Just a tip for everyone. Try to keep similar abilities bound to the same button across all characters. Example: all my interrupts are bound to Q. Any health steroids are on R and quick healing spells are on E. It’s helps because then it becomes muscle memory rather than memorizing spells.
There aren't any that you're looking for for PVP, Noxxic is just PVE sims and they're not reliable, just as Simulationcraft's aren't, your best bet is to just analyze the ladder (https://worldofwarcraft.com/en-us/game/pvp/leaderboards/3v3) or check out some of the stuff on the Arenajunkies forum (http://www.arenajunkies.com/forum).
When it comes to PVP, there's no set DPS you should be doing, it's a cumulative spectrum from CC, to interrupting, to knowing when to be offensive and defensive, it's very difficult to say how much you should be doing, the idea would be: Did the enemy team die? Yes, Good, Win. Now lets say they didn't win, Why didn't we win? Was it because I missed that crucial interrupt on the Hpally that locked out his DS? Was it because you went super aggressive and over-extended and died? etc etc. It's a lot of work and I would honestly suggesting analyzing a recording of your games to find out really what's going on.
Also, Warcraftlogs > World of Logs. WOL has been abandoned by the majority of raiders, WCL is much more user friendly, with, imo a much better user experience.
Teamspeak is a voice chat program that you download on your computer. The other two programs that are used by the WoW community are Ventrilo (Vent) and Mumble. It's nearly impossible to do any kind of organized raiding without one of these.

Have you seen the razer Tartarus gaming keyboard? After switching from the standard keyboard, I have much less finger strain and my hand is able to stay in a much more neutral position while playing. Not sure if it suits your needs, but figured I’d share!
Blizzard's PvP Overview talks about this. There are no more PvP stats. In fact your gear stats don't matter either. Only the average ilvl, and only a little bit. At 110 you'll be able to also use Honor Talents. So everything else you get is cosmetic.
What honor token things are you getting?
I use a razer Gamepad and use the bartender addon to match my on-screen action bar layout to the layout of the keys.
I find it so much easier to identify what my keys are and use the joystick for sidestep and forward/back movement. I would not be able to play wow without it and keep a spare handy.
As far as losing your target, I quickly get overwhelmed when keeping track while fighting multiple mobs. I set me main target health bar to be a fair bit larger than the other mobs in the group and always use a Personal spotlight to keep track of myself when playing melee.
Keep in mind that you don't have to be a an amazing player to enjoy the game either.
You are arguing semantics. It's the same thing. For example, Amazon still refers to it as the "Battle Chest Box". As does Bestbuy and dozens of other retailers I found through google.

Judging by your gear you shouldn't be expecting to do any amount of decent damage really. Aim to raise your ilvl as high as possible through gear from argus or lfr or normal antorus. You need to grind leggos hardcore only having one legendary is also lowering your dps by a far bit. Just letting you know legendary shoulders are a huge part of rogues burst damage, so not having those is gonna be pretty crap. Shoulders let you have HUGE aoe burst damage in dungeons.
Set bonuses/trinkets are also a huge part of a rogues damage. For example, most rogues are using 2pt20 from ToS and 2pt21 from antorus both these set bonuses result in a huge dps gain. Specter of betrayal is also an amazing trinket for rogues. Gear is a big hindrance for you currently. Keep in mind most the people from the rogue discord consider the icy-veins guide for sub rogue to be pretty bad.

Cata broke me on the game, but I returned in October or so - I used the links in this article via Lifehacker, which starts off with some lore update video suggestions, short as well as long. There are summaries on Wowhead as well for each expansion, including quick lore updates.
Some realms share a single auction house. They are called 'connected realms.' It looks like this is the most up to date list on the connected realms. But normal auction houses are not connected across faction. If I recall, the neutral auction houses are. I believe there is at least one of those neutral AH's in Booty Bay.

Most classes are going to require a similar amount of input, whether they're GCD-capped or Energy-capped. Sadly, I'm not sure that switching specs or classes is going to solve your issue. I think it's more a problem of control scheme and keybindings.
I'm of the opinion that any serious WoW player could benefit from an MMO mouse, but I think it's especially true for you. The Logitech G600 is a fantastic tool, and you can get one for about $50 on Amazon.
This would allow you to put all of your main abilities under your right thumb, leaving your left hand responsible only for WASD, Shift, Space, and maybe Q/E/R/F or any other buttons you find comfortable to reach. Might be something to look into if the standard control scheme is uncomfortable for you.
As a fellow mount/achieve collector, I also use WoW Mount Tracker (Play Store App - Android only though) to help me plan my next targets. It has every mount achievable in the game with links to wowdb/wowhead for info on how to obtain them. It sports a cool route planner for all the dungeon/raid mounts too for efficient farming. You can favorite mounts and they will show up on your main page and when obtained they are highlighted. I use that to see what I've been able to get vs what's left. The grind to 300 is real though (the one collect achieve I'm really after).
There's also this website that has a route planner, but seems like that's the only feature there.
Portal doesn't appear until you've been there. Go to the board outside the Warchief building, grab the Quest "The Art of War" and it'll fly you there. I dont think you'll have flying until you buy it in Pandaria, so it's a chore to get to the Temple of the whatever.
I was a half-clicker until 2020 (used key binds for my left hand and then clicked anything that I couldn't reach) but then got a gaming mouse and its so much better. I got a Logitech G600 and love it. Not only does it have 12 buttons on the side, but there is a third button on top that acts like CTRL so the 12 buttons really becomes 24. Encounters are so much smoother now

For help with your rotation, you can check out places like the Mage Discord or guides from high-end raiders.
That said, even with a perfect rotation, the 'problem' is that you are 456 item level. The Fire mages that are pulling off insane damage have more like a 470 level, usually stacking very hefty amounts of Crit-boosting Corruptions, which is what allows them to have such crazy numbers. Don't feel bad about not matching their output- it's like comparing a regular hacksaw to a chainsaw. You'll get there with more gear.
I'm going to try to address things that haven't been addressed. First, you're on the right track if you intend to start with WC3. There's some lore attached to the first two games, but I wouldn't recommend playing them. First, they just don't hold up in terms of gameplay. Second, it was clear that Blizz had no idea they were building a huge franchise that would span decades; they clearly didn't put too much thought into the story. I'd suggest looking up a brief recap of these two, then jumping into WC3. WC3 does hold up incredibly well and is an amazing game, both in terms of gameplay and story.
Some people have mentioned that Cata revamped the level 1-60 zones and quests, but I think this needs some elaboration. Some of the quests were replaced, others were altered, and others remain the same. So some of what you will be seeing reflects the vanilla state of the WC universe while other stuff reflects the state of the cata ere WC universe. So sometimes it's like everything from TBC, WotLK, and Cata happened, and sometimes it's like it didn't. Then you go on to TBC an WotLK, where the events of Cata are yet to come, then you move on to Cata. To put it mildly, it's a mess and won't make any sense whatsoever. If you're interested in lore, you have two options. You can play on a private server to get the vanilla experience, or you can read a recap of it and jump ahead to TBC. I've personally had a lot of fun on p-servers, but it's not for everyone. There's a ton of drama in the p-server scene right now, and the leveling process is far slower than in current retail.
If you want a brief recap of events, check this out. If you have more time, as other's have suggested Nobble87 does a good job. Just keep in mind that you need a LOT of time to sort through his stuff. Each of his videos is hours long and focuses on specific details. It would take you days to get any sort of overarching idea of what's going on.
Am left-handed, it does get easier as time goes on, especially once you take computer classes to teach you to type "properly". Anyway, the keys are for mythic +. Which is like greater rifts in Diablo 3 if you played it. In WoW, there are 3 difficulties for dungeons .. Normal, heroic, mythic. Mythic + is kinda an endless scaling dungeon, but can only be activated by a key or keystone. I played TBC-Panda and skipped WoD. This expansion pulls the best from all the previous expansions. The other thing is there is WoW tokens so if you can or are good at making Gold in game you can pay your time and exchange for BNet balance to buy the upgrade.

I was on the fence about this for a while. I had keyboard binds like shift + 1, shift + 2 etc ... But there is only so many I can realistically do.
Now I have a mouse with 12 buttons on the side. I only use 9 of them because the 10-12 at the back are not natural for my thumb to reach.
I essentially have 18 new buttons. Each button on its own and ctrl + mouse side button.
I still use 1-4 and shift + 1-4, q and e. A and D are bound to strafe. I don't need turn keys bound.
In total, I have 28 buttons for skills bound. I've not found I need more but now I wonder how I played without a mouse like this.

To add to the concept of macros and hotkeys for key phrases:
Addon keypads provide another method of issuing macroed communications without having to deal with keybinds on the main keyboard:
Elgato's Streamdecks (not cheap; 15, 32, and 6 key versions); and Koolertron's Mini Keypads (a bear to learn to program, but rockin' it once you have it dialed) are the two I use. Keybinds for actions and phrases are necessary for me (arthritis makes typing long phrases awkward when things move at the speed of WoW). The Elgato boards also allow custom icons for each key providing a quick visual of what each is for.
Im using my old macro board from razer i got the very first edition of it maybe like 10 years old still working like a charm macro board with ur thumb u can move around and jump and with your other fingers its easy to do the rotation. Sometimes i catch myself jumping like a retard while doing my rotation just for fun. Trust me once u tryed it you will never go back to normal keybord in wow. They only time you will need the keyboard is for typing in chat or opening inventory etc.

I also use elvui and enables shift and alt modifiers so I can switch between my bars and keep using my mouse.
