Edit: A coworker got the F.3.0.03, dumped the apk and sent it to me. Didn't enable RCS for me. I force stopped messages, cleared cache, rebooted phone, no love. All my other app versions are same as OP.

APKmirror is a safe website to use. ML Manager can be used to extract APKs, no root required for regular apps but system apps will need root.
There are non-root apps that do that one click, so... :-)
(getting the APK is easy for apps, just not the saved data of an app)

There's an app on the Playstore which is able to extract the APK from the phone, if some kind soul has Canvas installed and is happy to help.

You'll need to download it to your phone & extract it to side load, being it's not compatible with the Shield "officially" to download directly.
That likely means it'll require a mouse & keyboard or air mouse to use it, as well.

There are many similar backup apps available but these two are the ones I've used.

Install it on your old phone, back up that version of the app you want, put it on your Dropbox or wherever you backup your files. Install that backed up apk on your new phone. This way you know the Install file hasn't been modified.
I back up any app I use a lot just in case there are radical changes when it's updated. Not one to trust websites when looking for old versions.
Simply connect to adb. Open a PowerShell type "adb uninstall package name.apk"
Replace 'package name' with the actual package name. You can check the package name with this app
Don't forget to enable developer options, symply by tapping 'build number' several times.

Install ML Manager and extract it from your old phone. Email, Dropbox or nearby share it to your new phone.
Then you have the original apk and not one that was possibly modified on websites.

When you install an APK, it is like installing the app again. Previous data will not appear again, if it has been deleted.

You could potentially side load the apps (get them from a reputable source, apkmirror or download to your phone via play store and extract the apk with ML Manager )?

I use the pro version to backup apks before upgrade apps I use daily (just in case the update breaks something). You can install it and see if it sees that Snapchat is already installed and uninstall it via ML Manager. The reinstall snapchat from the Google Play.

Apparently you got a new version of the camera app that is meant to be only for internal usage at Google (dogfood is because they eat it before publishing for all).

Transfer them to your Kindle manually via PC or SD card or whatever. Then install them.
Option 2 is pirating those apps from somewhere.

Just extract the APk and upload it somewhere, should be a couple of mb. There's a reasonable chance that it will install just fine on older firmware.
