I use the downloadhelper plugin for firefox . It puts a little icon beside your address bar. It lets you know when you can download any of the videos on a page you are on. click it once and it downloads the video. Works great for vimeo as well.

You can use DownloadHelper to download most FLV (Flash) videos... though it often requires a flash viewer starting up before it can/will grab the video (or, at least I've not figured out a consistent way around this, myself).
Also, VideoLAN's VLC Player will play most formats, including FLV.

If you use Firefox, Download Helper is a fantastic add-on. Alternatively, you can use KeepVid which supposedly works well and does not require installing any extensions, but I've never really used it. I prefer these to the freemake tool since these are more OS "independent."

I have used Video DownloadHelper to download a race but I wasn't able to choose the quality so it was 540p or something.
And it will get throttled. The video will be sent to you at the pace that you would normally watch it at, so it will likely take as long to download as it takes to stream the whole thing.
Try a few different video downloader addons/extensions, see if anything works better for you.
Your other option is Usenet. Races from BT Sport are posted there in HD. I get those for saving. For example, I went to Indy, so I downloaded those races in 1080p. Better commentary too.
If your ISP has a Usenet server, you can try a few NZB indexer sites, download an "nzb" file there, load it up into an nzb downloader, point it at your ISP's usenet server and go at it. If you're new to all this, google for more info, or ask me for help.

It's too bad there isn't an easier audio-only type of site but youtube will do for now. For those who want to save the audio since the video isn't too important for many of these:
in firefox I use video download helper or the keepvid.com site to get the URL for downloading, then for pause/resume & speed-control I also use the downthemall add on for firefox.
In the URL there may be no title. If there is it has &title= as the start of it. If you change this in the URL before saving it that becomes your file name.
With both keepvid & video downloadhelper I choose the format 3gp which is cell/mobile, highly compressed, audio is not super-high quality but for a monologue or conversation instead of music it's perfect. The file sizes are so tiny even when I convert to mp3 they just get bigger and aren't better quality so I leave them as-is (and they play fine in VLC).
I use videodownload helper or keepvid.com: the reason is you can select various video quality levels and file size or you can use audio. When I get problems with audio-only I just get the video in mp4 480p or 3gp cell quality, strip the audio myself with audacity and erase the video file. Sometimes 3gp is even smaller though so I just keep that file as-is.
Don't know if they know. I checked the page for the add-on on Mozilla's official add-on page, and some users said the current beta version of DownloadHelper works with Firefox v36.

First of all, depending on your location, and what you are streaming, it could be illegal. Don't do anything illegal.
Now on to the answer.You say you stream. Then you can Dl it too. I don't know how to do it with anything but firefox, but on firefox it is easy. Just install the addon DownloadHelper. This will give you an icon you can click to DL whatever media is on the current page. This is the best way to do it, as it is for legal things too. I use it all the time to offline my Youtube subs for later viewing
XBMC WINS for all media playing, I use it for all media playing, including video's I DL with the firefox plugin.
In order to be complete, I would also say you can install XBMC, and get the CLIQ addon, from xbmchub.com. This makes streaming easier as well as letting you DL anything too. Not sure how, as I never used it, but I know you can use it.
I've personally had great success with the Video DownloadHelper plugin for Firefox. I'm a chrome-person my self, but it's difficult to find good video download plugins for Chrome as any plugin that can grab from youtube gets banned from the official channels. I use firefox with downloadhelper to get the .flv. I then use Super to convert it to .wav. Not sure if it's the best way, but it works.

It updates regularly and offers to convert from .flv to anything you wish, but that does cost extra. Frankly it isn't needed as there are plenty of free .flv viewers out there.
Most often I can just play the flv/mp4 files without issue, but if I did want to convert, my main go-to convertor is X-Media Recode. Link goes to portable freeware which can help you change the language away from its default German. Great program, though, and free. And it has presets for multiple formats. It may be a tad more complicated than what you are use to, though. Having looked at FileBlender, it looks quite nice, and may be a better option (and I'm going to go check it out now).

If you have connectivity issues, try to connect your PC to your modem with a Ethernet cable, and see if it's better.
If you actually want a faster playback, download the video off Youtube using DownloadHelper, then play it in VLC. 2x playback is no problem; 4x playback will work, but with no sound; 16x playback is, IIRC, the limit.

Saving the videos is simple. If you have Firefox, I use an addon called Video Download Helper that lets me grab streaming .flv files off sites like this one and basically any other popular tube site (porn or otherwise) so that I can hang onto them for safe keeping in case they disappear. I'm sure there's similar tools for Chrome or Opera or whatever browser you may be using...

It can download most youtube videos and most videos from all other sites. The only drawback is that for some videos it has to download the individual download streams and then aggregate them together which can take time and cpu.
For some videos you need to install a companion app that runs (automatically triggered from within firefox) within windows - this is only used for certain video formats which need the aggregation.
I have found it able to download videos that I have not been able to download with anyother software.
The only negative thing about the add-in is that videos that use the companion app get a watermark at the top left corner but it is small enough to ignore.

If you're doing that manually for every video, I like to use the free version of Video DownloadHelper in Firefox with the helper app installed. It'll detect the video elements and give you a nice easy interface to download. It works well if there are multiple videos on the page as well.
Also - you don't need to go for premium. I haven't and it's working fine.

If you don't mind a command line youtube-dl is very good. It can download a whole playlist.
You can use PotPlayer to play youtube videos, it has also the youtube skin, borderless window mode with option to have the navigation bar and playlist auto-hidden also in window mode, so it can be used to have 100% video, you can use ctrl+c in browser and ctrl+v in PotPlayer to play it, or just drag&drop.
To play other non-youtube videos use extenstion, e.g. Video DownloadHelper.

you're right clicking on the download icon that turns red when you hover over it, correct? if that's not working you have other options to download this. Hopefully you're using firefox otherwise this won't help you.
you can go to options>applications and change the action that happens when you click on the link. Should be something like content type then the default action. change the default action to always ask or save file for whatever the content type that website uses.
Or you can install Download Helper you can use that to download streaming media for most websites. I assume when you left click on the link, it plays audio through the browser. you can use that add-on to download it.
what I use is DownThemAll! . It's a better download manager for firefox and adds more options to your right click menu.

shit has been a mainstay in my browser extensions for nigh on two years, don't know how i ever did without it. its only real weakness is that it works very sporadically on soundcloud.

I've taken to just using the DownloadHelper extension in Firefox for any YouTube vid that is more than a few minutes long. That way I can just download the HD version of the YouTube video, and play it on my desktop in VLC Media player. Works on a lot of other sites, too. It adds a step or two (really just a right-click, a click, and a double-click), but I get smooth TV-like playback (especially on HD vids), with rewind, playback speed control, no buffering, etc.
Bonus: Now I have a copy of the vid I just viewed, in case I want to keep it for some reason. Since YouTube has a ton of BBC documentaries (Ha! Take that, PirateBay!), this is very handy.

I like to grab videos of any appreciable length with a downloader like dwhelper and watch it with a decent player, not in a browser.
And even if your connection is fast enough to stream it, if you do it this way you can start to play the download immediately, thus enjoying the ability to play it back in VLC or whatever right away.

Advantages:
Any extension for your browser which saves streams (such as downloadhelper for firefox). Many sites are supported and for download helper the icon becomes "active", showing that something is currently being streamed and can be saved. Works on youtube, soundcloud, and many others. If the artist has put it up to be streamed, I don't see how saving it can be argued as piracy (but then I'm not an expert on the subject).
Another more general solution: there's a number of browser addins that allow you to download Youtube videos directly (I use DownloadHelper for Firefox but there are plenty of others out there). If you want to show your kid stuff from Youtube on a tablet with Youtube locked out you can collect it that way ahead of time.

I agree with MyLittleVisuals though. I prefer the 720p iTunes rips, and it's a real shame that Hasbro have chosen to distribute their content through one of the largest proponents of DRM. Until I can legally obtain MLP episodes in the UK without DRM, then I'm afraid I'll continue to download them for free.
In (some) theory downloading copyrighted material isn't illegal, it's the uploading of it that is. The crime is in making and distributing a copy without permission, not in receiving it. And even then when it's under a certain threshold it's usually a civil matter rather than a criminal one.
But not only am I not a lawyer, not even a lawyer could really say for sure. Copyright law was originally written in an era where printing presses were the cat's pyjamas, it doesn't map very well to the modern Internet and modern computing. And of course it varies from jurisdiction to jurisdiction.
Anyway, as far as safety rituals are concerned I don't think any are needed for this if you use the direct download from PonyArchive approach mentioned by Snivian. If you want to be absolutely paranoidly sure, however, install a browers addon such as DownloadHelper and rip the videos from YouTube. There is no way that anyone outside of your computer can tell whether you're saving the video to disk or just watching it normally in Flash.
Downloadhelper is a bit of a resource hog in Firefox, but it's stupidly handy for downloading this type of stuff. It was able to detect that file on that page just fine.

To answer the second part first, that's already been done. The second part, no. Music has licensing rights, which include when, were, and how it can be used. To use a real world example, let's say Arista Records publishes a new artists music video on youtube. Youtube has now been licensed to play the music video. Were you to download the music from youtube, you'd be bypassing Artista's licensing rights, and be afoul of the law.
DownloadHelper should help in terms of downloading the videos. Choose the mp4 downloads, as they're higher quality. When you download the video, you can call it whatever you'd like. You can download as many as you want at any given time, supposing your internet connection can take the downloads.. Best to do only one or two at a time, else they do tend to take quite a while.
As for playing, VLC is what I'd recommend. If you're on Windows, you could consider something such as the CCCP (Combined Community Codec Pack) if you need to play .flv files (I still prefer VLC for those). If you're downloading the mp4 files though, and you're on Windows 7 (or any Mac.. I'm not sure about random Linux distros) mp4 support is built in.
