Even as one of the people who loved the past games and want more like them, I really doubt there's enough demand for a competitor to magically "drive [Bethesda] to reach back to their core niche, RPG audience that played Arena, Daggerfall, and Morrowind back in the day," there's just too much money in making their games more accessible. Even if another developer made a highly-regarded spiritual successor to the earlier Elder Scrolls games, Bethesda would just nod graciously and release a tens-of-millions-selling user-friendly Elder Scrolls VI.
I'd still love for that to actually happen, but so we can have more awesome games in that style to play, not so we can cow Bethesda into doing what we want.
It's not quite the same, but I've got my eye on Kingdom Come: Deliverance, which is currently in development. It's got a historic setting and theme instead of fantasy (well, there's alchemy, but no spell-slinging), and as far as I know doesn't let you customize your character. But it's an open-world game with tons of dialogue, quests that can be solved multiple ways, and a variety of crafting and other mechanics to fiddle with. Combat is apparently going to be as realistic as they can reasonably make it, with damage based on hit location, weapon type, and various layers of clothing and armor. As an Indie game, it won't be as sprawling and visually impressive, but it's one of the few games I've seen that's trying to emphasize the 'go anywhere, do anything' freedom that sets Betheda games apart.
The games core "theme" is a realistic medieval style game. It won't have all the dragons, magic, or other stuff you're used to now adays. You can check out more info on their website here: https://www.kingdomcomerpg.com/

Personally I'm more than happy to give it a pass. I don't mind if Geralt looks like an impractical bad ass, or Ciri looks sexy. In fact, I kinda prefer them to look cool rather than what I know would be "historically accurate".
Daniel Vavra is making a game like that - takes place in real historical bohemia, real armor and weapons, combat rules, no monsters, etc. Trying to make it as historically accurate as they can.
I will probably buy it when it comes out because it looks pretty cool - but different games for different things is fine. Some can be more "real" than others so long as it's still fun. The Witcher 3 is fine the way it is and I like the art direction. :D
Reminder: If you want to support Vavra's game, don't fuck around. Give money straight to his game. He'll probably just end up blowing the patreon money on charity instead of helping fellow victims of abuse, anyway.
When this topic comes up, I love linking this blog from the developers of the upcoming RPG, "Kingdom Come: Deliverance". I feel it says all that is necessary in explaining why smaller studios show more passion in their projects, and are more effective in their design choices.

It's similar to when I pointed out Oculus marketed on not selling out then sold out and I was called a liar for pointing it out. But those "choices" are non engaging, cosmetic and pointless. And your character has less personality than a MMO drone...there is no reaction or dialogue even when your head is about to be chopped off! My first choice in Wasteland II had me going back and forth across the map, trying to decide which call for help to respond...there is nothing even remotely like this in any Bethesda game out there. Nord will know nothing about Skyrim culture, Redguard assasins will not react to female Redguard player character, Khajiit will experience nothing of racial discrimination found in Skyrim. And I completely disagree with Skyrim's npcs having even an ounce of depth...majority are clones made by the template based on their voice actor( innocent young woman, grumpy old guy....) and it feels completely out of place how their whole life can be summarized in three lines of nonsense which they won't stop babbling every time you come into a mile of radius. You cannot interact with a lot of them in Witcher, but they feel more active and living their life that isn't centered around the player, and the ones that do serve a role in story or side quests are trillion times better. Skyrim or any Bethesda game, in terms of cohesion and quality of design, is not really an open world game...it is a large Lego box video game and mods are the toys you add that make it more interesting. They are still adding things. Only recently have they added temporary voiceovers. But they promised to hire better actors and to record soundtrack by live symphonic orchestra. Also motion capture is still about to be added so it'll all feel more natural.

I don't know if it's a clique but there has been a push by these websites to ignore games like Kingdom Come ( https://www.kingdomcomerpg.com/ ) because it doesn't have black people and women are not equal to men (in realistic non-fantasy medieval Europe). I think the developers talked about this in some of their videos.
And there must be a reason why Leigh Alexander can threaten developers with "destroying them" if they disagree with her agenda. Then there was the GameJournoPros mailing list where the journalists discussed how to write about certain issues and who to support or not-support.

Game Informer will just show you "Internal Server Error - Read" if you access it from a lot of places. This has been going on for almost a year.
Russia is blocked along with other CIS countries, a lot of Asia is blocked and even some countries in the European Union are blocked.
At first I thought it was an error on their servers but now it definitely seems deliberate and GI doesn't comment on it.
Seeing a game like this being ~~produced~~ published by Ubisoft definitely gave me reason to pause. It will definitely be a "wait and see" thing for me.

It's Cryengine, support for VR (not sure if only Rift or something more general) comes with it. Last I heard they intend to stick to their guidelines or something at the very least.

They are new studio and they are working on their first game, although many of them are industry veterans who worked on games like Mafia, OP Flashpoint, Arma, Forza and many more. And if you pay for Baron tier or more, you will get alpha access.

I'm honestly only saying this because I backed it when it was on Kickstarter, and they still have a stretch goal :) I'm pretty hesitant to back Kickstarters, but they already had good demos when they were asking for funding so I have high hopes for it.

DA:O isn't an action RPG, it's a straight RPG. Like /u/Manc0mbSeepgood says, it bears more similarities to Bioware classics than any of the games you mentioned. In fact, it's got much more in common with something like Planescape Torment which is a game that based on what you've said you'd enjoy... I'd think you would probably dislike. That game is just mostly text, character interaction, walking from one place to the next and then more text. The fighting sucks, the interface is painfully annoying to navigate, and it's not for nothing one of the best beloved and most well loved RPG classics just based on how well it's written. Doesn't mean the action isn't horrendous, though.
The only thing it does really have similarities with the ones you've mentioned are aesthetic and perhaps setting, but in gameplay, focus, themes and character interaction, it's pretty different. I say this as someone who loves DA:O, but couldn't get through more than a couple of hours before ending up mind-numbingly bored and feeling totally uninvested with the world at things like Skyrim and the Witcher. I appreciate that they're nice, well made games, but they require a certain approach and mindset to play and that just isn't me.
But yeah, you've discovered the difference between ARPGs and RPGs. If you're expecting it to get more action-y or fight-y, it won't. I'd say probably not worth getting back into if you're that kind of gamer, and it's better to wait for Witcher 3 or maybe Kingdom Come: Deliverance which both seem like they may be way more your type of thing.
I hear ya fam. There's a few good titles out there that aren't cucked, they usually tend to be indie games, or a new company. For instance: Post Scriptum (WWII), or Kingdom Come: Deliverance.
So there is hope, but it seems like all the triple A titles now are SJW'ing up, sad!

Yes. They are launching each Act as a separate game, think a equal to the last. If you REALLY want to you can pledge a heap of cash to gain all 3 Acts but that's like $220+, not sure if it's worth it really.

It's a realistic medieval RPG. No dragons, no magic, just steel and arrows. Been in dev for like 5 years and popped up on Kickstarter. It's been interesting to follow it through development and they've done a solid job keeping up with releasing information to backers. https://www.kingdomcomerpg.com/ .
It has a medieval setting without fantasy elements, but i think the focus is on fighting and not the living simulation aspects.
Kingdom Come: Deliverance. Not sure how it will be but the developers seem to be putting their heart and soul into it and it just might become something real special.
Kingdom Come: Deliverance is pretty demanding, not really AAA though. It's kind of a low-fantasy medieval sandbox with an amazing fighting system, if you're into that sruff you should really check it out.
If you're interested is some physical swag, it's still possible to buy the high-end tiers. Other than that you get to support the developer, access to the beta version and a flair at the official forums. That's about it.

Still seems like they only have their own routine and keep doing only that, but it's something already. Hopefully one day this can evolve to a game that they could organize themselves, make wars and destroy and fund cities....
The upcoming Kingdom Come: Deliverance RPG takes place in historical Czechia during Hussite Wars. Daniel Vávra, who's leading the project, was behind the first two Mafia games, so chances for this one being good are pretty high. :)
It is great isn't it Citizen. The transparency is absolutely astonishing. It is changing how Big Budget Video Games are going to be made, for years to come. Now all we have to do is stop giving money to stupid investors of EA, Ubi, Beth., Etc, and put that money towards games like Star Citizen/Squadron 42, Kingdom Come Deliverance, and the like.

The game i am most looking forward to is Kingdom Come: Deliverance, the main reason is that there are not many games as ambitious and looking to make new experiences. Were this game comes and can potentially deliver a realistic medieval theme, that can be new and fresh. AS well as being in partnership/communication with the people that are making star citizen to share there resources.

In our game we have some conections to ancient greek mythology. so there will be some effects. I personaly would like them to be build in the world as natural phenomens mostly... we do also search for 2d arts for the menus and so on. it should be an overall concept.
The only reason the same fantasy setting is picked over and over again is because the gaming industry is incredible risk averse, so they stick to what works over and over again with no innovation .
Calling it a fantasy setting is a stretch anyway, it's always the same Tolkien esque setting with elfes, dwarves and whatever.
There is no fantasy in that fantasy.

It goes back to 2011 and without kick-starter this game would have never been made, even though the developers are veterans with reputation.
Their development story is quite interesting.
The studio wanted to make a non-fantasy medieval RPG so they went to their private investor to discuss it but he had doubts on the idea. To prove him wrong they made a Kickstarter Campaign, if their idea collected $300.000 it meant that it had a market share, and the investor would cover the remaining costs for the development.
In less than a week they collected $700.000 so the development started, the kickstart campaign was then closed at around $1M.
They moved it to another crowd-funding campaign on their site where they added many goals, each with an additional aspect that would be included in the game if the goal were reached. Right now they've stopped adding goals because they've "more money than time" to make the game.
They're currently in alpha so there's some video of it on youtube.
