I'd recommend a Raspberry Pi instead of an Arduino / microcontroller of any sort. There are console/textmode word processors like WordGrinder that is perfect and completely distraction free. With a microcontroller you might end up having to program it from scratch, which is fine if that's your thing.
I'm in the process of building a similar thing, using a RasPi Zero W and a Waveshare 7.9" eink screen with a refreshrate of between 10-15fps, I've only got the concept going and it works nicely for writing, still thinking of how best to put together a box for it and making it mobile. Thinking of gutting an old laptop.

I know of 'toasts' which are popups that show for a while at the bottom of the screen... but those only show up when I Launch Foobar2000 when I've deleted the previously being played file.

While this definitely looks interesting, it seems to be more of a phone than a tablet. It's a 5.8 inch screen, which is definitely smaller than my kindle (and probably closer to my phone) which might be a bit small. I'd also be concerned about the actual typing functionality. Is there a video of someone typing on this? I'm aware the boox tablets have different "modes" to switch between for speed vs clarity, and seem to type well on the "A2" mode, and sometimes the "X" mode (which I believe the nova air c does not have?).
I already have a bluetooth keyboard picked out, so no worries there. My requirements for a keyboard are a bit different. Namely that I want it kinda small/compact, a cute design, and some sort of dock feature to prop up my device. As a result, I'm likely going with this seemda keyboard.

How I've set it up:
I used the Buttons Remapper app. With the free version you can set it to volume up / volume down which you can use in those apps.
I bought the paid version to set the button do screen taps in the bottom right (short press) / bottom left (long press - I used 0.25 seconds) corner of the screen so it also works when I'm using the Ebro browser, Overdrive, etc.
I've just bought a coupule of cheapish bluetooth buttons as well, I'll let people here know how they go, but honestly I've enjoyed using the botton for next / previous so much more than as a back button (I use the touoch screen shortcut for that).
The only app I regularly use on my Nova 3 that this shortcut doesn't work for is RedReader :(

I am using this universal VESA adapter + this stand, however I had to tweak/modify it to for the SVD because it is so thin (which took about 2 hours but it’s all good. Having a VESA stand built it would have been awesome).
The SVD and Qi are both less mirror like than the Q5, which felt like I was staring at aluminum foil and bothered my eyes. The SVD is much more pleasant and forgiving with viewing angles, and doesn’t bother your eyes like you are staring at a mirror. It’s really well done.
The low DPI is quickly forgotten for me as I use it for spreadsheet work and business analysis (which requires reading). I too came from a 27 inch 4K Dell and the text isn’t as crisp, however it is emissive!
The size is definitely unconventional for a monitor. If you follow the company they have expressed that the 32” was a size they were already making for their outdoor signage business so it was cheapest to apply that to these monitors. Of course do I wish it was higher resolution and a bit smaller, yes. But after getting years of hot air from companies like Clearink, Pixel Qi, etc. I’m just very grateful that a company did something about it. It’s really high quality and looks like its built to withstand the elements with its metal construction. I wish this company nothing but success and I hope to see more sizes in the future.

I think that they are complete opposite: Dasung is "slow", lack shade of grey, ghosting .... but white is pretty white, contrast ok, and Q5 is super fast, unlimited shade of grey, no ghosting, just like a LCD but lot of reflection, poor contrast (without lamp shining into it).

I have the Note Air 2 and one of my biggest annoyances is not having biometric login (in this case fingerprint). The Note 5 is also considerably lighter, though difference might be smaller since I believe they switched to glass front. I still expect things to be slightly lighter though.
Don't know which version you're using but a while back version 3.something stopped working for me. The newer version worked better, though I did log that one in using an account that could be banned without consequence.

This does take effect only for newly launched programmes. ANd since I use it on a laptop, and switch between Dasung Paperlike, internal display, and other external monitor, and I never reboot (just suspend to disk), the programmes would display either too big on the other screens or too small on the Dasung Paperlike.

Based on my A5 Pro CC, go to Settings -> Apps and permissions management -> Tap manage apps -> Special app access -> Install unkown apps and enable unknown sources.

Most apps work but not all, especially those that require Google Play Services are annoying. Sometimes you only get an error and it'll still work, other times it won't do anything at all.
I'm pretty sure there's also a battery saver mode in the settings, which should help you save even more battery!
By the way, if you're going to take advantage of it for reading, I also suggest reading some comics with Tachiyomi! Add some extensions, and you practically have a whole comic library!
The "paperlike" handfeel is kind of subjective. You can modify it to a degree with different stylus nibs, but the most paperlike feel that I've felt (as opposed to just read about) is my OG Boox Note. I wouldn't recommend that because of the absence of a frontlight (and it's out of production now).
FWIW, you can use a "booklight" (like this) to read in the dark. That's what I used before I got my Note 2 and Nova Pro.
The Boox will let you read Amazon locked (AZW) files by using the Android Kindle app or by using Calibre to convert them to EPUB. Some versions of the Amazon DRM are trickier to remove than others. The Supernote can only use the Calibre option

About the useful apps, I myself installed a bunch of those from SimpleMobileTools to replace the default apps for Contacts, SMS, Dialer, Calendar, File Manager, and Gallery. They also have some other useful apps: Notes, Camera, Voice Recorder, Music Player, Flashlight, Calculator, App Launcher.
For now I like them. They are open-sources (see below about Free/Pro), with no ads, require only the bare minimum permissions (e.g. most of them don't have Internet permission), and they all follow the same theming style with a choice between a dark or a light theme.
However the free versions of the major apps won't be updated anymore, so you would need to buy the Pro versions to get the latest features and updates. That's the cost for good quality apps! (open-source is "free as in speech", not necessarily "free as in beer")
I have only downloaded the free versions for now, and I'll see if they meet my requirements. If they do, I might go for the Pro versions, at least to thanks the devs for their work!

A YouTube alternative is Newpipe https://newpipe.net/ You can download it from their website, GitHub (it's Open Source) and F-Droid. You can also login with your YouTube ID or Google account. It also blocks ads and can play audio on background without stopping. For me it loads videos slower than YouTube but my connection isn't very fast so it might be that.
It's great to hear that you do notice a change for the better with so little time. I can't wait for the reviews about the new Hisense with color, but the A5 does seem easier to hold (more compact).

For the sleep, a very good quality orange LED could be as good as tungsten (incandescent), but I've read that LEDs can have a flicker that tires the eyes. Also the color spectrum is not as well controlled. From my personal experience: I had a health issue that made my eyes tire more easily, and at this time I realized that LEDs were hurting my eyes more (even the excellent "pro" ones). So I just went with incandescent. Now that my eyes are better, I can work with LEDs again, but I keep using the incandescent bulbs since they seem better for my health.
I just use a simple 25W orange "ceramic" bulb!. It's not the best quality, with time the paint can go off, but it does the job. 25W is enough for me as a small desk light, to see my keyboard and read some paper. But other people might need something brighter.
I use a simple dimmer attached to the lamp, but you can find lamps with a dimmer switch already included. If you you go with LEDs, not all of them are dimmable by all the dimmers, so it's best to buy a LED lamp with dimmer already included.
For ambient light, I use small decorative bulbs of same type but very low luminosity like this one!.
By the way, I have a Boox Note 2 that I bought to read on the internet without tiring my eyes, and I realized that even the yellow-orange light included in the Note is more tiring than reading without it and use ambient incandescent light instead.

Well, the front light is more of a side light, and ways easier on eyes than a LCD backlight. Nevertheless I prefer external lighting, like the lamp at the bottom of this message.

Didn't use any code. I'm using 2 android apps – One is called iAWriter, I use that for actually writing (it's $5/year or $30 forever) and the other is a screen rotation control app, because the device doesn't have an on-board accelerometer, and you can otherwise only put the screen in landscape for reading.
I don't believe that exists as those LCD papers are extremely simple resistive touch devices. Actual color eink tablets start at around $350-$400+ as they are relatively new technology. If you absolutely need color at a low cost your best bet is something like a Fire HD 8 and a cheap capacitive stylus.

It isn't too bad to be honest, but I also never expected Apple Pencil quality or function, it was more a test of the concept. The palm rejection isn't great as when I'm writing I do get breaks in the lines, but the actual accuracy seems decent - Nebo does pretty good at deciphering my spider crawl, and it's more accurate than Rocketbook by an absolute mile.
It's just a shame there's nowhere to test the different makes and models, although I could probably order a couple from Amazon and return any I don't like, and the same with a RM2.

Also sharing the KINGJIM Digital memo Pomera DM30. It has a 6 inch eink screen attached to a folding keyboard, very similar to Freewrite except it has no internet connection function. It's very bare bones, just a text editor and a USB slot for you to write your files on. You can transfer the text via QR code as well (which works shockingly well). It's a very elegant package that's worth picking up if Freewrite interests you, but you don't want to pay whatever they're asking these days.
I used this a lot when I was traveling and wanted something slim and light to type on. It's a Japanese product that works with an English keyboard 98% of the time. There are little quirks in the input, for example if you hit a random function button and it converts back to Japanese text input. But I've done some good writing on this machine and I just don't use it now because I'm at home all the time and prefer my Yoga Book.

You can limit max frequency for core. Enter in Engineer Mode *1973461#, "DEBUG&LOG" -> "Power Dissipation Setting" -> "CPU Frequency". I set max frequency 1228 mHz for big claster and 614 mHz for LITTLE cluster. Best advice I can give you is to get an eink phone and install a launcher on it.
Maybe Big launcher or another type of minimalist launcher - best to try and see what fits you best.

You will need and app since likely it won't have an HDMI port, but yes. With OTG you could use whatever app you want (I prefer Epsilon Notes for notes in Markdown format) and add a keyboard and mouse to work directly in the ereader.
If you want to use it as a secondary screen you will need to install an Android app to use it as a server and connect to it from a PC. It may be slow though on eink. In Android I've tried before Spacedesk with a LCD tablet. Works reasonably well.

I use regular HDMI and USB cables. For the video I believe I bought this one plus some short HDMI cable: https://www.amazon.ca/dp/B01HQ2H4LC For power - https://www.amazon.ca/dp/B07LGC2Y7Q plus a male-to-male USB cable. But that would work even without the L-shaped adapter, added it just to make sticking out a bit less.

Note that you can't use the clips since it makes the bottom of the monitor come off of the base. I might try to find some soft clamps to keep it from falling forward if my cat decides to nudge it.
The native app doesn't "zoom" at all and seems to have a fixed canvas size. It looks like you need something more powerful such as SketchBook maybe. It's free and it is compatible with my Note. I haven't used it though, so I can't attest to the feature set.
