions of FMP, but it sounds like you want a solution without upgrading. FileMaker Go would be very useful here but you would need FMP12 or newer.
Without upgrading, a laptop and hand-held barcode scanner are probably your best option. Or you could use some other mobile app/device to scan and collect data, then import that into FMP. AppSheet would be a good option.

You might consider reading up about what insulation actually does before spending on it what could easily net you another 100Ah of battery, which you'll almost certainly want once you figure out how much more important ventilation is than insulation.

Don't enter personal info into it at this time, as it's in alpha state, but it'll do solar math for you if you add electrical components to a BOM.
How many users? If it's less than 10 you can use appsheet and keep the app in prototype phase indefinitely for no cost. If it's more than 10 users it's still worth investigating as it's a pretty intuitive and robust framework.

Since you already have Excel sheets with formulas/macros, maybe you could even just buy a few cheap ($100-200) Windows Surface pros and load the up with the Excel sheets?
It might take more work, but, alternatively, there are some drag-n-drop app builders that sync with spreadsheets; for example, AppSheet.

Steppa and Wiglin - Rank E each - Heartful - not fantastic but I hear some people use an S7 Steppa and it helps, I guess if they don't have Elder Bloom. Sgt. Burly - Rank C - Brave - everybody has him as an auto befriend from Stage 16. This is the minimum level option if you haven't obtained anybody else. Arachnevil - Rank S - Brave - in most circumstances, probably the second best in the game, and in some circumstances surrounding Brave tribe unity, the best. I do not think he is currently available for this event, but he resurfaces every so often. Elder Bloom - Rank S - for most intent purposes, the best score booster in the game based on the point value of the Soultimate level for which he is currently sitting. Of course, you need to unlock his Medallium page through befriending various Yo-kai, and the Medallium will show you who those are.
Did I miss anybody? I don't think so. So options are limited, but as a bare minimum, Burly should be in your team until you can employ the help of one of the others.
In general, this applet will give you stats and figures for all Yo-kai in Puni and Wibble Wobble; probably a "too much information" kind of thing for you right now since many of these Yo-kai are only available on the Japanese server of the game.
To add to the other great comments, you can also look into "no code" app builders like https://www.appypie.com/, https://www.appsheet.com/, etc. These are separate from app prototyping tools in that you can deploy the app to real users and store data, etc.
