Well for one thing there's tonnes of games like pokemon, either tangentally or direct clones, but when it comes to High budget AAA games with similar mechanics it's because Pokemon has basically dominated that particular niche, like The Sims franchise has for their genre.

I've never played it before but I Googled "games similar to Animal Crossing" and this list came up. At the bottom is Viva Pinata, which looks and sounds similar:

I enjoyed Scarface but I think given its age you have to have an appreciation for older games (ie; can accept less polish/graphics, etc.) as I feel most of that enjoyment is more nostalgia than anything. As someone else as mentioned its like Vice City level of GTA

I'm not sure if this is up your alley but you could go for some rather different choices.
Team Fortress 2 is a rather infamous FPS with one of the highest regards towards multiplayer. With Team Fortress 2, you could find countless variations of this type of gameplay. Some are better than others but there are loads of FPS' that are a bit off from the grit that is Arma or Battlefield and yet are still fun, casual and tactical.
A game that I've found particular enjoyment in lately is *Gotham City Imposter*s. It's player base is strong. It's gameplay is solid and it works quite well both in a casual and tactical sense.
There are a plethora of options if you are willing to open your horizons a bit. You could stick to some mainstream names like Halo, Medal of Honor, and/or even Titanfall, if you'd like. Planetside 2 is often a popular choice as well. Crysis 3 offers a unique multiplayer experience, as well as many others. I mean, hell, it all depends on what you're looking for.
If you find yourself in a rut, you could always check out gameslikefinder. It may not have the reality of players telling you about games they've played or if the games are up your alley but it's certainly a good directory for you to waltz through and poke around a bit.
My advice would be to take a dabble in Team Fortress 2 and see if it fulfills your needs. It's free and will only cost you your time. Planetside 2 is in the same scenario and it may be something more up your alley (judging from your games list).
Instead of trying to aim down your scopes, try taking a shot in the dark. Who knows? You might just hit something.
Definitely look towards the latest Tropico (any of the games will serve you well really) and Banished.

I can similarly lament the lack of paid opportunities for people who want to write cookbooks on creative use of jello. I can write miles of exposition about how not being able to get a full time job writing books on jello cooking is harmful and denigrating.

When there's not a team of 100 employing random non-developer "idea persons" off the internet to make a mobile game it's because a) not so many are needed, b) they don't make all that much money usually, c) they would rather spend that salary on actual programmers.

If you want more shooters then I would recommend either the Borderlands series or Loadout (free on Steam, doesn't really have a loot system it's more of a randomised create your own weapon system).
As far as more traditional action RPGs go with good loot systems:

Hmm, for the price id say just try it. Ive logged over 100 hours on it and still go back to it regularly. The fact that you can customize and add to the game to your own liking might just push you over the edge. Maybe try some YouTube videos to get a feel of the game, I suggest some of the more story driven ones as that’s where the game hits home for me.
Other than that perhaps city skylines might tickle your fancy. Or banished.

Gothic 2 with expansion Night of the Raven - all dialogues spoken and not that easy at the beginning.
Dark Messiah of Might and Magic - rather easy and fun, arcade-like controls.
Morrowind - if you haven't looked at it and yet. It's a lot of text to read and not much spoken dialogue, but great story and atmosphere imho.

There aren't too many games really similar to Stardew out there for PC. Here is a site that makes some recommendations, but honestly, nothing on PC compares to Stardew in terms of overall experience.
You're best bet for a PC find is probably going to be isolating what you like best about Stardew -- the management aspect, the relationship building, the exploration of the mines, etc -- and focusing on games that cater to that. Or, there are plenty of games out there for handhelds especially that are great. Harvest Moon, Rune Factory, even Animal Crossing.
ARK: Survival Evolved, Unturned, Terraria, Starbound, 7 Days to Die, Don't Starve: Together, Space Engineers.

Yeah, no hard feelings, i was just messing with you. Not every game is for everyone, people just told you that because almost all of us sucked at the game at the begining and we got better by trial and error, but you might just don't like that type of gaming.
I'm afraid that i don't know any game that has a similar style, but, if you already own DS, you could try playing it by following a video guide that tells you tips and secrets. Anyway, the 70 hours don't come all through grinding, the game itself is quite long, so even if you did a straight run, it would take hours.

Taking a well-established game's creative ideas, art direction, and gameplay mechanics, and simply slapping "VR friendly" on it can only be described as "low effort".
If someone is insulted by that, I hope they feel insulted enough to make something unique. How many low effort, derivative Minecraft clones do you need to have on the market before you get fed up and ask for a bit more when you read the hyperbole the developers are spitting out?
And it's not even a unique concept in VR - Minecrift already does FPV voxel world building in VR. So what's new here? Only a very minor difference - shooting voxels with a gun. I'm pretty sure there was chatter that guns had been modded into Minecraft too.

this is actually a good list, I can see aspects of GoW in all these games.
I would also add games like Diablo 3, torchlight 2, and sacred 2, while they lack the flair of GoW, they do have that hordes of enemies to destroy gameplay.
There's lots of Pokemon clones, they just either aren't good or deviate so far from the formula that you can barely call them clones anymore.

I'm not sure but I think Pokemon was originally a clone of the Shin Megami Tensei Devil Children series, or if not directly, then at least inspired by Shin Megami Tensei, which I'm pretty sure came first and has similar mechanics.
Ha, I actually played and finished D for the first time just a few days ago! Yes the gameplay and controls are pretty much like that, although nowhere near as excruciatingly slow as D was. Also, the environment was nowhere as "realistic" (lol) as D was. I mean despite all the fantasy stuff, D still had actual rooms, doors, furniture, stairs, etc. The environment in game I thinking of was much more abstract. I'm staring to think it was just a really mediocre game that wasn't well documented. I've checked lists like these, but still no luck.

Farm For Your Life was barely worth the $2.09 I spent for it after discounts. There was no development; it got really boring after a while even though it looked promising at first. Really just monotonous. Lots of glitches that game dev never fixed. I just beat it a few hours ago. I was so close to the end that I just forced myself to lol. But really, don't bother.

Not so much a game, as a CAD system, but perhaps check out AutoCAD Civil 3D or such. That definitely allows you to create whatever you want at basically any level of detail, although there isn't really any game involved past the creation aspect. If you are simply looking to create a city, this is your best bet though, and it allows you to track materials and what not with database/spreadsheet support as well.

LinCity: Game similar to Sim City but built on an open-source platform. I haven't played around much with the game, but it's free and perhaps you can change the code around or find some modifications for it since it's a free, widely available game. Link
CitiesXL Platinum: Again a Sim City-like game, but a bit fancier, and has modding capabilities. Take a look into mods, perhaps there is a "hard" mode or such that might match some of your criteria to better make the game work for you. Link
I think these games, along with the modding community available are the best bet for what you're looking for. I would look into them and also check out the forums and what not to see what others are doing with each game. Like you said, Civ. games are a smaller/niche genre, but hopefully this helps some!
Edit: After further browsing, it really looks like CitiesXL is going to be your most "detail oriented" game in terms of being able to micro-manage different aspects of building the city and what not. The game also appears to allow you to create a network of all your different cities that you build to expand past just the "city" level and into a larger community as well.
I had a look on the internet, and there is this game. Calls itself Magician's quest, and it seems very much like animal crossing. So maybe it's worth a look?
