You can use an alternate launcher which has integrated the 'feature' such as Action Launcher or Nova Launcher .
For what it's worth, Action Launcher 3 has a similar feature, the key difference being that the letter shortcuts are listed on the right side of a vertical app drawer, as seen here. You can tap on them to go straight to that letter, as you mentioned, and the launcher can be customized to a good degree. It's been my go to for years.
I've been using Action Launcher for a few years now and love it. I'd recommend checking it out and see if it's to your taste.
This is a feature of Nougat in an attempt to have consistency across icons. Your only real option is a custom launcher. Some, like Action Launcher, allow you to just disable round icons. Others, you may need to use an icon pack.

Nova is awesome but there are just things that action launcher does better. Its the first thing I put on any device.
And good look on the galaxy apps store. So close to a nexus look on a Samsung phone! Who would have thought that Samsung would be the one to bring it to us.
This is one of the big reasons I will be sticking with an Android phone for the forseeable future. Between being able to run interfaces that are everything from a tweaked version of the stock Android Pie launcher to one that is lifted straight out of the 24th century, you can make your phone almost whatever you want.
I use Action Launcher 3 (or I guess it's called "Action Launcher: Pixel Edition" now). I haven't used the Pixel Launcher before but as I understand it AL3 is a lot like the Pixel Launcher, but a bit more customizable.
Acton Launcher 3, If you are like me and like a minimalist look and feel but wiith tons of function, AL3 doesn’t fall short. You can have widgets hidden but when you swipe up on an app it shows the widget. While this is a pro feature the base version has tons of functionality.
You can get a very similar effect using the Quickdrawer in Action Launcher.

Action Launcher also has the same pop-up widget feature if you're looking to try something different yet keep the pop-up widgets.

It won't make your phone much faster (if at all), but custom launchers definitely go far beyond just looks (though that is a big part). If you have Nova Prime (which is definitely recommended, it's one of the few paid apps I use on a regular basis), you can customize gestures that allow you to perform certain actions on the phone or open apps, and they can be really useful. For instance, I have a gesture to swipe down on the home screen to expand my notifications, which is useful when I'm handling my ~~6'~~ 6" monstrosity with one hand. I've also mapped a home button press to open the camera, so that I can single tap if I'm on the home screen or double tap elsewhere and jump straight into the camera.
You can also organize your app drawer with tabs, and hide apps that you don't need or don't want to see. Ultimately, it's most about changing the phone to behave the way you want it to. There are a huge number of custom launchers out there, but the two most highly regarded (at least among enthusiasts) are Action Launcher 3 and Nova Launcher. Both have super responsive developers that add new features really often (although admittedly Action Launcher does tend to get them first). I personally use Nova full time, but it's really down to personal preference. You should give both a try!
I'm using Action Launcher 3 which has a feature called "Shutters". Essentially, if I swipe up or down on those icons, it makes the widget that corresponds to that app appear :-)

Action launcher 3 And Nova Launcher Are popular options. You can switch launcher by going to Settings > Apps > gear in upper right corner > click home app, choose which installed launcher you want.
Both of these have a ton of options, long hold on the home screen to get to your launcher settings.
I use Action Launcher 3, because I still think it's the best launcher out there. It has the customization aspects you'd find with something like Nova, but it also has some great value-add features you don't see other places (Quickdrawer, Quickslide, etc.)
Maybe I'm just jaded because I've been using custom Launchers since the Launcher Pro > ADW > Nova > Apex > Aviate (RIP) > Nova days... before settling on Action Launcher 3. But the Nova Launchers of the world out there are just better versions of the same AOSP launcher. AL3 has all that + some unique stuff, without all the crap that you see littering some of the other offerings in the store.

To change your V10's look up a bit to make it cleaner and more functional, download Action Launcher 3.
I'm not trying to advertise the app because I have some vested interest in it, however I've seen how LG's software skin looks and I think there is better looking stuff on the Play Store.
Some highlights of Action Launcher include the fact that you can open up an app's widget just by swiping up on the app's icon on your home screen, you can quickly search and open apps using your keyboard and much better visual design.

I like to keep things minimalist. The icons at the bottom can also be swiped open to show communication, social, media, internet and photo apps retrospectively left to right. The wallpaper also cycles through a collection of my favourite photos every half hour using the Wallpaper Changer app. It's a nice system I've had for about a year now which I've grown very used to :)
If you've somehow never heard of Action Launcher 3 I can thoroughly recommend it, the cover folders feature is very neat indeed.

Basically the Google Search Bar color changes based on the wallpaper color. And my wallpaper is Muzei, so every few hours the color scheme changes. Very neat!
I really tried to use the stock Pixel launcher but I just can't escape Action Launcher
For me personally, the single biggest reason that I use this launcher or anything else (Nova, Apex, etc) is the shutter features for app folders. It sounds so pedantic and meaningless but once you use it you'll never be able to go back.
So what it is, is instead of putting a folder on your screen that you click into to then click and open an app, it takes the first app in the folder and makes it the shutter cover for the folder. So let's say you have 4 messaging apps on your phone (Whatsapp, Discord, FB Messenger, and Slack) but your main group chats are all in Whatsapp so you open Whatsapp like 80% of the time and the other ones a little less frequently. So if you put them all in a folder together but then put Whatsapp first in the folder then Whatsapp becomes the shutter cover.
What this means is, if you click the WhatsApp shutter it acts like an icon then Whatsapp opens up, if you swipe up on the WhatsApp shutter then it acts like a folder and then it opens up the folder so you can select FB, or whatever you use.
Again it sounds so simple and dumb but man is it such a convenient feature that you will miss once you get rid of it. Plus it looks so much cleaner to not have folders but icons on your dock, imo
I have been using Action Launcher for years with a lot of success. The developer actively develops & adds features all of the time. It works well with One UI 4 & 5. (I'm on the UI 5 beta now).

Yes, it's version 1.3.0.beta.1 from Google Play. And as you can see from the AutoInput icon, I haven't themed my app drawer icons.
I extracted the APK (via Yalp Store's "Get local apk" option), and copied it. The images in the mipmap directories match the coloring I'm seeing. Surely you're not asserting that you see orange in your file manager?
I installed AutoBarcode beta in BlueStacks (emulating OnePlus 3T with Android 7.1.1) and Nova Launcher in it with adaptive enabled does show an orange background for it (so clearly there's some color inversion going on for the color but not for the white stripes), but Lightning Launcher in it doesn't. I also tried Action Launcher and it, too, is showing the non-orange background in BlueStacks (but does appear to be showing adaptive icons, as the backgrounds for Tasker and Play Store are white discs).
I installed Nova Launcher on my 6.0.1 Note 4. After I spent the few minutes waiting for the app drawer icons to become available (ugh, it should've at least showed an hourglass or progress indication, it boggles my mind as to how people think so highly of it), it showed the same non-orange background until I enabled adaptive icons, then it showed the orange background.
Edit: On second thought, scratch what I said about Action Launcher showing adaptive icons; I had the "Round" Icon style enabled. Adaptive icons is set to "Default", and I'm unwilling to spend $4.99 to change it.

The "quickpage" (separate widget page) height is fixed though so you can't scroll it.
The launcher supports all the common gestures. It does also have a feature where you can setup an action on an icon (shutter) to swipe up and displays a popup widget or you can set folder as covers to open a specific app on tap and reveals folder content on swipe up,
Anyway, Nova has issues with icon packs and is probably one of the worst Launchers to handle changing icons individually. Most icon packs work on it, but too often you get the odd ones (Polycon is one of those) that won't work. Currently I bought Action Launcher mostly for its superior icon-selecting implementation.
PS: You can apply the icon pack system wide or backup iconpack app as APK → change APK to ZIP → extract APK to get the icons as PNGs in your gallery. But that's too bothersome unless it is a really good icon & you can't depart from Nova.

Probably not the solution that you're looking for, but you may want to consider a third-party launcher until the Pixel launcher has gotten a couple more updates to iron out bugs. These two are quite popular:

I also have it on a quick setting tile (via AutoNotification), but most of the time I actually just use it by triple tapping home button (on Action Launcher), paying via Android Pay and triple tapping it again.
You can just make a profile where exiting the app triggers this task, too, if you want :)

Here's the wallpaper, and I use Action Launcher 3 as the launcher. It's got some neat features, like changing the search bar, folder colors, etc.
All the time or just on the home screen? Action Launcher 3 has an option to hide the status bar on the home screen. You swipe down on a blank part of the home screen to get it back temporarily. The bar is not hidden when inside an app though.
As many are saying here, there is an LG theme store, but it's pretty shit.
My workaround? Different launcher. Personally, I've been using Action Launcher 3 (unlocked), and I really like a lot of the features it offers. Here's a shot of my homescreen, as a taste. That, along with Swyftkey or Google Keyboard (depending on how I'm feeling at the time), and my G4 doesn't look anything like stock. And I was able to do all this without a root (still a little nervous about doing that; one of these days)!
FYI, this is on an H811 T-Mobile variant, in the US. Not sure if that makes a difference (I really doubt it will), but it's good info to have.

Google maps - you can create a widget to go to a destination, I pair this with
Google Phone - "dial contact" widget and have pinned all my stores and store managers into a folder so I can easily call/navigate to one at the click of a button.
Real calc - have a calculator as a widget ready to go. I'm not sure if I like this better than the tile calc, still testing.
Stuff Todo - a widget to-list. Easy and keeps me organized.
Calendar - monthly view. Easily check my schedule and availability for planning meetings and other things.

Launcher: Action Launcher. I know everyone will say Nova is better, but I prefer Action Launcher just now. One reason is the indicator on an icon when there are available shortcuts to use as I can never remember which apps have them.
Internet Browser: Samsung Internet Browser. Samsung have added a few useful features to their browser including ad blocking via extensions, night mode and a pop out video player. The scrolling also seems smoother than Chrome.
Clock/Calendar etc Widget: Chronus. I've been using Chronus for years. It provides many customisable widgets for everything I use.
SMS: YAATA. Very customisable SMS app with useful features such as blocking SMS, auto respond etc.
Keyboard: SwiftKey. I've been using SwiftKey since it first released as a paid app. It's built up such a large personalised dictionary for me, that it feels like I'm hampered when using any other keyboard.
Launcher app - adds some pretty neat features to the homescreen. You can slide from the left to open a (in my opinion) better app drawer, and if you slide from the right, there's a mini homescreen which you can put widgets or icons on. Instead of folders for apps, you can have covers, which by tapping on once opens one app, but by sliding up it opens a folder. You can also show widgets for an app by sliding up on the icon.
<strong>Unclouded - Free with in-app purchases</strong>
A cloud manager - allows you to access Google Drive, Dropbox, OneDrive and so on from one app. Even if you only use Google Drive, I'd recommend using this, as the app is so much faster, responsive and intuitive.
<strong>Ambio - Free, but you can buy sound packs</strong>
This app allows you to create sets of ambient sounds, such as waves, thunder or rain, in order to help you fall asleep, study and so on. Without paying a dime, there's already a lot of sounds and pre-made ambient mixes to use.

I don't think that Relay is a great representation of material, but i understand the functional part that you're mentioning.
My favourite material apps are:
action launcher - i prefer it to nova since because i like the quickpage and quickbar costumizations. And all the shortcuts as well.
Alto email app - It has support for gmail, outlook and all the other major main accounts. From what i've been searching it has the most beautiful interface of mail app on android.
Evernote - this one is not because it's super pretty, because it's not, but because the fab button extends so you choose what kind of input you wanna do (write a text note, audio, reminders, attachments, etc). Really nice.
Movie Roll - probably the best app to manage and discover movies and shows. And beautifully designed as well.
karma machine - if you want a beautifully designed reddit app with wonderful animations this is the one to go to. It doesn't have all the features implemented, since it's a work in progress, but every month the app receives new updates with new features. The attention to detail in this app is so good that it's worth checking out, even with not being yet a daily driver reddit app. If you want a more fully featured reddit app i also suggest you trying slide for reddit.
Phonograph - a beautifully designed music player.
Pocket casts - if you listen to podcasts this app is worth giving a shot. wonderful animations and interface.
Simple Schedule - if you're in school and need an app to use as a school calendar and manage tasks and exams and homeworks then try the app. it's a bit buggy but the developer pushes frequent updates so hopefully those bugs will be eliminated soon.
wallgram - my new favourite app to find wallpapers. A lot of really good wallpapers to choose from.

I understand Oreo can be polarizing for a lot of people around here but overall I'm happy with the update.
With the new Adaptive Icon feature a lot of your icons will look very boxy and weird with the standard Google Now Launcher so I would highly recommend a launcher with an icon pack if you're not already using one.
I'm using Action Launcher with AdaptivePack but I would also reccomend Nova or Lawnchair (All three of these launchers can have the Google Now pane if you sideload an apk) with the Pixel Icon Pack.
Any chance you've already tried Action Launcher? It's my go-to. I've got it set up with a bunch of 'Covers,' which are folders hidden behind an icon you can tap to launch a main app or swipe to open the folder. I also love the list-style app drawer that swipes in from the left side like the hamburger menus in many apps.
If you're after something pretty different, there's Smart Launcher. I only played around with this one a little bit, but it is pretty attractive.
If you're interested in trying the more contextual category of launchers, ASAP Launcher or Yahoo's Aviate Launcher.
Hey, I personally use Nova and Action launcher 3 so I'll tell you a few things different for the better and worse in Action. First the good stuff. A very customizable search bar which also themes on its own by pulling the colors from the current wallpaper. A list of all apps that can be swiped to from the left side of the screen which also themes with wallpaper. A kinda minidrawer accessed by swiping from the right side of the screen which is a good alternative to multiple scrollig docks and also themes with the wallpaper. A responsive active dev via Google+.
Somethings you will miss. You cant make folders in the App Drawer. No multiple scrollable docks but that habit can be overcome by getting accustomed to the minidrawer accessed from the right of the screen known as Quickpage. Cant add blank pages on the homescreen which can be bypassed by adding invisible widgets. The theming does not allow the color black, only dark grey though the dev is looking into this. The only major deal breaker for some that has no alternative solution or workaround at the moment is no folders in the app drawer, just one long list, so no scope for organizing unless you want to add all of them on the homescreen. Otherwise it is a nice responsive colorful launcher.

My phone is all Mirror's Edge, all of the time. It's probably better to post here vs. starting a new thread.
I use Action Launcher which automatically changes colors on the main search bar and all menu backgrounds based on the current wallpaper.
I have hundreds of my favorite Mirror's Edge screenshots saved in a folder which rotate every half hour with the Muzei app. A lot of screenshots found here and all over the web as well as some I took on my own. I love the 4k stuff people have been posting here the last few weeks.
The icon pack is Durgon but I am wondering if I should go back to Umbra. If anyone has any good suggestions on icon packs you think are very Mirror's Edge-y, let me know!

The developer recently got the Samsung squircle shape in and I'm loving it!

And probably most unproductive app I currenlty have is Pokémon Go (and for that, GoIV and Go Extender) :P

Action Launcher 3 (Beta) - Has to be beta because of the Nexus Launcher Features. I think it has to be pro too but I'm not sure. Honestly you could just use Nova also or even the Nexus Launcher itself.
Polycon - Icon Pack - I love these icons. Decided on these over Moonshine. Just switching your icon pack to this should be enough. Phonograph is my music app but it doesn't have an icon on this pack so i ended up picking a different icon.
Android N CM13 Theme - I used this to make the whole UI look a bit like N. Nav Bar comes from here.

Swipe up will open Google Gesture Search which I can find any app I want to use.
Swipe left will open Google Now.

Action Launcher is the first one that comes to mind as a replacement for Nova. It's not perfect and doesn't have as many customizations as Nova does, but the developer has committed to fixing some of the long standing issues. The only thing that's going to turn some people of is that some features require a yearly supporter payment to change, but if that's the cost to keep this app alive and independent then I'm willing to pay it.
Pear Launcher is what I've been using for the past year and it's got just enough customization for me. It's not perfect, but I've only had a few minor crashes and it's a one-time fee for the pro features. Don't expect frequent updates, as it just saw a minor update after six months.
Just switched to Neo Launcher today and I'm very impressed so far. There's a few odd glitches here and there but nothing that was a deal breaker. It feels like Pear Launcher with a modern design based on Material You. But there's also little touches such as an outline of where your icon is going to be placed on the desktop and a much longer delay before apps are rearranged which makes folder creation so much easier that I really appreciate. Looking forward to where this app goes, hopefully it's a viable alternative to the rewrite of Launchair since that is mired in controversy now.

Action Launcher: Pixel Edition
Action Launcher has a Quickpage feature where you swipe from the right side of the screen to access a page of widgets. Unfortunately it's not scrollable.
SF Launcher 2 is designed around the idea of a scrollable list of cards that can be a widget or a group of apps. Unfortunately it hasn't been updated in over three years but was a unique take on how a home screen should work.
Widget Drawer sounds like what you're looking for. It puts a bar on the edge of your screen to open a scrollable page of widgets. The UI for adjusting the size of the widgets is a little clunky, but it's in early access so that's something I can live with.

and I just switched to the twilight theme as per recommendation from the sub (https://play.google.com/store/apps/details?id=com.lge.theme.markbencze.twilight.vthirty)
If you chose not to use twilight and instead use another theme, I'd suggest getting the quick settings app, let's you have more types of quick shortcuts in the notification shade.

I don't have my pixel in yet but I'm reasonably sure that you can't change icons with the default Pixel launcher. Please let me know if I'm wrong here.

I really like it and the dev implemented a lot of the Pixel launcher stuff when it was leaked a few weeks ago. This will give you the ability to change up the icons. You do have to turn on the Pixel features through the Action Launcher settings

I am still waiting for my 6P to arrive but I tought to join with my Nexus 5. Hope no one minds :)
As for BT (which seems to be what everyone wants to/can comment on), I recently bought a Pebble from a friend, and have noticed no detrimental effect from having BT on all the time. Actually, I've noticed more battery life, as I'm not waking the phone nearly as often!
As for rooting, I have no idea. I've not done it (yet), and there aren't many things I've wanted to do that I haven't been able to because of that decision. That said, there seem to have been a few minor tweaks I would like to be able to do, so it's still something I'm considering.
And as for starter apps, my biggest recommendations would be:
a new launcher (personally, I've been loving Action Launcher 3);
Bacon Reader, a Reddit client that I like quite a bit;
Ampere, for keeping an eye on battery drain/charge rates;
Snapdragon Battery Guru, a battery/app manager that controls refresh rates for apps based on how you use your phone/which apps you use the most;
Physics Toolbox Suite, a cool little app that gives you a visual display of various sensor readings in realtime (I don't use it a lot, but sometimes it's pretty useful);
Sleep as Android or Sleep Cycle, sleep tracker apps with smart alarms, which have made mornings suck significantly less for me since I started using them;
Snapseed, a decent little photo editor which can handle the G4's RAW files as well as JPGs;
VLC, a powerful video player with pretty much every codec you'd ever need;
Waze, a replacement for Google Maps with realtime traffic and other updates;
WiFi Analyzer a WiFi analyzer;
and whatever games/apps/services you like or use regularly.
Hope you find that little list helpful. Those are some of the most-used apps of mine, or the ones I find most useful. There are, of course, many others.

Here's mine. HTC One M8 with Google Play Edition ROM Using Action Launcher 3 with Morena Icon Pack. The wallpaper is being handled by Muzei Live Wallpaper which uses MultiMuze to switch between wallpapers from Muzei HD Landscapes and 500px. The widget is a version of Cyanogenmod's Chronus which has already been included in my custom ROM. The search box changes its color fitting to to wallpaper btw.
